Marcus was attentive, knowledgeable, and genuinely excited about the menu. And the food? Absolutely next level. Marcus gave us samples of the chicken gumbo and from the moment it touched my tongue, I was sold. I got a 32 ounce Gumbo and let me tell you, it was plenty. Everything was perfectly seasoned and packed full with some much pride and flavor. You could tell Marcus and his wife are passionate about their business and the product they're putting out. In addition to the chicken gumbo, I got the cornbread with the honey butter. Let me tell you something, I must've died and went to heaven. One of my friends' grandmothers made corn bread back in the day and this made me think of those times. The cornbread wasn't dry and the honey butter just amplified it to the next level. My friends got the brisket po'boys and they were blown away by the flavor. The sandwich was packed full of brisket and was seasoned to perfection. Fried Chicken - 4 Star - I got two pieces. I am pretty sure they were deboned thighs. Seasoned and fried well with juicy meat and flavor in every bite. The fried batter texture is unique, very light and airy almost tempura-ish, but still crunchy, seasoned, and it highlighted the chicken rather then overpowering it. Shrimp Poboy - 4.5 Star - Absolutely nailed the shrimp on this one. Large, plump, seasoned and sauced exactly right letting that sweet shrimp meat really shine. The Cajun/Jerk Seasoning was great and the cabbage slaw took nothing away from it. The roll was thick so it held up very well, but it needed a bit more moisture to be perfect.

Head to head, I think I prefer the flavors and juiciness of Gus's fried chicken. I'll have to give Willie Mae's another go to confirm that this is indeed the case. But Willie Mae's is situated in a better area, it's got civilized sit down table service, cuter decor, and it has way better sides. Knowing myself, I predict that one day, I will decide to remove poultry as well from my diet (I've long excluded mammals from my diet). She told me this branch was started by the same folks of the original in New Orleans. Great crunchy and spice on the chicken (it is on the spicy side so be careful if you cannot handle the heat). The little corn breads were just the right amount. We tried the yams, which is a must, but also shared some of the other sides. The cabbage is cooked kind of like collard greens. The butter beans and rice is very tasty. We also tried the mashed potatoes and gravy. All sides are vegan, which I thought was done for the local L.A. crowd, but we were told the sides are vegan in the original recipes. Next time I'd like to try the gumbo and other dishes on the menu.

The service i have mixed opinions. Most all of the employees are friendly. Maybe too friendly. Part of the reason for their long line would be the talkative cashiers. There is a way to chat up the customer while still keeping things moving along, but I've not seen it once while there; the chicken is that good that I put up with my least favorite thing at a restaurant--unnecessary conversation that adds to the wait time. The ambiance is also not my favorite. It's too loud in there. The music could be a touch lower--I'm there to eat, not be at the club--and the top notch cooks in the back yell a lot. I will say that the yelling appears to keep them upbeat, positive, and motivated; I see the value in it, yet it's the reason I get delicious chicken to go. They have a clean bathroom, a parking lot in back, and some of the best chicken in the Greater Los Angeles area. My mouth waters when I even begin to think about going there. Also, I believe the times to avoid the long waits would be weekdays until about 3 PM ish.

The peach cobbler is usually better tasting. But yesterday it was missing something. Maybe they changed the cook. I was highly disappointed after paying close to $40.
