First thing to note, from greeting to leaving, the service was exceptional. For 56 euros per person, the meal was affordable and plentiful. The amuse-bouche was a chickpea puree dotted with toasted nuts, herbs, spices, and other things I don't remember. The starter was zucchini stacked with julienned coppa, dollops of ricotta, date, peach, a thyme cracker, basil, hazelnut, and herbs juice. As an architectural effect, quite pleasing to the eye. On the palate, it tasted good, but I found it a bit too fresh-fruity forward. The mains were equally attractive to the eye. I went with the pan seared cod, which was plated with summer vegetables, fennel, watermelon, kalamata olives, smoked fish haddock espuma, saffron, bottarga, and a 'bourride' sauce. Tasty and ambitious, perfect technical cook, but I'm not sure it hit the bullseye. The companion went with the roasted cut of chicken (perhaps partially braised and finished in a hot oven to crisp), potatoes, gnocchi, wine jura sauce, herb salad, onions, and chanterelles and oyster mushrooms. Tasty and pretty, I liked this more than the cod - another perfect technical execution - but it didn't transcend. The dessert was sliced raw peach with raspberry, jasmine tea cream, shortbread cookie, verbena, marshmallow, peach sorbet, almond milk, and black sesame seed meringue. Another ambitious concept and pretty presentation, but I was a bit fresh-fruit fatigued by this point of the meal. A couple of macaroons to end the experience. The chef spoke with all the tables after we finished our meals. Much of this review seems either ambivalent or unimpressed for 5 stars. The ambivalence is correct, but I was impressed with the work being done here. I think the chef is talented, but he is still young enough to put too much on the plate without perfect balances. For the palate, he might need to think less and feel more, so to speak. If he has the time, the greater acumen will arrive; he's too talented for it to pass him by. I mention time for a reason - I don't know what the overhead is in a lovely space like this, but it has - literally - the smallest bathroom I have ever seen in a restaurant.
