Amazing breakfast and coffee!! Came here early on a Saturday morning and were sat very quickly. We started with iced coffee (amazing) and a cappuccino, then had the eggs on toast and chicken and waffles. The chicken and waffles was probably the best I've ever had. It was the perfect balance of flavors - sweet, savory and with texture. Highly recommend!!
Having drooled of their Instagram Ham Hock Toastie, I walked in the rain 3km, took a few wrong turns thanks to Siri and my lack of direction and tried to start my visit on a positive note by ordering the toastie. Only to be told that they only have a cauliflower toastie. Another waiter said the Ham Hock was his fave and it might return. Coffee was good, not as ordered (extra hot) but had good flavour. The cauliflower toastie had cold ingredients as cauliflower and onion were cold and not toasted right through. The service was excellent, as was the ambience, when you come for food you want it to be on par. Sadly a once only visit, but worth checking out the concept.
We were in Sydney for 2 days in November last year. We stopped by different parks, fish markets, quays, restaurants, coffee shops, and bakeries during our time there and yet, 6 months later, my wife and I still look at Paramount Coffee Project as a major highlight. Our fondness for this place grows with each passing day as we reminisce about the year of our Lord, the Two Thousandth Nineteenth. What a beautiful year it was, minus the Australia fires and stuff. Paramount was a short walk from our hotel, which was a short walk from the train station, which is why I had it on our food-schedule for the day. I had seen that it was highly rated and had great looking food, but I wasn't prepared for the general ambiance and atmosphere of the place. Paramount has this nice hotel lobby + coffee shop feel to it that's just barely closed off to the outside world, but lets in a ton of natural light. It's a beautiful dining area and just lends to the overall wondrous-ness of the place. The food is just...wow. Praicy and I were just looking at each other after each bite, just having a hard time believing we were eating something so good. I'd recommend the crumbled eggs and chicken & waffles any day. My favorite between the two depends on the day of the week because they're both just so flavorful and unique. Paramount's regular drip coffee is great as well and, if I remember correctly, served in a really unique decanter that you can pour yourself. I can't think of a good reason not to stop by. Give it a shot if you're in Sydney; it's within walking distance of the trains and will more than likely be a totally fresh and memorable experience.
Coffee was good but they only have almond milk, no soy... Doesn't reallllly matter, I just like having the option :) Two of us had ordered food from the mostly lunch-looking menu and they were just ok.. Nothing memorable. The menu had lots of interesting sounding items on it, just nothing we'd want to eat for breakfast... And perhaps not even for lunch lol. Fun to read though. Service was fast and friendly but we prob shoulda been topped off of the ok-ness since it was lacking the bustling crowd at every other popular cafe on a weekday. If you're nearby and need a stop for coffee for takeaway, it'd be worth it. If you're looking for food, I'd say take a pass.
Paramount Coffee Project is a blend of rustic interior meets modern minimalist style. Serving up bites and drinks full of flavor, there's definitely nothing minimal about the taste here. Tucked in a corner of the Surry Hills district of Sydney this unassuming cafe offers much more than your typical neighborhood hang. Stop in for breakfast, lunch or whatever. Everything's served all day, and coffee drinks are top notch
Sometimes, you make mistakes in your life. But you wouldn't know it was a mistake until you've made it right? Well, this particular mistake I've made was getting the cronut. I first heard about this croissant and donut hybrid a couple of years ago when it came to NYC. People were waiting for hours and hours for this thing and I never understood the appeal of it. So when I saw it on the menu of Paramount Coffee Project, I decided to try it. Of course, I wasn't expecting it to be as good as I've heard the original was, but I was expecting better. This imposter was dry and almost chewy. It tasted like it was baked a week ago. And it was $5 so it was definitely not worth it. Their mains were not much better. I ordered the baked eggs ($17) It had chorizo, cannelini beans, and came with a piece of toast. The eggs were good but the chorizo was really salty, and super dry. I'm sensing a theme here. To wash it all down, I had a flat white ($4) which wasn't bad. I guess if they have the word, "coffee" in their name, then that's what you should come here for. And that's it. I mean, you wouldn't go to a gas station to buy sushi so the same concept applies here. Just stick to the coffee, avoid the food and you should be fine.
No host aka. open seating situation, which made it awkward when my party of 10 arrived for sit-down breakfast, and the only large table available was occupied by a lone diner on his laptop... Fortunately, he moved to bar seating for us - thanks, mate! PCP had a coffee shop vibe with restaurant-quality food. Fave brunch items: chicken and waffle (more like a quarter waffle) and the soft-baked eggs with sausage. Also, I chugged my tim tam milkshake like beer because it was so good (just wished it came with a tim tam biscuit garnish). The rest of my group thought their flat white coffee was fine, nothing special. Not a bad choice for brunch if you're in Surry Hills area.
Whoever says you can't eat chicken and waffles for breakfast is crazy and you should no longer be their friend. It's pretty much the best way you can start the day, particularly the gourmet version they dish up at PCP. In fact, I wouldn't be surprised if it had PCP in it. The rest of the brekky/brunch menu is similarly appealing in that menu-paralysis what'll-I-have kind of way, and when you tee it up with a Magic (flat white on a double ristretto base, not on the menu but the baristas are down with everything coffee and took this order with a knowing nod, the kind one connoisseur gives to another, even though I'm kinda faking it til I make it). The interior feels like some kind of fancy designer's living room, all open and light with a semi-industrial feel and the Slurry fashion crowd schlepping past with their Boston Terriers and their red velvet loafers.

