June 19,2025 UPDATE We have ordered Doordash from Palomas…read more3x since the previous review was written and I have to be honest here. I now believe that the miserable 'nachos' I got in April must have been on a bad day for the cook staff. The meals we have ordered since then have been uniformly excellent , on time and perfectly done. We've ordered a variety of entrees and all were wonderful. standouts are the taco plates and chile rellenos, also chimichanga. Tex-Mex done right! They have earned our repeat business. Five big stars for Hacendia Palomas!

I asked for queso to pour on them in order to give them some taste. We were just passing through. I'm usually willing to give a place a 2nd try and update reviews accordingly but since we will most likely not be back in this area again, this one trip will be all I have to go on.

I had their brisket and pork ribs with double side of beans because I don't like cole slaw or potato salad (I know I know) Customer Service is great!!!! Food Review: brisket is okay good taste but not as tender as it should be and doesn't have crust. He smokes with oak wood which is good for indigestion! Pinto beans are tasty and Higgs recommend. Since bbq is my wheelhouse I'm a hard critic let me start off. I am a firm believer in the great state of Texas of "Low and Slow" he rushes his meat and there is no caramelization. I like to be able to take a semi bite of brisket without using my whole bite to tear off brisket from the slice that was cut. The positive is that(I believe he uses) meat from his ranch in Livingston. It hits different I would recommend this place and I want to come back to try the taqueria side to this place.

This is a solid 3.5-star place…read more One thing that everyone should expect from any place that claims to be Cajun/Creole is an abundance of flavor. This place, nestled many miles away from downtown Livingston, is simply a building with a full working kitchen. I did not see a restroom at all. All I saw were refrigerators, stoves, fryers, and a microwave. I am comfortable giving this place 4 stars because the owner said he made everything himself. That would be homemade biscuits, sausages, and boudin. That also includes any sauces he gives you. Enough with all of that: Service is friendly and efficient. The menu isn't large, and the owner does make suggestions. Pricing is way below the area for anything smoked or barbecued. Taste wise, the item with the most flavor was the barbecue baked beans. It gave off a taste of a light smoky molasses. The brisket and ribs were moist and fell off the bones, respectively. Both meats could have used a tad bit more seasoning. The fried boudin jalapeño had good texture but lacked the most in the flavor department. The biscuit tasted homemade and is a smart choice over regular bread. The sausage has balanced flavor and bite. He maintained a juicy meat with his sausage (pause). Overall, if I'm in the area, I would not hesitate to go back to try more items. Be forewarned, get there soon, because he has plans on moving in 2025. One more thing: it's a big kitchen = no where for you to sit inside.
