So I was really disappointed to walk away empty-handed this time... The ambiance remains as good as ever, featuring updated signage, fresh branded visuals, and clean, well-maintained self-serve counters that show very efficient management. Service: We arrived around 1:00 PM and there was only one server on duty. After walking in, we had to wait a short while before being greeted, though the overall service itself was still quite good. Flavor: First off, many of their previous staple dishes are gone. There were only four types of beef available, and they all looked pretty much identical... Many offal items, like tripe, have completely disappeared. The reason traditional Sichuan hot pot relies on heavy oil and high spice is, to an extent, to mask the strong gamey notes of offal. But with the limited selection available now, the offal's raw taste remains even after boiling. On top of that, the beef completely fell apart in the pot. If quality control is lacking at this level, even switching to an all-you-can-eat model won't turn things around.

The raw sliced onions, not something you'll see with western cuisine, but a staple served with mughlai kebabs in other parts of the world provide sweetness and additional crunch. The lamb buns were great. Unlike most buns or patties or quiche which usually have ground lamb, these had tiny cubes, along with potatoes. Just needed some hot sauce to unlock flavors for me. The lamb soup with noodles was light and super flavorful. Great for a winter afternoon. Service was nice. As an analogy, if bread -- bagel, then Indian curry naan -- this naan. Honestly, these aren't my favorite, but I can't fault the taste or quality at all. After waiting 5-8 minutes, she approached us with an incredibly rude demeanor, informed us the servers were behind, and told us we'd have to wait. No estimated wait time, no courtesy, just attitude. We told her we were happy to wait and even asked to add a macaron from the self-serve fridge to our bill to enjoy in the meantime. Her response? An angry glare, prolonged eye contact, an eye roll, and walking away. We were perfectly understanding about the wait. What we weren't expecting was to be treated like an inconvenience for simply wanting to dine there. If the goal was to make customers feel unwelcome, Ysabelle absolutely delivered. The food is great, but the first interaction with your restaurant shouldn't make you regret walking through the door. Management seriously needs to address this.
