My steer was 17month old ANGUS / WAGYU cross and the most amazing flavor and tenderness one could imagine. I grow them every year for the last 11 years. Always the same, AMAZING. However, WHAT I GOT BACK.......... The New York Steaks bent my fork. The Tenderloin we had to boil just to chew it. After diligent effort complaining I sent piece of heart and liver from the kill truck of my Angus/ Wagyu cross to UC Davis along with the beef I got back from REDMOND SMOKEHOUSE... Results from UC Davis: The beef I received back from Redmond Smokehouse that was supposed to be my steer (male) is a female. The professor said probably and older cow, hence reason for the toughness of the meat carcass. The burger wasn't even fresh. It looked brown and spotty. I called Redmond smokehouse explaining the serious problem. Word for word I was told: " We cannot always grantee you will get your product, mistakes are made, and we have no guarantees". On two separate occasions I called Redmond Smokehouse to see if they had what I was looking for. The first time I was looking for a full size brisket. The second time I was looking for beef short ribs. Both times the person on the phone said they had it, and both times I asked them to hold it and drove over there from my house in Bend (about 30 minutes away) on a Friday afternoon to pickup what I was after. On both occasions I got there and they didn't have what I had called about. On Friday afternoons the traffic going back to Bend is a bit backed up, so it can sometimes take more like 45 minutes to get back. On both occasions where I wasted my time driving over there the staff did not care one bit. There was no, "sorry about the confusion" or "we'll talk to our staff about making sure this kind of thing isn't a pattern..." Nothing, they just shrugged like not our problem. Most of the meat is frozen, not fresh. It seems the business has been around long enough they don't really need to try or care about customers, they've got their core customers and that's just fine. I still may try to find certain cuts there but not going out of my way anymore and definitely not going to trust whoever answers the phone to give me accurate info. read more

I'll start with what happened at the end of my visit to Redmond Smokehouse, because it sets the stage for this review. A man, who seemed to be a farmer, offered to help me navigate the stairs leading down from the retail store to my car. (I have MS and difficulty with stair navigation goes with the territory.) That started a conversation and he said he was there to drop off a pig for butchering and the animal was inside the Redmond Smokehouse being disassembled into edible parts "as we spoke". His daughter used her high school graduation gifts of cash to purchase two cows and a pig, all of which were then raised for purposes of being able to have them slaughtered and sold. The investment, he said, was delivering a good return to help pay her college tuition. His comments made me reflect on what a local newspaper writer wrote about Redmond Smokehouse earlier this year. He said independent meat processors, like the Smokehouse, "...are the ones keeping the mystery out of meat." Ain't it the truth! Because independent processors know who they are sourcing their meat from. For example, we were introduced to Redmond Smokehouse's products, and how they source the pigs they use to turn into bacon, ham and sausages, at a local Farmer's market. A Smokehouse employee had bacon to sell and could share that the source of some of it was produced from local 4H raised pigs. It was among the leanest, best bacon we have ever had and we said we needed go to Redmond to check out the Smokehouse's retail sales area in person someday. Yesterday was that day. This is an unusual place for me to review, because my husband and I most often prefer to eat a plant and fish based diet. We stopped eating beef over twenty years ago due to concerns about both the cruelty of feed lot husbandry and health concerns about processing. We found it was much easier to find sources of humanely raised lamb, poultry and pigs where we then lived then. Although we have easy access to humanely raised beef now, we've lost our desire to eat it. But we still eat pork and lamb and poultry, being mindful of when we eat other animals of choosing purveyors (be they retail or restaurants) that in turn have relied on suppliers where we feel some confidence in the husbandry and quality of processing. Like Redmond Smokehouse. In addition to on site smokehouses producing bacon, ham and sausages, the Redmond Smokehouse is also a full service retail butcher shop, a wholesaler to local restaurants, a processor of animals to return to farmers, a processor of (clean) game brought in by hunters, and operator of freezer storage meat lockers. We expected the retail sales area to be rustic, tucked in an old part of Redmond adjacent to railroad tracks, and it was. We also expected a bigger selection of fresh pork, but most of the products in the fresh meat case were beef. The sales woman said most of pork products like bacon and house made sausages (over a dozen kinds) are frozen immediately after production. (Sausage can be purchased fresh in orders of 15 pounds or more.) We noted the large freezer case had a broad number of pork choices and poultry choices and a more limited selection of lamb and even goat products. The current owner, Ben Moore, took over the business from his parents so the quality control and pride in producing excellent products are part of the fabric of the business from way back. Award certificates posted on the walls are testimony to recognition. We bought ham and served it to guests at dinner last night. We all agreed it was possibly the best ham we have ever eaten. And when I asked the butcher behind the counter at Redmond Smokehouse if the pigs from which the smoked hams were made this season were local, he could tell me that they were not from the Redmond area, but from Eastern Oregon and a specific part of Washington state. I wonder how the butcher at the meat counter of a big commercial grocer might answer that question.about the hams for sale there. For people in central Oregon, the Redmond Smokehouse offers some great products. And a visit there also helps underscore that it is true that getting meat to the table is a messy thing. If we all realized more what goes in to getting the animal to our plates, we might be more mindful of how much of it we eat and how our choices for where we spend our food dollars impact the production end too, including how animals are cared for during their lifetimes. IF I could put ZERO stars that would be it.. we are a multi generation Central OREgon family. The last and final straw was our last pick up of a processed young longhorn....along with another four year old longhorn.. What we got back was nothing of what we raised. Beyond the horrible tuff and old meat it was also incorrectly labelled and loosely horribly packaged. WE tested this theory of "our own beef" this year... Slaughtered,cut and packaged a BULL - not the delicious heifers we'd been sending to Redmond smokehouse. (those delicious heifers never made it to our ranch..we got old dry lot crap back from them for them to sell premium beef in their showroom)WELL testimony is in.. AND I am beyond PISSED that we endured this for so long. This bull is the most tender the most delicious beef and what I remembered ... not the crap this company sends back to their customers. Also had them cure a pig and it came back inedible.. tasted like fish....... read more

