    I come here for the smash burgers & I fear that maybe a crime given this is a BBQ spot lol! I know their BBQ is great, don't get me wrong, but their smash burgers are what steal the show for me! They are consistent and delicious EVERY TIME. I also love the elote & the banana pudding!! This place is worth the hype 100%.

    My wife and I reviewed North Texas Smoke BBQ in Decatur, Tx. This is our 47th of 50 Texas Monthly Top 50 BBQ places visited. Review: North Texas Smoke BBQ - Decatur's Highway 287 Treasure North Texas Smoke BBQ, a proud recipient of the prestigious Texas Monthly Top 50 BBQ award, operates out of a highly-praised food truck just off Highway 287 in Decatur. This is more than just a quick stop--it's a destination. With ample outdoor seating and parking, the environment is welcoming, backed by a very friendly staff who are clearly passionate about their craft and well-connected in the BBQ community. Every item served is homemade, and the quality shines through in this exceptional spread. The Smoked Meats The meat selection at North Texas Smoke is executed with high-level pit mastery: * Brisket: The brisket delivered on moisture and flavor. It was very moist and juicy, boasting a good smoke ring and a bark that was commendably good and firm. The only critique was that the bark was a little salty for my personal taste, slightly overwhelming the beef's natural flavor. * Spare Ribs: These ribs were juicy and deeply flavorful. They were mostly tender, retaining the desired bite that indicates proper doneness--although they did not fall off the bone. They were slightly tough near the edges, but the majority of the rib was excellent. * Jalapeño & Cheddar Sausage: A solid link with a great foundation. The casing had a nice snap, which is a sign of a perfectly cooked sausage. While the flavor was good, the grind was not as loose as it should be for that classic Texas texture, making it feel a little denser than expected. * Boudin Sausage: This was a clear standout and highly innovative. It featured an excellent mixture of smoked brisket and fragrant jasmine rice, creating a beautiful balance of smoke and starch. The link offered nice texture and flavors, encased in a great casing that held everything together beautifully. The Bold and Homemade Sides North Texas Smoke goes above and beyond with sides that are both creative and perfectly executed: * Pork Belly Fried Rice: This is a fantastic, spicy creation. The base of basmati rice was delicious and provided all the right textures. It had a nice spicy kick and was generously mixed with tender pork belly, corn, peas, egg, and carrots. A highly memorable side dish. * Street Corn: Absolutely awesome. The fresh corn was incredibly creamy, coated in a delightful spice combination of savory cotija cheese and bright bursts of jalapeño bits. It's the perfect blend of creamy, salty, and spicy heat. * Loaded Potato Salad: Served cold, this traditional side was done perfectly. It was properly "loaded" with generous amounts of cheddar cheese, crisp bacon, sharp red onion, and fresh chives. A classic side that provided a cool, refreshing counterpoint to the hot smoke. Final Thoughts North Texas Smoke BBQ deserves all the accolades. The meat program is strong, anchored by a moist brisket and flavorful spare ribs, while the Boudin Sausage stands out as a unique signature item. However, the true difference-maker is the quality and creativity of the homemade sides. This is a top-tier Texas BBQ experience delivered with authenticity and warmth.

    The faces are smiling & so glad to see you, the food is what BBQ dreams are made of, the brisket is juicy and tender, the boudin is loaded with flavor, the smash burger is so perfectly juicy and savory that you don't actually need any sauce for it, the loaded potato salad is creamy, chunky, sweet AND tangy, all in one flavor packed bite. Absolute perfection on every level. Grab a table and play some cornhole while you wait, the fresh air makes for the perfect lunch break!

    Starting off my tour of the top 50 BBQ joints in Texas is North Texas Smoke. Housed in a large trailer with smokers in and around it, grill inside for smash burgers and the like. I love the 1,000 gallon smoker and only wish I could wrangle the 500 gallon backup. Menu on the wall. Specials listed as they should be, made it easy to see what to order; I had the Texas Trinity, with cheese grits and Mac & Cheese. My link choice was brisket boudin which was also the special today. My wife order the chopped beef sandwich with street corn side. Both came with pickles, pickled red onions, and bbq sauce. Service was fast and the had dining outside but looks like most orders are takeaway, as we did today. After a 45 minute drive home, here is the results. Ribs were very good, competition style with a little pull but tender. Good bark and plenty of meat. The brisket was about 3/8" slice with a very thin fat cap. Not quite as tender as Franklins but great bark, taste and servings size. The Boudin sausage was excellent, soft texture due to rice filling, salty, and the brisket came through well. Cheese grits side Was very good, with a nice savory flavor and a cheese bite that was satisfying. Mac & Cheese was good but lacked a defining taste. Pickled red onions were excellent and the sauce was a vinegar base that zinged your tastebuds. A little goes a long way. The chopped beef was served with a huge pile of brisket on the side of a toasted bun. The wife said it was very, very good. Her street corn tasted very fresh and was a good bite. The star of her dish was the Texas Rattler; a stuffed jalapeño cooked perfectly and tasted excellent. Overall good start for my tour of the Top 50.

