If you want some of the BEST ramen around, you need to try this place. We've enjoyed the food here multiple times, and it is consistently amazingly delicious. Wow! Fresh ramen noodles, savory broth, and stellar service. You can tell how much pride they take in each dish and the level of detail and care they place in every order. They are doing a lot right in this small but welcoming restaurant. Truly serving up some top-notch ramen.

This is some darn good ramen. The atmosphere is sleek and modern. I'd heard some folks didn't like ordering on your phone but I liked it. The menu is small so I didn't need a server to come over and explain the dishes to me. There was a guy going around delivering the food and chatting with the diners. He did check to see if we had questions while we were ordering. The food arrived quickly and hot. I love ramen but I don't get to eat it as much as I would like so I may not be the best judge. I enjoyed my ramen and the whole experience. Since it's in the Bobby Boy / Bottling Plant complex it's easy for me to get to. Plenty of parking and my favorite bakery is 20 feet away. I will be back as often as possible.

The latest restaurant concept in the highly touted and well loved Bobby Boy Bakeshop repertoire. This one is right next to their 2nd location of the Bakeshop in the Salem Bottleworks, with the Slaberia being to the left, and them being to the right. None of these places have a sign on them... would be nice if they did. We did not know which spot was Noodle Ju'B when we walked up, because all the windows are heavily tinted. In short, it's the first building on the right when you walk into the "gated" area which used to be the distribution center. Inside you'll find a modern eating experience. All counter seating, menus and ordering are all done via QR code, which makes things nicely streamlined... though I am sure it will annoy some people. Probably not the main demographic here. You are asked to tip when you order... a little strange, but I guess it's the only option. There is someone who delivers your food and brings a water pitcher, but not traditional waiter service. The menu is small, 4 types of ramen, a couple apps, and a few canned and bottled drinks. The bottle of yuzu lemonade was a little hilarious, in both size and price. Probably won't fall for that again. The steamed bun as well, is just one (very delicious) bun. I honestly can't remember if it was expressed on the menu as singular or plural. Now that the things I didn't love are out of the way, let's talk about the delicious items. The Gyoza is really really good. It had a perfectly crispy bottom, very tasty fillings, and the sauce was the perfect complement. This was the better appetizer, and really the only shareable one (with 1 other person). The Shoyu ramen was absolute perfection. Handmade noodles, extremely flavorful broth... which is of course the key. Tender pork that was easy to pull apart. And for me the favorite... the soft boiled egg with a runny center that just soaks up all that flavor, while releasing it's creamy yolky center into the dish. This eggs yolk had a very deep orange, and that creaminess was apparent. Had to be locally sourced, which you would expect at this price point. It was an expensive lunch, but in the future, I think I'd be good with just the ramen and a beverage now that I know what's up. It was absolutely delicious, and really, as long as that is the case, totally worth the cost. I'll be back!

The atmosphere is very chill and relaxed, and the ordering system makes everything super easy, you order directly from your seat and they bring everything to your table, which makes the whole experience smooth and convenient. We had the steamed bun and the gyozas, and the Shoyu Ramen, everything was rich, flavorful, and comforting. Service was friendly and efficient, and overall loved the whole experience.

I came here for lunch the other day. Reading the reviews ahead of time were helpful to know how and what to order. With this place connected to the Bobby Boy group, I knew I wanted to give it a try. We came at lunch. Staff were super friendly and helpful. My food was incredibly flavorful and very filling. Bummer they have no GF options to bring my wife, but the staff said that was something that was planned in the future.

We wandered in after attending the Moravian Fest in Old Salem and we're greeted heartily by the front of house and (open) kitchen. I think it was their third day of service so not sure if their currently limited menu will expand. Or maybe they'll just focus on doing a few things very well? I wouldn't mind that. We had one each of the starters. The steamed bun was steaming hot and fresh. A bit of pickled ginger on top added a nice kick to the sweet pork belly. We almost wanted it to be served on the side to make sure we got a bit in every bite. They gyoza was also pork (sorry non-pork eaters) and my wife said it was the best gyoza she's had - and she's had a lot. The spicy cucumber salad was a nice refreshing change of pace and not too spicy for me. I had to choose just one of the three ramens unfortunately (they also have a soba - soupless ramen). I chose the shio ramen. Interestingly a chicken broth but with pork. The soup had rich, layered flavors. Certainly the best in this area. The noodles were plentiful, fresh, and not overcooked. All of the staff were really welcoming and happy to get our feedback. I'm looking forward to returning to try the other bowls.

