    Avocado Toast with Smoked Trout

    This is the one cafe that I have gone back to more than once on my visit to Sydney. Not that the others were bad but Paramount is just that good. The staff are delightful, the coffee wonderful, and the food is fantastic. I highly recommend the Avocado Toast with Smoked Trout.

    I ordered a Mocha and a chicken burger, it was served in a good portion, and tastes delicious. The Bakery upstairs is also good, had ordered a freshly made cardamom and orange flavored pastry. High scores for quality of food, and for the good vibes.

    Amazing breakfast and coffee!! Came here early on a Saturday morning and were sat very quickly. We started with iced coffee (amazing) and a cappuccino, then had the eggs on toast and chicken and waffles. The chicken and waffles was probably the best I've ever had. It was the perfect balance of flavors - sweet, savory and with texture. Highly recommend!!

    Having drooled of their Instagram Ham Hock Toastie, I walked in the rain 3km, took a few wrong turns thanks to Siri and my lack of direction and tried to start my visit on a positive note by ordering the toastie. Only to be told that they only have a cauliflower toastie. Another waiter said the Ham Hock was his fave and it might return. Coffee was good, not as ordered (extra hot) but had good flavour. The cauliflower toastie had cold ingredients as cauliflower and onion were cold and not toasted right through. The service was excellent, as was the ambience, when you come for food you want it to be on par. Sadly a once only visit, but worth checking out the concept.

    We were in Sydney for 2 days in November last year. We stopped by different parks, fish markets, quays, restaurants, coffee shops, and bakeries during our time there and yet, 6 months later, my wife and I still look at Paramount Coffee Project as a major highlight. Our fondness for this place grows with each passing day as we reminisce about the year of our Lord, the Two Thousandth Nineteenth. What a beautiful year it was, minus the Australia fires and stuff. Paramount was a short walk from our hotel, which was a short walk from the train station, which is why I had it on our food-schedule for the day. I had seen that it was highly rated and had great looking food, but I wasn't prepared for the general ambiance and atmosphere of the place. Paramount has this nice hotel lobby + coffee shop feel to it that's just barely closed off to the outside world, but lets in a ton of natural light. It's a beautiful dining area and just lends to the overall wondrous-ness of the place. The food is just...wow. Praicy and I were just looking at each other after each bite, just having a hard time believing we were eating something so good. I'd recommend the crumbled eggs and chicken & waffles any day. My favorite between the two depends on the day of the week because they're both just so flavorful and unique. Paramount's regular drip coffee is great as well and, if I remember correctly, served in a really unique decanter that you can pour yourself. I can't think of a good reason not to stop by. Give it a shot if you're in Sydney; it's within walking distance of the trains and will more than likely be a totally fresh and memorable experience.

    Coffee was good but they only have almond milk, no soy... Doesn't reallllly matter, I just like having the option :) Two of us had ordered food from the mostly lunch-looking menu and they were just ok.. Nothing memorable. The menu had lots of interesting sounding items on it, just nothing we'd want to eat for breakfast... And perhaps not even for lunch lol. Fun to read though. Service was fast and friendly but we prob shoulda been topped off of the ok-ness since it was lacking the bustling crowd at every other popular cafe on a weekday. If you're nearby and need a stop for coffee for takeaway, it'd be worth it. If you're looking for food, I'd say take a pass.

