This is probably one of my favorite places to eat in Bethlehem. The Peruvian roasted chicken here is egg-ceptional - marinated to perfection, so juicy and flavorful, with a perfectly crispy, smoky exterior and tender, soft pieces inside. The side dishes are just as great. The salad is always fresh, and the rice and beans are the perfect match to go with the chicken. This combo is the cluckin' perfect meal for lunch, and I can never get tired of it!

Came in for early dinner mid-afternoon. This is a nice restaurant and it's clean. Ceviche had some great flavors and it was very good. I had Quinoa salad here over the summer and it was so good I had to get it again. Added dried corn kernels to salad, which gave it crunch. Couldn't finish either one, so I brought leftovers home. They have a great menu, look forward to trying more foods from there. If you haven't tried Kinoa yet, make it a point to come here. You won't be disappointed.

I was in the PA area visiting the casino and was craving authentic Peruvian food. I happened to stumble across this hidden gem of a restaurant, which was AMAZING!! The food was delicious and truly as authentic as can be, this is coming from my mother who is Peruvian. Overall the atmosphere is very clean and the food came out very quickly and the service was amazing. I ordered the lomo saltado as my main entree and I also ordered the papa la huancaina as an appetizer. My family and I loved this place so much that we came back the very next day and ordered the chicha morada to drink which was the best juice I have ever tasted. My father ordered the seafood soup and it was such a large portion worth the money. Overall I would 10000% recommend this place the owners were fabulous and the food was exquisite. Definitely try it out if you're looking for authentic and delicious Peruvian cuisine.

They used to have a second location that closed, but honestly, it doesn't even matter because this one was always my favorite, the food here is on another level. We always start with the Brussels sprouts, the fried green tomatoes, or the hush puppies. You simply cannot go wrong with any of them. The appetizers are always hot, fresh, and packed with flavor. And then there's the mac and cheese... absolutely to die for. Even the children's mac and cheese is ridiculously good. Creamy, cheesy, comforting, exactly how mac and cheese should be. Their salads deserve their own shoutout too. The goat cheese salad with pickled eggs is perfection, and the Caesar with cornbread croutons? Genius. It's the kind of detail you don't expect but end up craving every time you think about it. But of course, the real star of the entire place is the cornbread. Truly heavenly. They serve it warm, and the whipped butter melts right into it, it's honestly dangerous how good it is. I could eat the entire dish by myself without hesitation. The service is always great, quick, friendly, and welcoming. It's one of those places where the vibes feel just as good as the food tastes. On weekends, it does get packed, so making a reservation is probably a smart idea. All in all, I HIGHLY recommend this restaurant. The food, the atmosphere, the consistency, everything hits. I will always come back whenever I'm in the area, and yes... mostly because the cornbread is truly that good.

Once seated, our server was the only bright spot of the night, he was amazing and clearly doing everything he could. Appetizers came out quickly and were good: the cornbread was delicious and the cauliflower app was solid. Then everything fell apart. We waited over an hour and fifteen minutes for our entrees, even though the restaurant had basically emptied out by then. When the food finally arrived, some dishes were cold and others were dried out from sitting under a heat lamp. For a place charging these prices, this is unacceptable. What made the experience worse was management's complete lack of accountability. The GM never came over to apologize, acknowledge the delay, or offer any form of compensation, nothing, despite us being patient, polite, and spending over $400. At that price point, basic service recovery should not be optional. This was a frustrating and disappointing experience from start to finish. There's clearly a reason reservations were easy to get during the height of the Christmas season. We will not be returning.

What we noticed right from the start is how well the staff works with and for each other to bring guests the best dining experience possible. Maddie was our server. She was kind, professional, patient, and knowledgable about both food and drink on a grand scale. Her recommendations were stellar. I had a refreshing gin and basil martini as well as their beef carpaccio, which was absolutely fantastic. My girlfriend started with their beef stew, which was thick and satisfying. It was so delicious, she almost canceled her entree to have more. She went with the home cooking route and indulged in their meatloaf with green beans and mashed potatoes. Although she loved that as well, half had to come home with her, which made for an excellent lunch the next day. I went with the raw of it all and got their spectacular tuna tartare with asparagus, radish, and rice. Usually, the tuna is cut into strips but this tremendous block of gorgeous fish knocked me out. Absolutely fantastic from presentation to flavor. For dessert, we got their brownie with ice cream and this was all upper level in taste and texture. I would be shocked if their ice cream hadn't been made in-house. We loved our first experience with Apollo and we look forward to our next visit, which is hopefully sooner than later.

We ordered the Caesar salad (phenomenal) The steak tartare, just divine perfection The waitress heard me talking about the sweat breads from the chicken dish (that I wasn't ordering, I'll explain shortly) and said the chef could do them as a side dish, DELICIOUS!!! My husband got the world's largest most delicious pork chop. Now, my meal. I ordered the halibut and recognized that perhaps it wasn't for me, but I ordered it it was my choice I wasn't going to send it back. Our waitress took note that I wasn't eating and told me that simply would not do and hustled to the kitchen to come out with the chicken dish, I was so appreciative of her noticing and accommodating this, truly, amazing service and that chicken was succulent beyond words! We also got 3 of the desserts, the seasonal eggnog bread pudding, the cinnamon raisin bread pudding which was insanely delicious as I personally am not a huge bread pudding fan but if every bread pudding was this? That would be my go to! And of course the butterscotch pudding which better never leave the menu because it is lick your plate delicious!!! I also enjoyed a hot cocktail which on a cold night was heavenly. Their farm-to-table approach means a rotating menu and selection of curated ingredients that make up stunning dishes. From appetizer to dessert (which sadly we didnt have room for) the menu is thoughtful and intentional. Starting with cocktails - the famous Sleigh Bells Ring (featured on the cover of Edible Magazine) was perfection. Not too sweet, warming and tart with the mescal and boozy cranberry sauce- and incredible concoction. The Dark Love Story was equally seductive with a vodka base and aperitif blend with red wine reduction. The thought they put into their menu doesnt just stop at food! We were torn between starters but the Tartare was our pick and an excellent one. The egg was golden, the capers crisp, and the truffle aoili was never overpowering. The housemade crisp chips were a welcome change from the often offered toast bites while still being an elevated dish. The potato crsted cod was served beautifully with a lobster broth poured table-aide and was accompanied by fresh clams, shrimp, and mussels- honestly not a critique to be found. The grilled Chipotle flank steak was cooked to perfection and the hen of the woods mushroom was a showstopper. All in all I struggled to not make a reservation for every night I was in town because it is a must to go back. The decor and staff arw welcoming and as thoughtful as the meals served with mushrooms present all throughout complimenting the Bolete name. 10/10 all around.