Leaning into the Japanese counters and the Australian QR codes/limited waiter service, this spot is reminiscent of my travels. The pricing is not. So expensive for ramen. Solid flavor but would recommend more tofu to other ingredient ratios. I am wondering why they close at 5 pm. Such an awkward time-the spot was nearly empty in the final hour.

I had the noodle place on my list since they opened. The bakery and pizza place are amazing and Noodle Ju'b did not disappoint. I sat facing the kitchen and could talk to the staff making the food. The bun was fluffy and filled with tasty pork. I loved the ramen. The broth was light and the noodles had a nice chew and never got mushy. The wontons were delicious and I enjoyed the marinated bamboo. I can't wait to come back and try more ramen.

I can't say enough good things about this restaurant. The seating is only counter seating either facing the kitchen or looking out the windows. If you come during prime hours you'll probably find a line out the door. Service was quick , food was hot and delicious. You scan a QR code , order what you want and pay upfront so everything is efficient. Everything is so fresh and house made. Looking at the description of our dish immediately prompted Google searches. Soy Seasoned Chicken & Dashi Soup, Roasted Pork Chashu, Pork Neck Ham, Ajitama, Scallion, Menma, Naruto, Nori, Einkorn Noodles. I have never had an Ajitama egg, but now I'm in love. I guess the main lesson is don't be an afraid of an unknown item it may turn out to be your new favorite.

Cool spot at Salem bottle works. Self order, QR code menu. Being vegetarian, there was one option, the vegan ramen. It's obvious they use high quality ingredients. It was good initially, but we ordered chili paste to be added which really elevated the ramen. The veggies were mostly bean sprouts and cabbage - I wish they added more to the ramen. I also wish there was a veggie appetizer as well. Prices are higher for Winston but for the quality of ingredients it matches. Overall would return.

What a great discovery on a beautiful spring afternoon with friends. Everything Bobby Boy supports in Winston is absolute fire, Nestled in Winston, Noodle Ju'B combines simple, elegant aesthetic with the most savory ingredients. We started with the pork bun, which was surprisingly sprinkled with lemon zest. It was so bright and complimented the salt in the pork so fluidly. While my friends got soupy with their orders, I opted for the pork soba. One of my favorite orders in my favorite Japanese restauranr abroad was pork soba, and Noodle Ju'B stoked every node of nostalgia. Delicious. I tried some of my friends' ramens (if you're not sharing bites, then what's the point??), and they were pho-nomenal (ugh). Every bite of everything was lovely. Paired with a pint of Asahi, this lunchtime discovery will see many repeat visits. read more

They recently started offering dinner service last week so we decided to give them another try. Our first visit was during their pre-opening period and we were hoping there might be some adjustments after the official opening. Last week was our second visit but unfortunately, it will probably be our last. Personally, the ramen just wasn't quite what I prefer. For me, great ramen is the kind where I want to keep sipping the soup until the very end but this one didn't quite give me that feeling. I ordered the Shoyu Ramen again. A few thoughts from my experience: The soup itself actually has very nice flavor but it was quite salty and had a lot of se-abura (pork back fat) added. In my opinion, the amount of fat was a bit overwhelming for a shoyu ramen. The Ajitama was also on the salty side. The Chashu had a strong smoky flavor that didn't seem to match the rest of the ramen very well. The noodles were slightly overcooked. The Menma had a slightly sour taste and I wasn't sure what seasoning was used. Because the base flavor of the soup is good, I felt it might be more enjoyable with a lighter amount of pork back fat. During our first visit, my husband had the Miso Ramen (which is his favorite kind of ramen). Unfortunately, it wasn't very enjoyable because the soup was extremely thick, almost like a paste. So he decided to try the Shio Ramen this time. The soup was good, although we would personally prefer it with less oil. The wontons were interesting but the wrappers felt a bit thick and doughy. We also tried the Kara-age that was recently added to the menu. It was very flavorful and nicely crispy and we really enjoyed it. The only downside was the price. $12 for four pieces felt a bit high because we know we can get them for less than $10 at other ramen shops. Right before they opened, we heard that they went to Japan to research ramen so I was very excited about their opening. Because of that, I had high expectations. While it wasn't quite what I hoped for, I do appreciate the effort they've put into creating their menu and I wish them the best. read more

