Yesterday (Saturday) I ordered pulled chicken, pit beans, and cornbread with the coleslaw on the side. I hadn't eaten since breakfast and was famished. The pulled chicken was tough, dried out, and chewy, I tried saturating it in barbecue sauce but that didn't help. I ate it one piece at a time with lots of chewing to soften it up. I made it three quarters of the way through before surrendering. The coleslaw was fine. Then I tried the pit beans. The use of pit here is a misnomer, unless they're named after the pits of Hell. The old recipe was a spicy version of classic New England baked beans. Now I love beans. Beans and eggs for breakfast. Beans and franks for supper on a Saturday night or at a church supper. The side of baked beans that was an integral part of a Full English or Full Irish Breakfast was a welcome part of many business trips. Pit beans are not those beans. No, these are a different species of beans. Whereas normal beans are soaked in water to soften them up as a normal part of preparation, pit beans seem to be soaked in vinegar. I certainly don't mind vinegar (a mild solution of acetic acid), especially in a good vinaigrette salad dressing, but this level of acidity was sufficient to remove rust. Trying to eat these beans was like trying to ingest sulfuric acid. I had one taste. Nope. The cornbread was fine. This is northern-style corn bread, made with sugar. If you mix the sweet barbecue sauce and spicy barbecue sauce in a fifty-fifty ratio you get a decent I informed the truck manager of my results and suggested execution for whoever came up with the recipe. He was not amused.
