This was my first time visiting Chuckanut distillery and I was very impressed! The staff are so knowledgeable about the process of the spirits and their hospitality was beyond amazing!! My favorite would have to be the coffee liquor, must try! They also offer a wide selection of cocktails. One of the things I loved is that they support local business including farmers by using their products in their spirit making process. Great selection of spirits with even greater service! We were greeted with a very warm and genuine smile and offered everything from tasting flights to mixed cocktails. We wanted to try everything Chuckanut Distillery had to offer so we opted for two tastings. We headed outside as it was such a gorgeous day and our server brought us the super cool rustic display of their spirits! The tasting started with the least sweet to the most sweet to help the palate cleanse in between. Our server explained everything to us, she was definitely very knowledgeable of the spirits and processes. Our favorites were Krampus and Green Man but the potato vodka was also a cut above any other we've tasted! The gin is super smooth without a heavy juniper base and the rye whiskey is sweet and shippable. I highly recommend stopping in for a tasting or some cocktails! read more

Had lunch there on 7/2/25. On the plus side, the food and service was great. On the negative side, I didn't like the automatic gratuity of 20% added to the bill. The server said I could alter that on their copy of the credit card bill. I tried to do that, but they overlooked what I had written, kept the 20% on the bill, and added the tip I wanted to pay, raising the total bill from $16.50 to $19.30. I sent them an email on their website, bringing this error (I assume) to their attention, but have so far been ignored. I wonder if that will continue. read more

The distillery and its tour is a lot of fun. Getting to see a new distillery making vodkas, gins, whiskeys, and liqueurs is a treat. We had a chance to taste all 9 products that they make, and then a very knowledgeable tour of the premises with all the different equipment. The tour ended in the barrel room with lots of oak barrels aging the brown spirits to perfection. As a final move we got to look into and smell a hung hole. Best one I've ever smelled. Came across this distillery from walking around downtown Bellingham and thought we would stop in to try them out. I tried a whiskey flight where I was able to try 4 different tastings. I was lucky enough to get to attend the Yelp event here. The whole experience, from terrific tour and spirits tasting to "am I really in Bellingham?" food and drinks at Penny Farthing, was far and away the most special since I've been here. First, go to simply admire what has been done with this long-neglected space. They elegantly and extravagantly integrated old and new, functional with beautiful to create a wonderful distillery and gorgeous dining and cocktail space that each highlights the other. This space would be right at home in Park City, Aspen, Seattle.... The spirits are delicious. I will happily add their gin, Dock Line and bourbon into my home spirit rotation. I will also enjoy using the Krampus and Old Busker liqueurs in some creative ways. Now the food and cocktails. I want to come up with some reason to hold an event here so I can let others experience the flavors and presentations offered. You can tell the chef used to do over the top events in Vegas, baby ! Perfect shareables for any group. My new obsession is the tarragon mustard served with the charcuterie, and addicting herbed Parmesan bread twists. I cannot wait to return for the dishes I did not try. The cocktails are great, and go very well with the food. I loved my Whiskey Sour! Hubby's bday gift from daughter and SIL was a distillery tour at Chuckanut Bay Distillery. This tour far exceeded any expectations I may have had. Nat was such a bright light throughout. From start to finish, we learned the process from grain to bottle. And the delicious tastings along the way let us enjoy the flavors of a few different products. The history shared from Mike riding the bike to crush Yukon potatoes to the current location and all the building history and preservations of it. Not to mention the still to come event space and rooftop space. We shopped their goods following the tour and am excited for our additions to our kitchen and to add to great entertaining experiences. Such great, authentic coffee flavor... and the Krampus is just fun. It's a very unique, sweet and herb spicy blend. It's really quite enjoyable! I dig this place. You have to check out the tour and tasting while you're in Bellingham! The entrance is in an alley in downtown Bellingham with signage so you can find it easily. Inside, one of the co-owner's mom was working and was super friendly as she greeted us. We waited for everyone to show up before the tour started. One of the rules is that you can't take photographs of the distillery beyond the tasting room, so you'll have to see for yourself! The tour space is very small, but it's super informative as you learn how everything is made. Once the tour is over, you'll get to taste their potato vodka, gin, potato gin, bourbon, coffee liqueur, herbal liqueur, and maple syrup! The pours are super small; don't go here if you're trying to get drunk. They pour just enough for you to get a tasting of it. The drinks are priced to include tax. We got a bottle of their seasonal Krampus herbal liqueur for $35. I contemplated getting the gin for $40, but decided to get it next time I'm in town. Overall, excellent experience! read more

