Even on this extremely busy night the bartender made sure to get our drinks in and we have had an amazing mezcal cocktail. It took awhile to get the food in but once we did we were in heaven. The ceviche was amazing and we got the Brussel sprouts to complement it. The steamed buns and pork were so good we ordered another one. Sitting at the bar felt like an event and the music was fun. Note that, while they take OpenTable reservations, it's a very intimate restaurant with limited seating--so go early! We had drinks (wine! all great) and dinner at There and loved every bite. Here's what we tried food-wise: -Brussel sprouts: This dish was all crispy, roasted bussel sprouts leaves, so good. -Duck leg bao buns: Amazing! The duck was so tender, and there was a nice slight kick to the sauce. -Lamb kebab: The lamb was great, and I really liked the sauce that same with it. Service was excellent--so helpful and nice, in that laid-back Telluride way.

This place is fusion but having the toppings be sriracha, soy sauce, and some type of powdered not spicy chili blend is criminal. Give the people some rayu, mayu, and chili crisp oil in a caddy. Even some gochujang would have done the trick. Sriracha isn't vegan and has no real heat. Telluride really loves very safe bland flavors. I get catering to middle America but get brave with your sauces to give normal eaters some options please! I'd go back but probably will smuggle in some toppings because ramen without any heat isn't ramen worth eating.

The biggest downside was how crowded it was. There wasn't a clear place to walk up and order at the bar, so we ended up sitting at a small table waiting for an opportunity to order. It would have been nice if someone was walking around taking drink orders or if there was a designated ordering area when the bar is busy. The bartender was fine, but nothing particularly stood out service-wise. Also, if you're traveling with a dog, this is not a pet-friendly bar. As far as I could tell, they also do not serve food in the historic bar itself, so it's best to come just for drinks and the atmosphere.

It was pretty busy for a weekday around 10 a.m., and there seemed to be a constant line of people ordering. I got the breakfast bowl with eggs and summer vegetables, and unfortunately it was pretty disappointing. The veggies had almost no flavor, and there were pieces of asparagus that were so tough and woody I couldn't even chew them. The bowl was also supposed to have sunchokes, but I honestly didn't see or taste any. Overall, it was just very bland. I also ordered a flat white, which had way too much milk and didn't really taste like a flat white. The milk didn't seem properly steamed and it almost tasted like cold/warm milk had just been added to the espresso. The one thing I really enjoyed was the homemade pop tart. That was actually delicious and easily the best thing we had. Overall, I found it pretty pricey, although I know that's somewhat expected in Telluride. For the price, though, I was hoping for much better food and coffee. The pop tart was great, but unfortunately the rest of the breakfast was a miss for me.
