Lobster Lab is one of the vendors at the recently opened Global Fork Food Hall in Little Italy. I believe they have another location at the Windmill Food Hall in Carlsbad so operating in such an environment is not new to the business. The food hall itself has been renovated and is under different ownership. Each stall now has an enclosed kitchen preparation area. Most of them use a service window to interact with customers. The overall seating capacity seemed less than the previous version.
A laminated menu sheet was available in front of the window for Lobster Lab. There were about a dozen items of which three were classic rolls... lobster, crab, and shrimp. They were sold in normal and XL sizes. Lobster bisque, clam chowder, and a tuna melt sandwich were some of the other offerings. I decided on a normal size Lobster Roll which set me back $30. A numbered pager was given to me after I placed my order. Within ten minutes, a tray was handed over with an oval paper plate containing the roll.
Mine was warmed with butter, however it could have been prepared cold with mayonnaise. The six pieces of lobster meat were topped with microgreens and placed inside a buttered roll. My issue was that the ratio of protein to bread was not ideal. The roll should have been smaller for a normal size as the lobster was completely overshadowed. I have eaten lobster rolls elsewhere in town, and this iteration was not as well-balanced which was why my rating was limited to three stars. read more
