My profile discloses I love artisan food makers. Because the integrity and affection they bring to their work gets translated into the quality of the goods we who eat them get to enjoy. So it is with small dairy farmer, raw milk cheese producer Cada Dia. The name means 'every day' in Spanish. Which is when the Cada Dia owners, a husband and wife who are involved in every step, make their cheese. But only seasonally given the high clover pasture (60 acres of it) that nourishes the twenty or so cows who produce the milk to make the cheese only grows at a certain season. This is raw milk cheese, with just minutes elapsing between the time the milk leaves the cow and enters the cheese vat. No cooling and reheating as in big commercial cheese making, this is as fresh as cheese making gets. Cada Dia cheese has a delightfully subtle flavor and smooth texture. It was a lovely accompaniment to fresh greens and tomatoes in salads this summer, it goes just as well with fall apples and pears and it melts beautifully for cool weather dishes, like mac n cheese. The Sullivans, the husband and wife team who own Cada Dia, welcome visitors to the farm in Prineville to see how sustainable agriculture efforts work, to see the cows, and learn how the cheese is made.     Cada Dia. Every day…read more Can you think of a more appropriate name for a dairy farm? I was introduced to this artisan cheese maker at the Bite of Bend and made the trek to Prineville. Every Tuesday, Cher, the Dairy Queen (complete with tiara) will give you a free tour of their operations. No reservations are needed for individuals, but groups should call in advance. They couldn't have been more welcoming and it was one part tour of the milking operation and cheese cellar, one part cheese tasting, with a 'healthy' dose of education thrown in looking at products in the "food cage". It wasn't heavy handed and I thought completely appropriate given the setting. If you every wanted to know what a McDonald's cheeseburger looks like after a year, this is the place. [1] Because my son was part of our group, they took one look at my strapping young lad and put him right to work. Attempting to milk the Jersey cows, carrying buckets and flipping cheese wheels. He had a ball and I wouldn't be surprised if he asks to go work on the farm next year. They can pay him in cheese, preferably Christmas Cheese. After meeting the cows, hearing about their specific way of feeding (grass, not grain) and milking the herd seasonally once-a-day to produce a variety of (mostly) hard cheeses, you get to do a little taste testing. Of course, their products are available for sale and you can find them on a limited basis in stores and restaurants from Ashland to Portland. Of all our family activities in Central Oregon this summer, Cada Dia was certainly one of my favorites. They have something really special here. I bow to the Queen and her bovine court. The REUBEN SANDWICH on toasted marble rye had Swiss cheese, the perfect mound of sauerkraut and thousand island dressing (ask them to go light on the slather) along with a bag of chips and a cookie. Top it off with the beverage of your choice -beer, wine, canned soda, etc.- and you have the perfect lunch or afternoon snack. On our way out we bought a couple pounds of the Smokehouse Jerky (Original, Pepper, & Teriyaki) and two pounds of the Smokehouse bacon. Made the car on our trip home smell great!!!! Seating inside is nice and you can people watch. I like to eavesdrop on the questions they ask the people behind the counter. You learn something new every time - LOL. Tables outside too but it was a tad too hot the day we visited to sit outside, even in the shade. Small, family-run establishment owned by Oregon natives. The artisan meat cutter and smokehouse expert are both third generation in the industry. Such a cute little town too, all cowboy-like and worth an afternoon of moseying the main street to see the shops. Just make sure you keep up your strength and have lunch at Sisters Meat and Smokehouse first.

Hopping place here! We were nearly immediately treated like royalty. Genuinely surprised by the kindness here. I walked out with seasonings, bone in Kansas City cuts, and house smoked peppercorn havarti. Walked out saying to my wife, I cannot remember the last time someone was as kind as the folks working there.