Anything Brian does is incredible. He's a master at his craft and takes everything seriously when it comes to ingredients and intention. Noodle JuB is one of my new favorite spots and they just started to offer dinner!! Get their spicy miso deluxe ramen and add the spicy paste, trust me! Also don't sleep on any of their specials esp if the have yakitori on the menu! It's a QR code menu and ordering process including paying. I actually love that model but flagging for folks to have those expectations going in. read more

If you're looking for a chefs kiss best Ramen that you've ever had this is the place for you! I love food I'm very picky about my Ramen the broth and noodles are hard to put into words how incredibly delicious they were. I had the takatsu and I ate it all! We also had the potstickers omgggg so fresh not pre made. As fresh as you could possibly imagine. We also had the bun wow wow wow the flavor was amazing. The folks are extremely kind and put so much passion and great love into everything they serve. The owners treat their folk with great respect and in turn they treat all of their customers with great respect! It's spotless, smells amazing and is worth the wait! read more

Finally, great ramen in Winston! The noodles and broth are delicious, the pork melts in your mouth and the egg has a perfectly gooey yolk. The spicy cucumbers are also deliciously refreshing and not overly spicy but have great flavor. The steamed bun is also great, has a very flavorful filling and perfectly soft and yummy bun. This is the only place in town I want to eat ramen. read more

Loved the bar seating especially being on the side for this introvert. The restaurant was nice and I loved we could watch the kitchen work its magic. The pork Ramen was delicious. I visited noodle ju'b on a weekday after typical lunch hours, it was almost full when I arrived and still 50% full when I left, I would imagine this place is packed during peak hours. Good that it serves ramen and keep the bar table setup which means it is a quick pace restaurant, come and go. I tried abura soba, it is soup-less ramen that is rare to find here, its moisture comes from mixing toppings and sauce, it has nice flavor minced pork, a bit kick from mix of raw garlic, scallion, and chili powder (so may not be good for date night), I don't feel dry when I finish the bowl, but I would love the noodles to be a bit more chewy. I consider soup-less ramen should have that noodle chew. Its side dishes can be perceived a bit pricey. Other than that, I welcome a new ramen place in town. read more

Loved the ambiance of the place, very similar to an intimate ramen bar you'd sit at in Japan. Staff were quick and friendly and the drink options were very good. My girlfriend and I got the Shoyu Ramen and Tonkotsu Special. Both very good, however I feel like they were just a tad bit salty, delicious nonetheless! Two words: Shoyu Ramen. This place is astonishing. The food is so inspired and has such a great taste. The restaurant is small but effective. The team is also small but they have a synergy that you can both see and feel. I recommend everyone to give this place a try. I personally love their Shoyu Ramen bowl. It was lovely to find a Ramen noodle restaurant that had a vegan/vegetarian option! The bow was hot and filling and very flavorful. Be prepared to wait during busy luncheon dinner times. The restaurant doesn't have a great deal of ambience and you order and pay using a QR code so you have little to know interaction with the staff. This makes it a nice place to eat for a single person. read more

Went on a Wednesday midday and had a pleasant experience. Thankfully it wasn't packed and we got our food pretty quick. We had the cucumber salad to start that had this interesting umami flavor to it. The Japanese soda was very refreshing. The ramen was top notch, I've been to many ramen places from California to New York and this stands up at the top. My partner talked to the chef a bit and he was very down to earth and obviously has a deep love for flavor. The shop is cute, clean, and cozy. read more

Delicious! My husband and I both had the vegan ramen and appreciate that they offer this! I love that the noodles are made in house and the flavor was excellent. We also enjoyed the cucumber salad; spicy and yummy. I hope they will offer vegan dumplings and buns soon too. The space is small so expect to get there right when they open or there will be a line out the door. The menu is not large but that is ok, since everything is done so well! The only item on the menu that does not include pork is the miso ramen. Which - made up of seared cabbage and bell pepper - is entirely boring. The broth is OK. There is chicken ramen on the menu, but it does include pork items, and it was made clear to us by the staff that it would not be possible to have the dish without the pork. If you do not eat pork, I *do not* recommend this place. read more

