The food was absolutely delicious but what really made me love this place was the service, specifically from Noi. She is the sweetest lady ever and gave me coupons and a complementary Thai iced tea (also so good)!! Will definitely be coming back to this place over and over again. I have been meaning to try the food at Mink's Pad Thai . I ordered the yellow curry and drunken noodles . The yellow curry was quite good - it had some spice to it and was still hot driving it home to Falls City area. The drunken noodles had a slight kick to it , the noodles were thick and satisfying . I had both dishes with chicken . The order took about 15 minutes during the dinner hour, the lady taking my order was very nice. When I returned to pick up my order she gave me a drink with crushed ice and what was probably green tea and a sweet brown syrup in it, which I didn't expect and was super nice. The restaurant itself has ample room to eat in and a cushioned bench to wait for takeout . I will probably try a dish with rice noodles and a basil dish next so many choices. read more

Enjoyed a couple of meals from here. Tonight's large Shrimp Tom Yum Soup was flavorful. There were four medium size shrimp in it. Ordered chicken version last time but was too tough and dry. Shrimp's definitely the way to go. The Tom Yum has a great tangy flavor; very reminiscent of Lanxang's version BEFORE they changed owners. Glad I found a replacement at Mink's! The Beef Pad Kee Mow was ordered without carrots and bell peppers; they tend to make the dish too sweet. Beef could use tenderization. The rest of the dish tasted great. The Shrimp Pad Thai has a very good flavor. It came with four large shrimp. Pretty good. Perhaps dial back the sweetness. The wings. Ordered the original last time, it was tasty. Being to go, the wings did lose their crispiness once it goes into an enclosed box. Ordered the Garlic Chili version this time and if you like heat, you'll like these. read more

They have moved to 405 Main St., but they are definitely NOT closed. This is the best Thai food we've found in the greater Salem area. The service is good and the food is really good and authentic. We loved the Pad Thai and my go to, red curry, was really good too. It's a nice family owned business and worth the drive through the farmland to get to Monmouth for this Thai gem. On our second visit I had the Khao Soi, a dish I've never seen anywhere else and it was fantastic. My wife loves drunken noodles and she was absolutely pleased with their version. read more

We have been to this restaurant several times since we moved here in September. Have not yet been disappointed. Last night I got the massamam curry with chicken. It's my new favorite. We tried this small Thai restaurant. The food was so good. The best Thai food we have had in Oregon so far. The service was so wonderful. Everything at Minks is 110% nom! My mom and I probably get take-out on average of once a week from here. I'm pretty sure her Crab Rangoon's (aka crab puffs) are homemade, and their tasty factor is so delicious that it has me recently looking at deep fryers online to purchase. The namesake Pad Thai is a truly excellent version of the dish. The Pad Woon Sen is also quite delicious. For heat seekers, this is also a rare place that will actually make it fiery hot if you ask for "thai spicy." Everything we have tried is authentically enjoyable. read more

I was getting late and still a long way from home. I actually turned on the wrong street and saw this place. I ordered pineapple rice with chicken. I ate some of it in the truck since I still had one hours drive home. They delivered it to me outside very quickly. The food was amazing! Absolutely worth a trip to Monmouth! The curry potato puffs with cucumber salad appetizer are light fluffy and the little cucumber salad so sweet! Wish I started going here earlier. I had their crab fried rice, lamb, pad thai, crab puffs. Loved it all and so did our toddler. I appreciated the generous amount of fillings for the crab puffs. I was glad to see the dried mango and the banana and taro chips for sale. I will have to buy some of those next time.
