I had the Itallian Stallion and it was everything I had dreamed of plus MORE! They know how to make a serious pizza. They cooked the pizza perfectly. Nice crunch but not crispy. They make great pizza, that much is for sure. But they're never open. Closed on Mondays and every day aside from two they close at 7pm. The other two days they close at 8pm. Seriously, how are you a restaurant, especially a pizza joint, that closes before 8pm? I don't buy thats its staffing issues, blah blah blah. While Fruita is well known for another pizza establishment, Pablo's has a reputation of its own, especially among locals. Usually far less crowded, with more "traditional " pizzas, their pizzas are solid winners. We don't eat a lot of pizza, but guests often ask for Pablos. read more

I love the combinations that Pablo's has. My personal favorite is Mean Mr. Mustard and that is saying a lot. Pathetic!!! It was Friday evening, after a long week, so we decided to make life simple and order takeout. I had ordered a calzone and a small pizza. When I walked in I paid for my order and was told it would only be one more minute. Five minutes later, after numerous people came and went, I was approached and told that my pizza was accidentally give away. Okay, mistakes happen. It was explained that they were making me a new one. So, I stood by (literally) for another twenty minutes while the pizza was being made and cooked. I believe the owner was working behind the counter, so after being in public service for 34 years, I was curious what customer service was going to be provided. We're they going to comp the meal? Comp the pizza.? Make a larger size without the up charge? Would they at least offer me something to drink while I waited? The simple answer was NO to all of the above questions. So for years I have been like most people wanting pizza in Fruita went to the other place known so we'll by the biking crowd. And don't get me wrong it's good, but we made a decision to try out Pablo's in Fruita and let me tell you it was super good, everything very well prepared, and the two girls working provided great customer service. We had the baked ravioli that came topped with pesto and ricotta, the cheesy bread sticks, two salads (warning, the small is enough for two people) and three different pies: Sweet Caroline, Drakulas Nemisis, and Dragons Breath. Good dough. Tasty even though I didn't get any cheese (I'm plant-based). Not greasy which is great. Could have used a bit more flavor and more toppings for the price but I enjoyed it. The personal sized was too small if that's the only thing you are eating, although maybe it would be more filling if it had cheese and meat. The veggies alone weren't enough. The pizza is pretty good, they are super generous with the toppings almost to the point that the crust gets soggy. If the pizza had been done in under an hour that would be fine but we recently got to the restaurant (it was dead only two tables of already served patrons) ordered four pizzas to go and then proceeded to wait over an hour. We saw many tables come in and get served while we continued to wait. When we said its been an hour they said "Oh only 15-20 minutes more" I think they had forgotten our order or just have a very bad system for which pizzas to make first. We didn't get a proper apology or offered free drinks etc. They seemed overwelmed and out of their league. read more

I have only been here one time. And the pizza was good, very good indeed. But, I have to compare it to Pablo's Grand Junction. Here in Fruita, I only had a choice of cheese or pepperoni for a slice. In GJ, I have those plus Popeye's Passion and Pizza of the Week. So I miss the variety of slices. But - the slices were excellent. Good sauce, nice crust, everything I would want for those particular slices (PS - cheese is the winner). Otherwise the menu is the same, though there was no Pizza of the Week listed. Service was very pleasant and so was the facility. Nice and clean and appropriately arty. They offer bottled beer and one draft beer of the month. Extra points for a draft!! I would recommend it if you are on the south side of Fruita. Nice place to grab a good pie and there is nice outdoor seating as well! read more

We tried Pablo's today because Hot Tomato was closed. Pablo's was the complete opposite (we like the Hot Tomato). Pablo's was bland tasteless pizza. Toppings all were put on after baking (except pepperoni). I've never seen that before and now I know it makes for terrible pizza. Undersauced. Crust was really bland. It took forever for our order to come out. Disappointing because the menu looked awesome. Staff were friendly and attentive. Really surprised my food was so bad despite the 5 stars so many people gave this place. read more

On a business trip up in Fruita, we asked the clerk at the front desk of the hotel for a good place for dinner. He pointed us to Pablo's saying "it's not too bad". (High praise indeed.) But it was close and pizza always sounds good to me. It has a small but decent selection of wines, and a couple of beers. The menu boasts good culinary creations. I went with the evenings special, which boasted salami, ham, and jalapenos. Overall the pizza was tasty, nothing particularly special made it up. Crust and cheese were pretty standard all around, but they were generous with the toppings. Three of the four of us ordered a glass of wine. I bought a second round, and after the server rang me up and took my money, he informed me that I would have saved money if I had bought a bottle. Great up-sale, jackass. Overall, the place was a little disorganized for my liking, but the food wasn't bad. Nothing to brag about, but if I find myself in a hotel across the street again, I might venture back. read more

After a long day horseback riding, playing and swimming, our family of six was famished. While the Hot Tomato has been the go-to pizza place in Fruita for at least a decade, we decided to try something new with Pablo's. The restaurant is situated in a strip mall on the truck-stop side of I-70, but once you step inside, the buzz of the interstate fades away. The service was friendly and casual, and the staff were happy to accommodate our big family, including bringing toys to the table to entertain the little kids. There are a ton of pizza choices, and most of them color outside the lines. Even standards like the Hawaiian - they call it the Aloha - have a twist, with tangerines and shrimp added to the traditional ham and pineapple. We also had the "Panthers at the Circus" pizza, a rich and tangy pie with roasted garlic, marinated chicken and artichokes. Overall great experience at Pablo's. read more

I will start by saying the staff was friendly and the pizza was good. But the reason I give them 3 stars is that it took well over an hour to get our food, and no one checked on us at all to make sure our food was being prepared or ready to go. The past few times I have gone to Pablo's I have been disappointed. I used to like this place, but it's just been bad. Last night (11/30) was the final straw. I ordered a pizza for take out. Asked how long and they said 15 minutes. So I went to the gas station, the local brewery to get a growler for take home, came back and was told, sorry, it'll be another ten minutes. Okay no problem...I come back 15 minutes later, 5 more minutes. okay no worries. So I come back 10 minutes (figured I'd give them some extra time since the past two times I came back I was told it's not ready, so here we are 45 minutes in, on the order) I'm told sorry we haven't even started your pizza yet. WTH, I ordered it at 5:18, tI come back at 6PM after being told multiple times to come back, it's almost done and they haven't even started it. Requested my money back and left.
