The Billur kabob has been a repeat favorite of mine over the years. The combination of sautéed eggplant, pashamal sauce and onions/peppers/mushrooms creates an explosion of varying textures and tastes. Everything sort of melds together perfectly once it's cooked on the stone oven and becomes a cohesive entree better than the sum of its parts.