On holiday from America, I heard a ton about this unique restaurant. As soon as I walked in staff was delightful. I got a seat in the on a cushioned seat in the window. The waitress immediately asked if I would like a drink. Got a latte, I like coffee strong not sweet, it was perfect. It's interesting how they use clear glasses for hot as opposed to a mug but it didn't matter because it was amazing. My breakfast was the crumbled egg and toast. So savory, eggs poached just right. The atmosphere is in an old building, cute amazing stone work. Everything was clean and well maintained. read more

This is the one cafe that I have gone back to more than once on my visit to Sydney. Not that the others were bad but Paramount is just that good. The staff are delightful, the coffee wonderful, and the food is fantastic. I highly recommend the Avocado Toast with Smoked Trout. read more

I ordered a Mocha and a chicken burger, it was served in a good portion, and tastes delicious. The Bakery upstairs is also good, had ordered a freshly made cardamom and orange flavored pastry. High scores for quality of food, and for the good vibes. read more

What a vibe this place is! My goodness. Staff are super friendly and helpful as well-I opted for the Stracciatella, chilli & hazelnuts on rye, with heirloom toms, smashed avo & sautéed greens. We were in Sydney for 2 days in November last year. This place is an absolute culinary masterpiece! The baked eggs and chicken and waffles were an experience on my tongue! I'm obsessed.. we didn't get to try the pastries because we didn't want to overdo it, but definitely will be back when I'm in the area to try it all! read more

Decided to check PCP out while visiting Sydney! Our hotel was super close and was just a walk away so by the reviews we decided to check it out. Think it lives up to the hype! We walked in and immediately it had cool, chill vibes. Service was great. They greeted us straight away and checked on us a decent amount. We went for breakfast but we decided to share the chicken waffles. Super glad we did because it was actually a pretty big serving. These were some of the best chicken and waffles I've had. And I lived in America for a year. I told my boyfriend I got that 'ratatouille' feeling on my tastebuds. The sauce was so nice. And the chicken had the right amount of crisp to juicy ratio. If I got the whole thing it would have been waaay too filling though. We also got the Nutella Pistachio milkshake! It was so good! Make sure you give it a good mix before drinking though - unless you want to save the chunks at the end ;) read more

Unfortunately, not a fan of PCP at all. The waitstaff were rude and slow (perhaps they were having a busy day), coffee was weak and bland, and the food was very average (I could make it at home). My dining partner wanted sugar for his coffee and there was none on the table and we waited 5mins but had no service still, so he started walking up towards the kitchen, and the waitstaff finally took notice and brought one to us. A few seconds later, the staff brought our food and it wouldn't fit on the tiny, cramped tables so he rudely asked twice within a few seconds whether we had finished with the sugar (as if he couldn't see that the sugar remained untouched in the space of 2 seconds?). My pulled pork taco looked good, but that's about it. Tasted very bland. My dining partner's avocado on toast was quite simply, avocado and tomato smeared on toast. Coffees were so bland. I like mine strong, with the taste of the coffee bean coming through, and my dining partner likes it weak - and neither of us liked the coffee so not sure what consumer they are trying to target. Waste of money, won't be back. read more
So Paramount Coffee Project is the son/brother/sister/#whateveritis of Reuben Hills - which is what made me wanting to try this place out desperately. I had high expectations of this place and maybe because of that reason it didn't appeal to me. So got a Fried Chicken Burger (yep, we like to try the same things at different place to see which is better), Wagyu Sandwhich (yep, wagyu again), Caramel milkshake because the ones at Reuben are just Tina Turner (Simply The Best). And if that's not enough, we even got their French Toast. So the verdict? chicken not enough flavour, beef not enough flavour, the mascarpone cream looking thing on the french toast was .. not enough flavour. The milkshake was the highlight of the meal but still not enough flavour. Either my palette has a new love for salt or the chef forgot the salt. Will I give it another shot? Most likely yes! Always a big believer in second chances. read more