Absolutely delicious! Really cool place! Park in the street, walk over, take a seat at their bar seating style dining room, scan the menu and order & pay through your phone! Such a cool experience. This review isn't going to use words like spectacular or superb. Instead our review is that this place is GOOD (somwhere below the chance to be spectacular) First of all, there is no silverware, so prepare yourself at home using chopsticks (good luck with that) Second, the menu is very thin. (Cant be more than 5 or 6 soups total) Do they have beer? Yes, there is ONE beer on the menu (which is strange considering how many beers are out there) The menu has a very small selection and if you are vegetarian then you only have ONE choice (which again is weird, almost wrong) You have to use your phone to order (so asking a waiter a question about what you are about to order isnt going to happen) For example- "hey does this soup have cilantro in it?" Overall our experience was just good but could be so much better. The soups we ordered really didnt have much flavor but maybe thats what they are aiming for? There is no place on the digital menu to ask for "spicy" or amend the orders at all. There is no salt or pepper on the tables/booth. So the way it comes is the way it comes. Seems to me like a lot of things could be improved to really make this place special. If the owners read this... maybe take some of these comments and at least consider some changes? In closing, we will be back with the hopes that some things have improved. We realize this is completely new restaurant and maybe they are just working out the bugs. read more

The only disappointment was their take on fried rice, which seemed more like a dirty rice you would get at Popeye's. Honestly, I think white rice would have been a better pairing for this dish. Great service throughout our visit and we're keeping this one on the short list.

The fries alone deserve their own spotlight. Truffle rosemary, okonomiyaki, poutine. It's basically a personality test at this point. I'm not someone who usually leaves reviews, but lately I've been feeling disappointed. Since the restaurant has gained more publicity and traction, I've noticed a decline in customer service. I'm no longer greeted when I walk in, and I'm told to place my order on an iPad that's confusing and difficult to navigate. The prices are already high, and being prompted to tip on top of that feels like a slap in the face. For a family owned restaurant. At the very least, I'd expect a basic level of customer service. If the ambiance were better and customers were made to feel more comfortable and welcomed, I wouldn't feel the need to write this review. Unfortunately, I don't think I'll be back

I always get the yakisoba either chicken or pork, they are both good, and it truly hits the spot. The portions are plenty and the dish is consistently perfect. I particularly love the spicy mayo that comes on top too. The restaurant is quick service style with a casual atmosphere. Always on my list of recommendations to out of town guests!

While not all of our local options are great, we have a reasonably large number of options that are good enough to make them regular stops for me. Taco Mama is not going to be on that list, I'm afraid, based on my experience thus far. The facility itself seems fine, though the ambient noise level was rather loud (likely influenced by all the metal and concrete). But the food, the feel, the service and the value just don't compete well with all those other places we have to choose from. The unhelpful attitude of the clerk taking my order didn't start things out well; she seemed genuinely annoyed about being there, and that attitude carried over into her tone when answering my questions or prompting me for info she needed. Also on the service side of things, I had to stop the waitress from throwing away my food -- a plate over half full -- after I'd walked not more than ten steps away to refill my drink. [She apologized, but only after I had to confront her twice; still don't understand why "don't throw that away!" could have been confusing.] The burrito and beans I ordered were edible, but so bland that I might as well have been eating packing materials. The accompanying chips were warm, but the cup of salsa was quite possibly the least appealing salsa I've ever been served in a restaurant. I've had Taco Bell food I've enjoyed more than this. And yet I had forked over almost $20 for such a disappointment. Maybe it was an off-day. Maybe the tacos are the way to go here instead. But I don't think they offered even a hint of a reason for me to try Taco Mama again any time soon.

The ambiance is festive & clean, even around the soda machines.The counter service was great. The team member was knowledgeable, helpful & patient. I mentioned that I was a first-timer. There's a large selection of great toppings to choose from. Fulfillment is quick & the staff is pleasant at handoff. The food is always nicely packaged & travels well - it's also good to ask what does. My tacos were filled with veggies that came with a free side, along with chips & salsa! My to-go box was topped off with some of the best light & crispy chips - even better when salted & warm (I found the salt factor to be hit or miss on orders). Side note, while some competitors give you a dab of queso, Taco Mama doesn't skimp. I've eating here several times before posting, and it's consistent. Hopefully, they'll continue to keep up the quality food & service. Oh, I should point out that my bill only included the meal & tax. You don't have to worry about the dreaded, dare I say illegal, cc service charge that some establishments are passing onto their customers.
