I found that hard to believe until I tried it myself -- maybe one of the best ramens I've ever had in my life. The initial plan wasn't to come here, but since a lot of restaurants are closed on Mondays, we decided to give this a shot. Surprisingly, there was no line or wait at 5pm. We were seated immediately at this Tsukiji fish market-themed restaurant. Crazy how realistic the decor is and actually teleports you to Japan. You can see all the consideration that was put into the detailing of this establishment -- huge tuna on the table, the piles of insulated foam containers, hanging squid, and even the residual "puddles of water" on the table. We ordered the Sardine Shoyu (the classic) and Sardine Bomb (the strongest). Opted for chef style, which is a few euros more, but added extra protein such as an egg and chicken/pork chashu. Both took a bit of time to come out, but let me tell you -- it was absolutely worth it. The broth was rich, umami and not too fishy. The sardine bomb is a bit of a thicker and more potent broth, but wasn't overpowering at all. The noodles were wavy and chewy (maybe buckwheat?). Each bowl was loaded with tender pieces of protein that tied together seamlessly with the broth and noodles. We left more than satisfied from this meal, but will definitely think about this bowl on a regular basis. Well-deserved recognition!

It's a small restaurant in Montparnasse, and we fortunately were able to walk right in for an early dinner. They had to pull a table back so we could scoot into a corner booth. The menu is extensive and includes wontons (raviolis), soups, and noodle dishes. Everything looked amazing and the restaurant smelled so good. We ordered the wontons as an appetizer, soup Lamen with beef, soup with shrimp dumplings, lamen with pork and Lamen with beef. We only waited about 8 minutes and steaming hot food was placed in front of us. Our entrees made it out before our appetizer but we didn't mind. Food - we ordered chive pork gyoza (fantastic) they also have delicious dumpling sauce at each seat that pairs well with the gyoza. For Ramen, we ordered the Tonkotsu miso rouge with egg - delicious, thick pork and miso broth with spicy sauce. I would say the spice lever was low, but you can probably ask for more (or use the spicy sauce they provide and the Tonkotsu Noir - incredible balance between spice and garlic, perfect noodles. Not pictured - we had the Kirin beer which paired well. Overall, menu was easy to understand and the serving size was perfect. Service - so fast, kind, and clean. Run, don't walk!