Unfortunately, I was really not a fan of PCP. The ambiance is great and the food takes a nice picture, but it does not taste good and the service was slow and awkward. I had the crumbed egg on toast. It was nothing special and I thought the flavor was "musty" in an odd way. Nothing bright or fresh about any of it. Disappointing! My partner had the chicken and waffles (as a side note, I find it so ironic that Southern food is now hipster food). The waffle was too too sweet and the chicken was not memorable. Coffees were okay, but overall it was not worth it. In this neighborhood, Single O is just a couple of blocks away and they have much better food and friendlier service. read more

As soon as we walked in, we were impressed. The cafe's high cement ceilings and it's modern decor create a beautifully clean aesthetic. It's filled with sophisticated 20-somethings who seem to have come for a nice brunch from some well paying job in the fashion industry and everything seems to be in place. The staff are very friendly and have very cool aprons haha. The only gripe that I have is that this place is a little pricier than others that offer the same quality of food and are just as pretty. Coffee: Order the PCP coffee milkshake. Best ice coffee I have ever had in my life. I'm not a huge coffee elitist though so if you are, they had menu for just coffee specials so I'm sure you'll love that. They do cold drip too. Food: One word, waffles. Let me tell you, I am not a huge waffles fan but I loved both their sweet and savoury waffles dishes. Their fried chicken and waffles? Yum, filling, must have. The sauce they serve this with is absolutely divine and just makes you want to eat the whole thing up. -9/10 Their sweet waffles with figs, maple syrup and pistachio ice cream were my favourite though - sweet but not too sweet. The figs are a beautiful touch. Would appreciate 1 more fig though haha. -10/10 The PCP Bibi, a mixed dish with black rice, veggies, fried egg and cured salmon, while nice, was a little more average though. It's unique, and a nice, fresh brunch meal, but not delicious and I wouldn't come back for it. Adding 3 slices of salmon for $8 was also quite unreasonably overpriced. -6/10 Tip: come here with some friends, order a couple of different dishes and share. Trust me, you'll want a taste of everything and you won't regret it. read more
A friend here from overseas for the day, a desire to try somewhere new, and preferably some hipster place which is impossible to get into on the weekend when one normally has to wait hours. Paramount Coffee Project it is. First up, the menu has changed in April, so all the old reviews talking about things like Philly Cheesesteak unfortunately are out of date. I was looking forward to that, so not a good start. I had a long black - it was good. Long blacks are either good (with unbroken crema and good taste) or bad, so I rate this as good. Their coffee of choice was tasty. I had the Elvis in Cuba. It was nice enough, but had WAY too much mayo. My friends had the Crab Po Boy and the Avo on Rye. They looked far better than my meal. All the meals are very expensive for what you get. One piece of bread for around $20 is not cheap .. and the Elvis in Cuba had a $5 option of pork crackling. It was a couple of pieces. If I was you, I'd save your $5 (and your waste line). read more
So this is a review of just the coffee. Many of the negative reviews are about the food - I didn't try the food. But if you are a coffee lover you cannot ignore this place. Specifically as James F loves place - and he knows his coffee. So they do not just serve one bean but many beans from different roasters, and you can try them all. If you want a take away coffee I would suggest that you ask which bean you should try. Today the first coffee that I tried from Reuben Hill was not to my liking, as it was too weak - and so the barrister simply suggested that I move to another bean. And they were right about their selection - specially as you can't go wrong with Mecca. I could have sat here the whole day! So if you love coffee and want to sit and try, block out some time and make your way down here. read more

