If you're looking for something like chipotle but isn't chipotle you've come to the right place. Pancheros is a fast casual Mexican restaurant chain. They offer burrito bowls, salads, tacos, etc. The set up is just like Chipotle. A little less options on protein though. I usually add veggies to my bowl and they ran out. in addition to my bowl I also ordered guacamole and chips. They have blue corn chips - you've been warned. An unnamed 4 year old refused to eat them since they weren't yellow. You will notice that the bowl is somewhat smaller than chipotle's bowl. I ordered a steak bowl with pinto beans and brown rice with pico and corn salsa, sour cream, cheese, and lettuce. Everything tasted really fresh.

First time we stopped in. Got the steak tacos. Like that they make the tortillas fresh.

Been here 3 times. The food is pretty good but it's always served lukewarm at best. I hate cold burritos. I won't be going back.

Thankfully, this place has ample seating to accommodate large groups without a reservation, which is always a plus. Our waitress was very friendly and helpful, and she helped us make some dinner choices. Overall, I enjoyed my food immensely, way more than I expected to. I'm not a Tex Mex connoisseur, so I can't speak to the authenticity of the menu, but everything was delicious and good enough that I'd definitely visit again if it were closer to the Cities.

Let me preface this by saying this place is catering to a suburban clientele and local tourists. It…read moreis not curated to be authentic street food - it's meant for large portions, a beachy drink, a classic bar feel, and a fun time. Stopped in here after walking around Stillwater on a sunny Sunday. After having a beer on the water and a long walk, I decided it was time for some tacos. This place was absolutely packed, but as a solo traveler I was seated fairly quickly at a small table inside. Fun colorful and tropical decor. I ordered the Shrimp Tacos and a Margarita. The mason jar marg was salty and refreshing and the tacos were HUGE. The rice was cooked perfectly, the shrimp were large and had a nice pop, and overall the flavors were balanced! A little acid here, a little something savory there, a tangy sauce! I slammed two of the tacos and brought the third one home for my partner to try. Fun filling stop on a beautiful day!

Unassuming exterior - the inside is amazing - hence hidden gem. My only complaint is the music inside - way too loud, way too annoying. But the back patio is perfect.

For appetizers we chose Elote corn and Queso Fondido. The corn was outstanding. I expected the cheese to be more textured with bits of chorizo, but instead it was creamy, almost béchamel-like, and maybe the chorizo was just in the spicy accompanying sauce? I wasn't a huge fan but my friend was. Then came the entrees. Wow! Beef short rib was the highlight of the meal for me, melt-in-your-mouth tender and served with a super tasty sauce and some greens to lighten the dish. Puerto adobado was an enormous pork shank served with rice, beans, and pickled vegetables, also very tasty. Portions were generous. My friend and I both had to get to-go boxes for our leftovers. We tried the two desserts offered: churros and a cheesecake with berry sauce. I'm generally not a cheesecake fan, but warmed up to this one because of its light texture, almost soufflé-like, and the super-flavorful berry sauce. Churros were hot and crispy, accompanied by hot drinking chocolate for dipping, and more thick, creamy dulce de leche than we could possibly eat. I'm not a big drinker, so I appreciated that they have a fun selection of non-alcoholic cocktails. I had one that came rimmed with Tajin and containing a pineapple popsicle that melted and became part of the drink. Fruity, fun, a little spicy, and moderately priced. Besides the delicious food--at reasonable prices, especially considering the size of the portions, we were impressed by the friendly, helpful staff. The atmosphere is light and pleasant with plenty of windows, interesting art, and comfy seating. You'd have to think hard to picture the space in its original form as a Hardee's...but then again, the owners built their reputation for great food starting in a gas station. The restaurant is easy to get to, with ample parking.