TL;DR: I drove solo on a Friday to Decatur for lunch and left wondering if I should just go ahead and move there. The ribs? Fall-off-the-bone magic. The vibe? Smoke, smiles, and sausage with a handshake. You want real-deal Texas BBQ with a side of greatness? You come here. Derek's got the pitmaster swagger of a rockstar and the beard to match. Well butter my brisket and call me satisfied! North Texas Smoke isn't just a name, it's a culinary warning label; because once you've tasted it, your taste buds might file a complaint against every other BBQ joint in a 100-mile radius. Rolled up around 11 a.m. on a solo BBQ pilgrimage, and wouldn't you know it, no line, no wait, just pure smoked destiny. I ordered like a man on a mission: brisket, pork ribs, and sausage (because let's be honest, restraint is for salads). For sides, I went with street corn and loaded potato salad. Minutes later, my tray came out like it had a jetpack strapped to it. Fast, friendly, and freakin' fantastic. Let's talk ribs. Y'all. These ribs didn't fall off the bone, they moonwalked off. Saucy, smoky, and tender enough to make a grown Texan tear up in the wind. The brisket had bark that barked back (with love), and the sausage? Snapped like fireworks on the Fourth of July. That street corn? Creamy, spicy, and topped with enough jalapeño to remind you this is Texas. The loaded potato salad? So good I checked to see if my mom had secretly moved to Decatur and got a job in the back. Before I left, I got to chat with pitmaster Derek, a legend in the makin'. He's taken a trailer and turned it into a holy site for meat lovers. Word is he's building out a permanent spot, and buddy, I'll be back opening day with a folding chair and a fork. Bonus points: his T-shirts are inspired by his own tattoo, and yes, it is spectacular! So do yourself a favor. Put this joint in your BBQ GPS, shake Derek's hand, and treat your mouth to a Texas treasure.

    I am really sorry to be one of the only 4 star ratings. But I have to be honest here First off it's hard to find! Look for the little food truck behind the tractor place! I thought it did add to the ambience, but I did drive around more than I wanted. The staff was amazing, very helpful in answering our questions, helping us make our order, and letting me poke around the smokers, taking a look at the next days briskets. (They were beautiful) My wife and I ordered a two meat plate with two sides. We got the ribs and the brisket with the Mac & cheese and the Cowboy beans. Surprise- here it was 11 o'clock and they had already sold out of the mac & cheese. They were in the process of making more, but that was going to be a good 20 minutes later. She ended up getting the loaded, baked potato salad, which she thoroughly enjoyed. My only issue was that the ribs were a little undercooked. The meat did not pull off of the bone cleanly. The taste was good. They were a little bit tough. Why I did 4 stars. OK The brisket was the absolute BOMB!! I have eaten Barbecue from Houston to Amarillo and San Antonio to Texarkana! That had to be in my top three briskets I have ever eaten!! It might be the absolute best. It is Absolutely worth the drive to go out to Decatur to eat here. Maybe I just had a bad rib day, but the brisket was fantastic worth the trip all on its own.

    You don't want to miss this Texas Monthly Top 50 BBQ spot in Decatur, Texas off 287 before you get to 380. The brisket is definitely going to be one of the best you've had! Brisket Boudin is one of their specialty sausages and you are going to want to bring some of this home. Be sure to pitstop here, if you're driving down 287. VETERAN OWNED business and they are almost finished with their restaurant that's going up right behind where their food truck is right now. Grab a free Lone Star Beer. North_texas_smoke

    The nachos, the Texas twinkies, the brisket, the sausage, the potato salad, I can list their items on and on, but I have not found one I did not LOVE. Some of the best bbq I have ever had hands down! And the owners and workers are all so personable!
