I selected four gigantic shrimp (two each of two types, one arrived that morning and the other the previous day) and we had a delightful dinner. When biting back legs for flavour I discovered that they were tender enough to eat (rarely the case). The largest shrimp were akin to lobster, containing delicious bits of "lobster butter." The bouillabaisse was to me spectacular. The mark of a good bouillabaisse is fish and shellfish that are NOT overcooked, and a tasty broth. This one had a tomato base.
