We had limited options of dining on a Monday evening, so we landed here with not the greatest of expectations; however, our expectations were surpassed. We ordered the Carne Asada Camaron with a side order of chili relleno and it was delish. My husband enjoyed the shrimp which was sautéed in a garlic butter. The skirt steak was cooked nicely. The chili relleno was not too spicy and had a great flavor. What pushed the stars from a 4 star to a 5 star was a perfectly made Peach and jalapeño Margarita, on the rocks with a sugar rim. We tried a mango margarita (blended) a peach daiquiri and a blackberry margarita, on the rocks too. The best was the peach marg with jalapeño. The service was great, prompt and friendly. The ambiance was typical Mexican style with big wooden chairs and table in the middle and booths around the parameter. There are amateur oil paintings of classic Mexican flair. Came in hungry and wanting to give it a try. Took one seat, the bench literally ate me. Uncomfortable seats and not an inviting place. Looked at the menu and saw the same menu items and overpricing that is prevalent in Pinedale. Way too many menu items. I ended up with an iced tea. The Mrs got a burger and fries and barely got through half the burger and only a few fries. She wasn't happy with the seasoning or lack there of. Waitress was ok. Food was brought out timely. My date and I shared the Enchiladas los Cabos (three chicken enchiladas smothered in a blend of sour cream, Parmesan cheese and a touch of spices. Topped with green onions, served with rice and beans) and a Strawberry Margarita. The damn marg was only $8.00 and was hella delicious. I'm usually not a huge fan of the food at these restaurants however the enchiladas hit the dang spot! Lots of ooey-gooey cheese and the rice and beans were not overcooked. I'm surprised that a little old beat up restaurant like this in Pinedale, Wyoming of all places served up some mighty delicious Mexican food! The service was great and fast even though it was packed. My only concern is the chips and salsa. They only gave my family of four a very small bowl of chips and salsa. If you wanted more then it was 3.99. Seriously! Come on man! That's bad! Los Cabos Mexican Restaurant does a decent job with authentic Mexican food. My Chili Rellano was uniquely flavored and my crispy shredded beef taco was satisfying. The chips were light and crispy while the salsa added medium spice to everything. The place was packed keeping the staff jumping but everyone of our needs were filled. After realizing I left my credit card 200 miles down the road, a telephone call was all that was needed to have them mail it to my home. Below average mexican food from what I'm used too. If you've driven 350 miles and have a craving for Mexican food it may Partially scratch your itch. However, it's not a place you're going to be talking about when you get home. Typical Pinedale where there is little competition to make anything better. This place used to have a decent line cook and for a very short period the food was actually good. But he must have left before covid hit because it's not been the same since. The last two times we've been the food has been absolutely bland, looked like everything had been cooked twice, and had no flavor. Locals might tell you it's good, but many of them haven't left the state in years and don't know what good really is. You'll notice a theme in the comments as it relates to "bland food". I've eaten Mexican in my old home town in the SE where there is a mex eatery every 10 miles. I've eaten at places in South Texas, Las Vegas, and other places. All were much better. This place would be run out of town if there's was a good mex place to give it competition. But this is Pinedale where there's little competition on anything. The patio grill across the street could off competition if they could ever stay open for longer than a month. That place is another story.. read more