I have traveled a lot on the EastCoast but nothing compares to this spot nestled in a town in the beautiful Central Oregon area. I had heard of the smokehouse but visiting was far more awesome than I could have imagined. Their selection is the BEST I've ever seen in my 20 year travel journeys. Their beef jerky selection is like nothing I've ever seen! I opted for the Brown Sugar jerky since spicy burgers were on the menu and it was delicious. The jalapeño cheddar burgers were the best size and filler to beef ratio. It was a home run selection! The brats are so good and grilled up very nicely. I will definitely return on future visits to the area. If you are nearby you have to stop and check them out! You will be very very very glad you did. I seriously have not seen such a meat lovers dream than this great smokehouse. read more

This is an impulse buy heaven. We were visiting another butcher/smokehouse in Redmond, saw the Redmond Smokehouse from the highway and stopped in on our way home. Funky little building in a semi-industrial area. The upstairs part of the building is the retail space and we ventured up the stairs for a look inside. They have an extensive selection of frozen meats and a decent fresh meat deli case. It's the frozen meat section where my impulse buying tendencies flared up. We came home with canadian bacon, goat stew meat and hot dogs with korean short ribs on our list to pick up next time. There were endless other options including things like buffalo and elk. Plus all of the more standard fare, chicken, beef, pork and lamb. Plus fresh local eggs. We bought pepperoni sticks and a cheese/pepperoni snack mix out of the deli case. We sampled what I remember as being a German style pepperoni stick (the name escapes me) and it was excellent. Another item to put on the list for next time. We didn't spend a lot of time looking at what was in the butcher's case because we had just picked up a 1/4 cow from the other butcher we had been to. But the meat looked nice, fresh. Good stuff. Jerky was $23lb. Pepper sticks 12.99. Reasonable for custom counter snacks. Lady who ran the counter was a bit cold. But worse she was stingy with the samples. She said I could try a piece on one and when I stared her down a bit she reluctantly gave me a "tiny" fragment of two to compare. I know meat is spendy. But when you're selling me $23 lb snacks I expect nice samples and a smile. It will only make people more inclined to buy. The way she did this was embarrassing. I'll stop again next time I'm in the area. If they fix things I'll happily increase my rating. If not, it goes down to two stars. read more

