When we politely asked our server for an update, there was no apology or acknowledgment of the delay. We were simply told, "It'll be a few minutes, it's getting plated," in a dismissive manner. Throughout the meal, our server never checked on our table, never asked how the food was, and never returned to see if we needed anything. We ultimately had to flag someone down just to request the check. I understand that restaurants have busy periods and delays happen, even though at the time it was not busy at all. What was disappointing was the complete lack of hospitality, communication, and basic attentiveness that one would expect from a restaurant operating within a five-star Beverly Hills hotel. The service we received was noticeably different from what we observed at surrounding tables. As young guests who were respectfully dressed, polite, and paying customers, we left feeling as though we were not valued or taken seriously. Whether intentional or not, the experience made us feel overlooked and treated as though we were somehow less deserving of the same level of service afforded to others. The food itself was not enough to make up for the experience. Given the prices, reputation, and setting, I expected professionalism and hospitality. For our drinks I had a cucumber gin martini and my partner had the Casanova. Both were delicious! For our appetizer, we ordered the Piri-Piri shrimp. It was 4 pieces of shrimp lined up with small circles of flatbread in between each piece, seated on top of a smoky and flavorful sauce. We both loved it! For our main meal we ordered the couscous "Royale," fresh Papardelle pasta, and roasted carrots. The couscous came with one lamp chop, stewed lamb, merguez, and chicken - with a side of sliced almonds and dried apricot for topping, extra lamb stew sauce, and the most incredible harissa. I absolutely loved this dish, it was so flavorful. The pasta was a solid dish as well, and the roasted carrots were also fantastic. For dessert, we ordered the lava cake and I had Moroccan mint tea. Despite being full, we were still able to get through about half of the Chocolate Olive Oil Cake which was fluffy and soft with a chocolate ganache to pour over the top. I wouldn't have minded if this came with gelato or ice cream, just a tad but it was still a solid dessert. Republique has become a huge tourist spot and you see a lot of international visitors there. Billing 1 star: They charge a 4% surcharge up and above the prices on the menu.
