    Awesome Gruyère mushroom burger & excellent ribs. It's a brewpub with good beer but Milton makes a terrific Bourbon Old Fashion.

My best friend was visiting from Arizona, and since he'd never experienced this gem before, I couldn't wait to share it with him. From the moment we arrived, the staff's warmth and attentiveness set the tone for a perfect meal. Their friendly recommendations made our celebration of friendship even more memorable. We took their advice and ordered the **Shrimp & Grits** and the **Pork Belly Hash**--both were phenomenal. The shrimp were perfectly cooked, tender, and flavorful, while the grits had an incredible zing that left me wishing I knew the secret ingredient. The pork belly in the hash was generous and rich, and we even added an extra egg so we could each have one--definitely worth it! And then there's the **view**. We were lucky enough to get a corner window seat overlooking the fall foliage and the dramatic incoming storm clouds--it was absolutely breathtaking. Between the food, the view, and the impeccable service, it was an unforgettable dining experience. I regularly drive 30-45 minutes to eat here, and it's always worth every mile. I've never been disappointed. Even my niece still talks about the **burrata**, saying it was the best she's ever had--and that was four years ago! The view of Easton at dusk was absolutely beautiful. We started with the Crispy Chicken Dumplings, and they were fantastic. Perfectly crispy without being greasy, packed with flavor, and balanced really well with the slaw underneath. We also had the Burrata with peaches, honey, crispy pancetta, and crostini, and it was one of the highlights of the meal. Creamy, salty, sweet, crispy... just a really well-balanced dish. I had the Thyme Old Fashioned, which was one of the better Old Fashioneds I've had in a while. Simple, balanced, and well made. For dinner I had the Short Rib and it was excellent: rich, tender, comforting, and exactly what you want from a dish like that. We finished with the churros, which were the perfect ending. Service was definitely on the slower side, but our server was very nice and the overall vibe made it easy to relax and enjoy the experience instead of feeling rushed. Thyme feels upscale without being pretentious, which is hard to pull off well. Great food, amazing rooftop atmosphere, solid cocktails, and a memorable night overall. We'll definitely be back.

Our eyes were probably bigger than our stomachs as we ordered 2 apps, 2 entrees, and 2 cocktails, and it was an enormous amount of food. The portions are definitely what you'd call hearty, and everything was very tasty. Thursdays are all day happy hour so we picked the fried calamari appetizer at the HH price (still a full and generous plate and didn't seem like a downsized version) which were tender and well-battered, as well as the hot honey wings which were meaty and substantial. The short rib parpadelle with housemade pasta and a perfectly medium-rare, well seasoned hanger steak with truffle fries completed our satisfying and belly-stuffing meal. The cocktails are serious as well - the presence of a drink with egg white is my personal litmus test for a bar that knows what it's doing, so the Thyme to Bloom special had my name on it.