"You know who you are" Redmond Smokehouse has been a family go to place for over 14 years and I can say without a doubt they have some of the best meat products in central Oregon, matter of fact Redmond Smokehouse is the gem of meats in central Oregon. Established in the late 1930's and purchased by Ben Moore's dad in 1941. Ben is the second generation of Moore's continuing his father's tradition of sourcing local grass feed, hormone free, stainable beef, poultry and pork. Ben Moore took over the family business about 12 plus years ago and has carried on the family receipts and I for one am very grateful! I've had a full spectrum of delicious meats from, lamb, sausage, ham, smoked turkey and homemade corn beef, smoked pork chops and a verity of smoke cured bacons not to mention a plethora of homemade beef jerky's. If you would ever like to be the hit of the party! And in my case Christmas Party, try the Diestel smoked turkey it will change your life and best of all it makes a great stock for turkey soup after it has been picked clean. I have in the past bought 2 sides of pork and beef from this place besides many other times to buy other items. We had a great experience in the past including superior hams. We had this year family from out of state for Christmas. We pre ordered a ham from them expecting another special product. What an embarrassment! The absolute worst ham I have ever eaten. No flavor, no smokiness or even salt. It even cost $1 a pound more than Freddy's top shelf ham. Won't be going back ever!!! read more

This place is a classic butcher shop. The meat quality is outstanding. The breakfast sausage is so good, that my friends always ask me to bring some to Salem when I drive back and fourth. I am a sausage mule. The variety of meat selections range from goat me to lamb pork and beef. There are also a lot of odd that cuts such as bull fries and sweet breads, which are generally hard to get and expensive. Pork sage and maple breakfast sausage is our epic. The green onion is also fantastic. It's a great place to stock up and the sausage is only about five dollars a pound and the quality is exceptional. You can't go wrong with Redmond Smokehouse, it is outstanding operation that is family owned. read more

Have used the Redmond Smokehouse for decades. They previously had the best hams and cured meats anywhere in Central Oregon. The last three pigs I have had done were/are horrible. The hams and bacon are tasteless. Still a good cut on rest of pig, however, the cured products shadow the rest of the job. I have been assured that nothing has changed multiple times...REALLY! Obviously things have changed and no reassurance will convince otherwise. Since the merger with Cinder Butte I have questioned whose style they stayed with. I will not use either firm again as cost has gone up and product quality has gone down. read more

The Redmond Smokehouse is absolutely the best place to get your meat. For one, you can taste the difference in their meat. Also, when you buy from there, you are buying the best quality without scares from things like Ecoli. Also, the staff is really friendly and they have great package deals. The price is barely anymore, if at all, than what you would pay for meat at the grocery store, that came from who knows where. I'll never buy meat from anywhere else again. read more

Purchased bangers and pork chops. All I can say is amazing. Some of the best bangers I've ever had. Their seasonings are right on the money. Killed my first buck ever on Thursday, Skinned it and kept in cool and covered through the weekend as there was still another tag to fill in the party I was hunting with. Came back into town on Saturday evening around 5, called Redmond Smokehouse only to find that they were closed by 1 and closed on Sunday as well...Hung my deer in the garage at my house until Monday when I called Redmond Smokehouse first thing in the morning...only to find out that they do in fact have room in their freezer but will only take a deer that was killed on Sunday or later. Not very helpful if you ask me. Cinder Butte is also full, but told me that they would make an exception and to bring my deer to them today. Thank goodness there is more then one place to have a deer processed around here. read more

I just had my two pigs mobile killed on site through Redmond Smokehouse and I am extremely pleased with what I've seen so far. The mobile kill guy was on time, polite and respectful to my animals. Even though I was a first-timer at this, I ended up watching the whole process and was impressed with how my animals were handled and readied for the rest of the process. I have a love for grilling. And this is my Stop for the best meat in Central Oregon!! Hands down. If its a cut they do not carry on a regular bases they order it in for me and it is fresh and ready when I need it. The quality and variety is some of the best I have ever seen. As well I have had them process my beef and hogs that I raise I was super happy. Cut the way I wanted it. I got back all my meat. When I got a deer they made pepperoni and summer sausage for me.
