With their home made three day rise crust and cheese from the local cows!? Like how fresh and fabulous could it get! I also tried out their arugula salad and it was scrumptious. Perfect bite and finally a place with even dressing distribution! The perfect salad to pile on top of a slice of pizza. Don't knock it till you try it. ;) Make sure to try some of their home made root beer when you get there! Definitely a place worth stopping by.

I'm not sure this pizza worked as well as I'd imagine- the crust was pretty burnt in places, and quite chewy. My friend who loves making pizzas suspected the dough was over worked. The dates were rough chopped into large pieces, so bites alternates between really bitter arugula, and then extremely sweet and chewy dates. Chopping the dates finer and maybe doing a quick seasoning/oil rub on the arugula would've helped. Overall, it lacks balanced flavor, it didn't quite meld well together. The pizzas aren't that big, and are pretty pricey for the result. - For the veg/vegans: There's around 3 options- cheese, margarita, and the first date pizza (arugula, apple, dates). Thankfully vegan Daiya mozzarella is an option! Although I did miss the more nuanced flavors Miyoko has.

I've always wanted to do something like this but have been a bit nervous to do so but he made the class fun, funny, and so easy! You have the chance to make 3 bespoke artisan cocktails during this 3 hour class, 2 of their signatures and then the 3rd Aaron let us pick! He made it so easy and explained each step well, also how to use the tools properly along with sharing some great tips on shaking, measuring and also the importance of balance in your cocktail. I enjoyed every minute as well as consuming the cocktails after... each so delicious made with their in house liquors. If I had room I would have bought several bottles with me to take home!

Aaron came out as we were looking for Plan B and let us know the event had just ended and they were open again. (5 loud cheers on the street for sure!) I tried both the Kyoto and Wet Work, enjoying them both. They would even work as a blend of one another. My dad accidentally ordered a chocolate martini instead of an espresso martini, and Aaron made it happen. (The entire table loved it! Take that poured over some ice cream and I'd be far too content!) My brother had the gin martini, and while not a fan of gin straight up, it had a nice smooth finish that I could appreciate.

They have a cute little storefront and tasting room in Sooke, which makes for a quick stop and tasting if you can't decide. The gentleman at the storefront was very friendly and knowledgeable.

They sell at farmers markets and also do tastings in private liquor stores with a discounted purchase. My favourites are the chocolate and coffee liquers. From the gin side, they have a bunch of unique offerings, including a Japanese one, but my personal preference is for the Seacider gin. The lemon lime and rhubarb gins are perfect for mixed drinks in the summer. The actual distiller was at the liquor store tasting I happened upon and apparently they use a local chocolatier's odds and ends to extract the chocolate flavour. At the distillery itself, they also had some nifty gift packs around the holidays. Prices are not cheap, but decent for a craft spirit and the size of the bottles, which are made from hefty glass. The tasting room is pretty small and bare bones. They seem to do decent traffic, though. But would be nice if they could add a patio area or expand and have some seating. I did have an issue with the stopper on the small coffee liquer bottle being a bit leaky, so watch out for that.

I did my final tasting at their tasting room at the airport. There were 2 wonderful ladies there. I had the most contact with Chloe. She really knew her stuff. Presentation sold me. I have 5 visitors coming from France in April and they will have the Empress & tonic to impress and amazing. How can one describe the incredible color? Lavendar? Amethyst? The taste was off the hook. With Chloe's advice I located the Empress 1908 Gin in town and didn't have to carry it in carry on with the airlines. And the 5 Frenchies vising me in April will have amazing cocktails. Yaay. Get it. Got it? Good1

We ran into their bartender Kenzy (who is super engaging and loves Gin) and we stopped in and got an education from her! She is delightful!!!! We even ended up there at happy hour(who knew) so grabbed a couple empress gin cocktails and she let us sample a couple of the other products. What a fun stop and their location is right by the marina so a cool place to hang as well. Their cocktails and products are so Well thought out with using the best ingredients and wow you can taste them!! The empress Gin is so subtle and beautiful. Well worth checking out and if they have a tour I would try that as we did not have time that night. And grab a few bottles while your there!