I'm in two minds for Paramount. I absolutely LOVE the coffee here, especially the filtered ones. I would have given them 4 stars for the coffee. But I'm less than impressed with their food and think it deserves a 2 star. So I'm settling with 3 stars as an average. Oh and you gotta try the coffee without, and then with panela to taste the difference. It is made from dehydrated cane juice, commonly found in Colombia and Mexico. (Yes I looked it up on Wikipedia..) I got the Colombian coffee which has hints of panela to go with it. These guys take their coffee very seriously. They even have brief tasting notes in the description! Skip the meals, they're pretty average and not worth the price. There's a stark contrast between the quality of coffee and food.. We ordered the fried chicken on waffle and a sandwich. The sandwich was fine, the only grudge was the meat was too chewy (overdone). The waffle was a disappointment because it was stale and soggy. I think they left it at the counter for too long. Anyhow, I hoped that the chicken was better - but Murphy's law prevailed in this instance. The fried chicken pieces were soaked in the watery Japanese curry for too long and turned into a soft starchy shell surrounding some meat. Who makes watery Japanese curry anyway? Japanese curry should be thick and starchy - I think they over diluted the instant curry powder pack. read more
Came here on a Sunday morning and enjoyed a very good breakfast and coffee experience. The barista was very nice, as were the other hosts. I enjoyed a very good Avo toast egg item and also got one of their colombian flat whites. The venue is very spacious and nice, they do a good job marketing themselves as a nice coffee shop. You can tell that the patrons coming here were locals, and not many people from the tourist side of the fence come since it is a truly local joint away from CBD area. read more
Located closer to the city compared to the other cafes of its type. I didn't have any expectations of the food this time and that might have been a blessing. Queues for lunch on the weekend are to be expected. BAKED EGGS $17 It was OK, it was a very peppery dish: the chorizo there to give heat and spice amalgamated in a cushion of baked egg with only one egg yolk still runny at least, all that on a foundation of baked beans. The eggs were heavily seasoned with ground pepper and this might not agree with everyone. This is not the best way to cook eggs in my opinion, the base was kind of overcooked and tasted like the eggs prepared in a ring on the barbie. CRAB PO BOY $19 Fancy name but at the end of the day it was just a deep fried soft shell crab in a bun with some condiments. Overpriced for what it is. ONION RINGS $5 I did enjoy these babies. Extra crispy batter with the onions soft inside but still having a slight bite so you know it's still onion. Really good with the aioli. The only snag was that they were bunch up together and they need more care when frying. These should be included with the crab burger as a meal as at $24 for both is unreasonable. PCP COFFEE SHAKE $9 This is the best iced coffee I drank in my life. I was expecting a good blend at this place with coffee in its trading name and they didn't disappoint and at $9 well you better not fuck up. CRONUT ~$4 This one was too was a little more oily and more donut than croissant for me. Still better than the ordinary coffee shop cronut but similar to Brewtown's but more stale. It can't touch Adriano Zumbo's Zonut which is still the best cronut in Sydney for me. Conclusion I think they are just strong on the coffee and drinks. Food is average and very overpriced. Most of the seating is made of communal tables. I'll probably only go back for the iced coffee but even that is not a good reason enough. @thesydneynoob read more
Oh gosh the maple bacon here. Such awesomeness. This place is great for brunch or lunch, and generally lives up to the hype for me. Yes, it does get busy so if you're here on the weekends you will probably wait for a table. However, I generally stop in here for coffee / food during the week and it's busy, but no wait. I've liked everything I've tried. The scrambled eggs with corn chips and salsa was really yummy. They also do this awesome peanut butter and jam milkshake, which I highly recommend. Can't wait to eat my way through the rest of their menu. read more
Coffee:Seven Seeds / Reuben Hills / Mecca / Small Batch Passion: 10/10 Crema: 10/10 Having just removed the only 10/10 cafe from my list, I was a little weary giving another one away, but I am finding it exceedingly difficult to fault anything about Paramount. Sure they have only open now for 2 weeks, and the shine will come of eventually, but... wow. Talk about potential for coffee experience. Did you notice that I listed four different roasters? That is because these guys grab a bean, ship it off to the different roasters, and then you get to compare and contrast the different flavours that the roasters can extract from it. AWESOME! Starting with a pour over served cold from Small Batch Roasters of Melbourne and their Colombian El Descanso, I loved being able to sit at the bar are watch the entire process of the coffee being made from start to finish. The experience was clean and precise. The coffee was elegant in its simplistic complexity. Simple as in it is a pour over on ice, and complex as the extraction time, weight, measured delivery of water and controlled cooling with ice. It had a heavy aroma of red delicious apples, and a robust yet mellow body. As a cold coffee, much of the expected tart cranberry was hidden, but the aftertaste was smooth and almost chocolatey. As it warmed back to room temperature, much more of the cranberry appeared and the chocolate turned into peanut as I breathed out. Such an awesome experience. Next up came Mecca with their Colombian El Descartes and it smelled... juicy. Already salivating before drinking I was surprised to not really get a massive whack of anything specific. It was rich, dark, and... requiring a bit more cooling down. As it did, a soft acidity balanced the rich flavour but did leave my tongue feeling dry. All round the experience was much more mellow than the Small Batch. I am so tempted to just sit here and drink their entire menu but should probably leave something to experience next time. Next up came Mecca with their Colombian El Descartes and it smelled... juicy. Already salivating before drinking I was surprised to not really get a massive whack of anything specific. It was rich, dark, and... requiring a bit more cooling down. As it did, a soft acidity balanced the rich flavour but did leave my tongue feeling dry. All round the experience was much more mellow than the Small Batch. I am so tempted to just sit here and drink their entire menu but should probably leave something to experience next time. The good: the coffee is among the best in Sydney, particularly the brewed coffee. And that's not surprising when you watch the guys behind the coffee bar. You can tell this is a place that considers a cup of good coffee an art. The bad: the food is underwhelming, especially for the prices,and especially in a neighbourhood with among the best brunches in Sydney. The service is also very slow, even for a coffee. The bottom line: Great place to go for a slow, enjoyable cup of coffee on a weekend morning. But if you're in a hurry, or if you want a nice Surry Hills brunch, look elsewhere. 4.5 stars for the coffee; 2.5 stars for the food. read more
The first time I had Baked Eggs was at Paramount Coffee Project. Since then whenever I see Baked Eggs at other places I would order it to see how they measure up to PCP Baked Eggs, and I have yet to find it. What I like about it, you asked? It's so tomatoey with the right amount of chorizo and perfectly runny eggs on top, delicious! Their Banana Bread was served with apricot and some micro herbs. It looked so pretty. The place is airy with clean modern industrial-feel interior and plenty of natural lighting. There are communal tables and some smaller tables with plenty of space in between, or you can sit on one of the bar stools by the counter in the middle of the place. Funky menu, really sounds appealing and following what's the trend in market. Lots of fusion flavours implemented on the menu. I had this coca cola braised ox cheek waffle, horseradish cream and tomato corn salsa, it was good dish, the down side was horseradish just too dominant and overpowering the dish. With that I order side of hush puppies ( not side of dogs or sandal for sure) , which was a fried corn meal, which quite blend, need more salt. read more