    Paramount Coffee Project is a blend of rustic interior meets modern minimalist style. Serving up bites and drinks full of flavor, there's definitely nothing minimal about the taste here. Tucked in a corner of the Surry Hills district of Sydney this unassuming cafe offers much more than your typical neighborhood hang. Stop in for breakfast, lunch or whatever. Everything's served all day, and coffee drinks are top notch

    Sometimes, you make mistakes in your life. But you wouldn't know it was a mistake until you've made it right? Well, this particular mistake I've made was getting the cronut. I first heard about this croissant and donut hybrid a couple of years ago when it came to NYC. People were waiting for hours and hours for this thing and I never understood the appeal of it. So when I saw it on the menu of Paramount Coffee Project, I decided to try it. Of course, I wasn't expecting it to be as good as I've heard the original was, but I was expecting better. This imposter was dry and almost chewy. It tasted like it was baked a week ago. And it was $5 so it was definitely not worth it. Their mains were not much better. I ordered the baked eggs ($17) It had chorizo, cannelini beans, and came with a piece of toast. The eggs were good but the chorizo was really salty, and super dry. I'm sensing a theme here. To wash it all down, I had a flat white ($4) which wasn't bad. I guess if they have the word, "coffee" in their name, then that's what you should come here for. And that's it. I mean, you wouldn't go to a gas station to buy sushi so the same concept applies here. Just stick to the coffee, avoid the food and you should be fine.

    No host aka. open seating situation, which made it awkward when my party of 10 arrived for sit-down breakfast, and the only large table available was occupied by a lone diner on his laptop... Fortunately, he moved to bar seating for us - thanks, mate! PCP had a coffee shop vibe with restaurant-quality food. Fave brunch items: chicken and waffle (more like a quarter waffle) and the soft-baked eggs with sausage. Also, I chugged my tim tam milkshake like beer because it was so good (just wished it came with a tim tam biscuit garnish). The rest of my group thought their flat white coffee was fine, nothing special. Not a bad choice for brunch if you're in Surry Hills area.

    This place is an absolute culinary masterpiece! The baked eggs and chicken and waffles were an experience on my tongue! I'm obsessed.. we didn't get to try the pastries because we didn't want to overdo it, but definitely will be back when I'm in the area to try it all!

    Whoever says you can't eat chicken and waffles for breakfast is crazy and you should no longer be their friend. It's pretty much the best way you can start the day, particularly the gourmet version they dish up at PCP. In fact, I wouldn't be surprised if it had PCP in it. The rest of the brekky/brunch menu is similarly appealing in that menu-paralysis what'll-I-have kind of way, and when you tee it up with a Magic (flat white on a double ristretto base, not on the menu but the baristas are down with everything coffee and took this order with a knowing nod, the kind one connoisseur gives to another, even though I'm kinda faking it til I make it). The interior feels like some kind of fancy designer's living room, all open and light with a semi-industrial feel and the Slurry fashion crowd schlepping past with their Boston Terriers and their red velvet loafers.

    Fun atmosphere, we had a quick coffee and beer while waiting for our Airbnb. Would love to stay at the connected hotel next time!

First impressions count, and GC had me at hello... That 'tash, is to curling what.... Curling is to the winter olympics. Awesome sauce! I fully expect moustache rides will be on the menu if business ever hits the skids. Alas, despite the gleeful charm of the curly coifed one, nothing short of an excellent coffee with character was going to make the all important lasting impression on me and sadly in that area GC disappoints. I gave GC the Soy Latte test and the Long Black test and it just doesn't measure up to other coffee in the area. I like strong coffee with complexity and GC just doesn't have that. It's not the worst but it is very weak despite using the same La Marzocco espresso machine (that Barista's rave about for ease of use) as other places in the area. The service at GC however is very good and to some people that's first priority. So if you aren't too fussy about your coffee and are looking for a smile and a spring in your step from an energetic soul then get your morning fix at GC, and start the day on a happy note.

A couple people ordered the Coco Loco, which is basically an espresso martini on steroids with Nutella and something like a Ferrero Rocher. I ordered a latte and their Affogato. The latte was very smooth and BI is arguably one of the best I've ever had. Is the Affogato a cheat code because they use like a tiramisu ice cream? You could argue that case. You can also buy their blends of coffee beans, subject to availability. While the latte was very smooth, I can't say it was mind blowing but it was still pretty good.

My server was Cassie who was very personable and even gave us tips on what to watch out for dining in Sydney.
