Delicious food and fast service. We ordered from the brewery next door. Chili fries could have been a bit more crispy, but the chili sauce on top were exceptional. The $1.50 tacos were worth every bit and bite. The salsa that comes with the tacos, i could have drank that!! We also ordered the chicken quesadillas. The food was tasty the complimentary salsa had a nice kick and the staff was super friendly. I was especially impressed with the quesabirra tacos and the meat inside was delicious. The food was very bland, had no taste. Came with a broth to do them in like a French dip. Still no taste! Service was good. There was one server but that was ok because there was only 2 tables to cover. He was really excited about me trying his favorite dish... those tacos which by the way consisted of a corn tortilla with a shredded meat, no garnish, no salsa, no cheese! It is a small, plain place. I had to do four stars instead of five this time because the salsa wasn't nearly as good as it used to be. A little too much tomato in the salsa this time. Aside from that, the food was terrific. Those green enchiladas with carne asada were delicious. My wife had chilaquiles with a red sauce and that was also very good. Pajar isn't your typical "New Mexico" style so I go here for a change from the norm. Fancy appearance, excellent cuisine, casual dining. I got the Quesabirria on the recommendation of a local buddy. Best I can describe: four hard shell tacos w/ shredded beef, cheese, cilantro & onions served with a consome (soup) for dipping. You also get a cup of spicy sauce that is legit Mexican hot. If you like hot, mix it in the consome and commence dipping. While the tacos are served in "crunchy" shells, the shells soak up a lot of the beef's liquid & cheese so they're more of a semi-soft or chewy. DO NOT let that deter you. The dish is AWESOME. I stopped in at Pajar Mexican Kitchen today. The place is a smallish restaurant with about fifteen tables. Nothing fancy. The banquet chairs are a bit worn and the place could use a little freshening up with paint near the counter. The young ladies providing the service were doing a lot of cleaning....always a good sign. The service was prompt and pleasant. The menu is not overly large with burritos, tortas, and tacos. This is more a Mexican than a New Mexican joint. Prices are reasonable. Today I ordered the quesabirria plate and an al pastor taco. Chips and a red salsa were provided. The chips were firm and quite good as was the salsa. The al pastor taco was very good, not dried out like some places, and the meat was tender. Good tacos. The four birria tacos were not overly greasy and very flavorful. The consome was good but had no meat pieces in it as the nearby Taqueria Chavez has in theirs. All in all a very flavorful meal. I would look forward to trying their carne asada burritos. What to expect if you go: A casual dining experience...nothing fancy for sure...and pleasant service. Prep time was about ten minutes. Reasonable prices. A limited menu. The food is well above average. The dining experience overall rates about three-and-a-half stars and the food a four for quite good. read more
