Walter Burke Catering - Spanish rice salad with sweet peppers and roasted corn.

After reading Yelp reviews and looking up the website of Walter Burke Catering, I decided to go…read morewith them for the catering service for my daughter's wedding last Sat. (Oct. 24, 2020). Not having ever tasted their food, I was afraid a slight bit of how it would turn out, if it would feed the 29 enough, and if it would be ready on time. All fears were easily allayed. The food fed everyone to the brim with some to spare. It was super delicious, elegant, and got wonderful compliments by guests. It was delivered on time, and we were given help in setting up--thanks to the amazing Tia! It was ready on time, and the everyone truly raved. We chose 4 appetizers (the pumpkin strudel, spicy crab cakes with saffron aioli, lamb kefta on sweet potato crisp with harissa coulis, and a habanero-marinated bacon-wrapped shrimp). All were outstanding. The salad was citrus, pomegranate, and pistachio with an amazing dressing. Artisan bread with compound butter. Rosemary encrusted prime rib was one entree with 2 sauces: Spanish sherry jus and a wild mushroom green chili jus. We had the pine nut-encrusted chicken with roasted red pepper sauce and stuffed with NM goat cheese. The bride and groom picked out the menu, but I was leery about selecting chicken because it's usually been dry at most all wedding receptions I've attended. To my surprise, this chicken was NOT dry, and it was super tender and moist. The prime rib was also super tender all the way through, abundant, and incredibly tasty. The salad was superb as was the grilled vegetables, and fingerling potatoes. I heard many compliments on the food that evening and was so happy about that. Everyone ate up, and we had much to pack away; this shows the generosity in the portions! Can't say enough about this company. They had great reviews in Yelp, and I now will add to that. Please consider them for your catering needs. You will NOT be disappointed. They were always kind and gracious on the phone with me, and I felt like they cared for me and our reception. I wish I would have gotten more pictures, but I was so busy. I think our photographer may have gotten some. Don't know.

Horrible experience with this company. High priced. Small portions…read more Invoiced me with same price for items I had order. When came to deliver order they removed one of the items which I had paid for on the original invoice. They brought the item and said it wasn't paid for and took it back. I had paid in full. They didn't seem to know what they were talking about between each other. Bad phone communication. The gal on the phone wouldn't let me get a word in and argued the whole time. They agreed to bring the product back but only after I offered to repay for it because I needed it for the amount of guests I was having. So disappointed

Let me just start by saying that 5 stars are not nearly enough! My mom wanted to celebrate her…read morebirthday in Taos with her closest friends and my sister and I wanted to throw her a special dinner to celebrate. We came across Chef Kualani's page and I am endlessly grateful that we did because the entire process could not have been more perfect. From the very beginning, Kualani was incredibly warm, communicative, and endlessly accommodating. She was open to any requests we had but also came up with the most unbelievable seasonal menu for the dinner (because I had no idea where to start). Dealing with her was a pleasure each and every time and she helped me go through all the details so that nothing was forgotten. And the dinner.... THE DINNER. The food was absolutely incredible. I'm still thinking about her spring pea soup with truffle oil. Every course was fantastic. But Kualani is not just a chef, she is a true hostess. She and her partner Richard came into our AirBnb and handled literally EVERYTHING. She brought beautiful plates and flatware so we didn't have to rely on the AirBnb's stash. She decorated the table. She even made my niece a grilled cheese sandwich while she was prepping. And then, at the end of one of the best meals of my life, they cleaned everything up and left the kitchen better than they found it. Having worked in restaurants and catering for many years, I know first-hand that chefs are not always hospitable. It is a completely different skill set and it's the reason restaurants need a front-of-house staff. But Kualani is the rare exception that is truly capable of curating a perfect evening. She has the most amazing energy and could not have been happier with our entire experience. The dinner absolutely made my mother's birthday and I cannot recommend her highly enough.

Amazed at how even the most down to earth dishes are elevated in such a tasteful (elegant AND…read moredelicious) way. Absolutely love the commitment to low waste and locally sourced ingredients. Lovely energy and collaboration from the head chef Kualani, and the staff are all very professional. Excellent experience!

Owing to the pandemic, we have not been able to do this since Yuletide 2019. Sensing a break in the COVID clouds, I wanted to get the gang together in March 2022. One thing was for sure, I did not want to cook and serve---I wanted to mix and mingle. Became aware of Chef Hue-Chan Karals and her Open Kitchen team via the big ad she took out in this year's program for Santa Fe Pro Musica. I got in touch and asked the Chef what she could do. The answer is "almost anything, anywhere." We chose to dine in at Open Kitchen in Santa Fe. Chef Hue-Chan worked with me to put together a menu of Irish delicacies in honor of Saint Patrick's Day. The rooms at Open Kitchen are attractive, and the staff skilled and attentive. Hue-Chan's menu of five courses was perfect from beginning to end. Delicious! Service was unobtrusive and impeccable. If you want to splurge and do it up big, Open Kitchen is the place to call.

Too bad since I do these retreats 4x a year. I did reach out and give them feedback thinking maybe they would want my business in future by offering to make it right. But nothing was offered. I feel spending $50 a person on a meal is a-lot to get dry, tough proteins.