I read a bunch of reviews for PCP before finally trying it out today with my girlfriend. With my expectations effectively managed by the Yelp community (esp. thanks to Brad W.), I went in planning to just get some pour over coffee. Walking in, the hipster vibe was immediately apparent--the staff kind of floats around the poorly defined space, which is reminiscent of a warehouse. Of course, I am pretty into niche places like PCP, so the layout was fine with me; my girlfriend, however, almost wandered into the neighboring business, what looked like a bike shop, looking for seating. I ordered the La Linda from Seven Seeds (the other roasts available on our visit can be seen in the attached photo) and my girlfriend got some green tea and an order of the hushpuppies. Notably, the waitress was clearly unimpressed with our order, because she gave us a flippant look as she left that neither my girl nor I missed. I'd just like to say that we were there on a Sunday afternoon, the place was half-occupied, and they were closing in an hour--I felt justified placing such a small order, too, given that many people were relaxing with just a beverage. Aside from the puzzling reaction we got from our waitress, we had a decent time at PCP. My coffee did in fact taste like strawberries--uncannily so. Overall, the cup was pristine, almost tea-like. The dude who made it was also really accommodating when I walked over to the--also poorly defined--area where whole-bean coffee and brewing equipment is available to purchase. Quirky cool spot!! Was recommended this place which is just up the road from work. It's an awesome spot to chill and get lunch or breakfast! Unique meals on the menu and just tried the avo on rye!! So good and plenty of avo.. Also tried the steam bun with pork belly, it was alright but wish the bun was fresh. I'm eager to try the chicken and waffles and polenta gnocchi next time. I'll definitely be back! read more

Just open. Not a large menu and as the name suggest a focus on Coffee however, I don't drink coffee and they don't offer TEA or fresh juices. The Muesli serving was small and more puffed rice than Muesli - but it was tasty. read more

Good good breakfast place where everybody ate exactly what they wanted. Some basic dishes put up so differently made this experience so good for me. No cheap way yo, but definitely worth it read more
Great coffee! Great food! I wanted to come back for breakfast again but didn't have much time on my trip. Had the pork bao. Super delicious! The menu sounds great. The staff had a bit of a hipster attitude but still friendly. The space is very big and bright. Defiantly coming back again. read more
The space of PcP is really nice - design, airy, great music and bobo vibe. The staff is super friendly too. I know it is mostly well known for its coffee and as I am not a big coffee drinker I cannot comment on that. The food left me with a meh-like feeling. I was not too impressed to be honest. The menu is quite different with a few interesting options (by the sound of it) but I feel it was quite expensive overall and will not be remembered. To be fair we all had breakkie already so were more looking into savoury/lunch types of dishes and I do not think that is PcP strength. Will give another go at the breakfast menu next time. The Cronuts looked yum too. read more
