I have a collection of french knives and a western meat cleaver. I was looking for a knife that is better weight for slicing as well as everyday Chinese cooking. She recommended one of their popular models to me. I did some research before my visit. Her recommendation matched I would have picked myself. We went on to talk about difference aspects of their cleavers. The pros and cons of a wooden vs. metal handle. How to pick a size that matches the size of the person. Sharpening angle of the blade. Stamped vs forged steel. On every topic, the storekeeper was to the point and patient. It was clear that she knows their products well. She even helped me look for a cleaver that has their older, stamped logo instead of the newer laser etched one.
