Excellent coffee and breakfast spot! We had exceptional customer service, quick and friendly! Also, the best salsa around!

Good flavorful authentic Mexican food. Clean tables and amazing staff. Mexican music playing as they cook our food. Recommend the birria tacos and asada tacos. Salsa is delicious and not too spicy.

Quesabirria? More like be my BOOTHANG! Oh, the dreams of this place will be in my heart for the rest of my life. I've had quesabirria and choriqueso at many places, but Pajar has it done right. So delicious, so flavorful, so in love with this spot. Las Cruces- you have a gem in your city!!! Not only was the food amazing, the service was incredible, warm hospitality and a quaint location that makes you smile.

We decided to try the recently opened Pajar Mexican Kitchen for lunch today. The interior has been updated from the previous restaurant owner. My wife had a shredded chicken quesadilla and I had the smothered (green) carne asada burrito plate (with rice and beans). Both of our meals were delicious. Service was fine. We will return.

Food truck near house. Great, authentic food and service. Serves mixture of meat, and for being a restaurant as well as a food truck, the food is very presentable and yummy. We look forward to visiting the restaurant soon.

Birria Raman is so good. My wife got the chili cheese fries and said she liked them a lot.

The food is mediocre. If you're looking for spicy it isn't here. I ordered the hot green sauce and was very mild. The birria tasted good but was simply stewed pot roast in sauce.

Lacks flavor, oily, and filled with salt. Not what I was expecting ... expect your sodium levels to skyrocket soon after consuming. Food was not Fresh.

Really enjoyed the fresh bountiful food at this food-truck turned restaurant. The plates come loaded with savory goodness. I had the Quesabirria and the meat was juicy and tender, the sauce paced with flavor and I paid less than 10 dollars for 4 beef-filled tacos. I will be back for sure.

I had to do four stars instead of five this time because the salsa wasn't nearly as good as it used to be. A little too much tomato in the salsa this time. Aside from that, the food was terrific. Those green enchiladas with carne asada were delicious. My wife had chilaquiles with a red sauce and that was also very good. Pajar isn't your typical "New Mexico" style so I go here for a change from the norm. I usually get the quesabirria tacos and it was hard for me to try something different but I was very impressed with the enchiladas.

Chips & salsa, quesabirria, unsweet tea.

The quesabirria and chilaquiles are perfect. Christmas is the move for the chilaquiles, but I will dream of the red chile salsa forever.

My companion had the Belgian waffles (I'm not sure which item, specifically) and it was like a dessert plate with all the whipped cream and chocolate sauce. Also very good. I'm sure there's a reason for this, but every time I've been here for breakfast or brunch there's always a bunch of empty tables and people waiting to be seated, but the staff act like it's a full house. When we arrived there was nobody else waiting and yet we had to wait about 5 minutes for the staff to "set a table" for us. When we were seated there were at least six empty tables already set. When we left about 45 minutes later, a lot of previously occupied tables still had dirty dishes on them (but not all of them), and nobody was cleaning them up. Just like when we got here, there were lots of tables ready to go and yet the lobby was full of people waiting to be seated and even more people waiting outside.

We asked to sit on the patio, which was nice, although a little chilly with all the patio umbrellas up. They brought out some salsa and a small portion of chips. We were able to flag down a server for more chips, but it seemed like this was a constant issue. The queso tasted like Velveeta, but was better with the salsa mixed in. Definitely not worth the price. My hubby had the Estrella Tacos, which were surprisingly good and reasonably priced! I tried a side of the calabasitas with no idea what to expect and found them quite tasty. Overall, it just felt a bit odd. Service was lackluster, food was hit or miss. Would try again, maybe at a different time of day.

I got up to the counter where she continued chatting with the guy eating at the counter. I mentioned that I wanted more coffee, I was told that they had ran out and if I wanted decaf.