My first visit to Chuckanut was on their opening weekend. At the time they were serving just one spirit: their wonderful potato vodka, which had just won a major award! We'd just intended to sample and leave, but we were so impressed with the young owner and his mom (who runs the tasting room) that we bought a bottle to take home. Fast forward to yesterday...I saw something about Chuckanut having a free bloody mary tasting, so of course I planned my entire day around going! Imagine my surprise when I walked in and found out they now have SEVERAL spirits to choose from. They still have their original potato vodka, but now they also have a wheat vodka, a gin, a bourbon, and some more unique varieties like a spirit made from hops (it was really unique), an herbal liqueur that tastes like Christmas cookies, and my favorite: their coffee liqueur. Oh and the bloody mary was yummy, too - "mom" (who is just delightful, by the way!) even put a little stick of celery in it! It's always nice to see a small local business growing and thriving. The place was busy with a steady flow of customers. Oh and their dog-friendly, too (as long as your dog is friendly). I can't wait to find out what these guys are going to create next! read more

I was very lucky to learn about the Distillery's delicious coffee-flavored liqueur, Old Busker, while attending a yelp event here. (Thanks for inviting me!) It's so good, I buy it when I can and I've convinced others to do so, haha. We were given a tour and a nice talk about the owners' journey to fully realize their distillery dreams. I love seeing them grow and succeed, because I feel they create superior products. Soon they will be moving to a much larger space, and I cannot wait! They plan to have a large tasting room and cocktail bar, as well as event space, on Cornwall Ave. Don't forget to try their KRAMPUS liqueur!!! It's only available around the Holidays. Small storefront, but really great spirits and presentation by the owner. He gave my brother's bachelor party and sampling of every spirit, the potato vodka, gin, whiskey, bourbon, coffee liqueur, and Krampus. We ended up taking back 3 potato vodkas, 1 whiskey, 1 bourbon, and 3 Krampuses. The potato vodka is incredibly smooth and viscous. You could drink it neat on a regular basis. The Krampus was such an explosion of flavor. It tastes like Christmas with gingerbread notes, really great. Definitely worth a stop if you're swinging by Bellingham, and they're about to move into a bigger storefront / facility soon! read more

Constantly purchase their "Christmas/seasonal" Liquor, Krampus, which has a cinnamon biscuit flavor and absolutely KILLS IT in apple cider or egg nog. Coffee lover? Definitely going to need a dash of their coffee liquor. Not too sweet but full of smooth, rich coffee flavor with a little punch. Not feeling those? Even better! Their whiskey is sublime and without the overly sharp sting. A really layered drinking experience that opens up as you enjoy it. And let's not forget the gin. I am a self proclaimed gin-hater. Somehow they have masterminded a grand balance between pine flavor and refreshing, summer completing taste. Pair with anything cucumber, and maybe a dash of lavender to enhance the aromatic experience and feel refreshed. Go take a look, park on the surrounding streets (Railroad etc.) and taste bravely. Too early for a full tasting but tasted and loved Krampus liquor. Our primary purpose in visiting was to sample and buy the Hops Schnapps listed on their site. It has been out for months and won't be available until sometime in 2020. Hopefully, website will be updated to reflect that and their upcoming new location. read more
