We have been raising and eating our own beef for over 20 yrs. We have used Unrau's because they are…read moreby far the best for most of that time. They've been in business since the 70's, but aside from this they are very customer service oriented and a family owned business. There are MANY variables that determine the amount of beef you come home with. The type of beef you are butchering, some breeds are more 'beefy' than others. The size and condition of your beef at the time of butchering. The type of cuts you choose and parts you don't want; ie liver, tongue, etc. The average beef breed should yield around 35-40% of live weight, but that is, as stated, also dependent upon cuts and what is discarded. If you choose a lot of boneless cuts, that reduces the yield. The only down side for me with Unrau's is that they don't shrink wrap, but the quality keeps us going back. Bottom line: I highly recommend the Unrau's Meat Processing.
