For years I have purchased bags flour from Central Milling and had them shipped. So when I happened to find myself in Petaluma I was very excited to visit their store. The store was very organized, clean and bright. However, the lady working there was anything but...we were the only ones in the store and I guess I must have interrupted her. Been purchasing organic flour from here for years now, mostly by the 25lb bag. I am an avid bread maker and the latest sourdough batch has been going for 3 plus years. With this, I HAVE to make something once a week. The flour is reasonbly priced, and shipping fairly reasonable so it is worth it. Love the Organic Artisan Bakers Craft one, but sometimes I switch it up and get the organic Beehive malted flour. Have purchased the finer Pizza flour as well as whole wheat. Amazing flour! I drove 2 hours to get 100 lbs of their organic bread flour. They get a weekly delivery from a Utah flour mill of fresh flour. California grocery stores sell horrible flour. We are deprived of quality food including bread flour. Buying in bulk is more competitive in price than store bought. About 25 lbs of flour fits into a food grade 5 gallon bucket. Keep flour in a dark cool place. Makes it last and keep it from going rancid. I wish they sold their flour locally. read more

I promised I would never use the words "hidden gem" to describe any place which I reviewed because "hidden gem" is trite and overused. However, if I were to use "hidden gem", this is the place for which I would use it. Why? A hidden gem is something precious and rare. One will not find such an object (if ever) even with a lot of effort. Well, Keith Giusto Bakery Supply is a place I've only imagined in my dreams for several years. A place where I could find amazing baking supplies all in one location? The paraphernalia of baking: different flours, bowls, proofing baskets, scrapers, timers, bake pans... anything you could dream of... and MORE! (My heart pines for that steel "pizza stone"!) Most importantly, this store has a multitude of organic artisan bakers craft flour. Why is this important? Because this is REAL flour. It is not the stuff that produced on massive scale with the nutrients sucked out of and then re-injected artificially and displayed prominently in your local grocery story - it's real food!! These flours are made from the wheat berry unadulterated and then put in bags in different denominations: fine, medium, coarse - whatever your pleasure. I bought a 5# bag of Stone Ground California Whole Wheat for $7.44 and a 25# bag of Organic Artisan Bakers Craft Flour for $21.21. If you bake, it would be impossible not to see the economy of using the best ingredients for an insignificant extra charge. How lucky could you be to find a place like this? Stephen Yafa writes that you are not necessarily what you eat, but more of what you don't eat. The store has a multitude of books on making bread and all manner of tools for the process. I coveted those proofing baskets at the Shed for $35. How could I possibly buy a damn $3 basket for $35?! Well, I bought two for $22 each at Keith Giusto Baking Supply - I can't wait to bake my next batch of whole wheat! They are beautiful and the perfect size for two one pound loaves. The store is not full of people milling about. It look as in my photo: wide aisles and tastefully stocked shelves with all manner of baking supply. There is a very knowledgeable and helpful lady who will help you select what you want and explain whatever you need to know. Here are the things I learned from her: - You can buy the wheat berries in 50# bags and grind them yourself. (50# is the smallest bag.) - You can buy the more common wheat already ground in 25# bags - but most in #5 bags. - They do not sell fresh starter dough - but who cares? We can make it ourselves right? Right. - They have their wheat ground in Utah and trucked out here, so it's relatively fresh. I liken it to buying range free eggs at farmers market - or going down the hill to the hen house and picking them out from under the hen. - Grinding your own flour takes time, it's noisy and people often have problems with their mills; i.e. break the stones by doing too fine of a grind. - Yes, you can have one or more of the cookies set out on the counter for customers. Keith Giusto Bakery Supply? It's a hidden gem. Pro Tip: Two of my friends went there at 4:45 on Friday and the door was locked - so don't expect to get there on a late Friday afternoon to get your flour. read more

I just spent two days making bread with Peter Reinhart at Keith Guisto's Bakery Supply. What an experience. I've never worked so hard making so many different types of bread and having so much fun. We made pan pizza, ciabatta, mini baguettes, bagels, sprouted wheat bread, bread with cooked barley, focaccia and one other bread. They have an amazing kitchen facility for baking classes. Just spent three fascinating and informative hours at this amazing facility taking "The Art of the Baguette" class with the amiable master baker and winner of the prestigious Coupe du Monde de Boulangerie, Craig Ponsford. The class was paced to produce more than 120 baguettes in a specially designed world class professional baking facility. We worked in teams of 4 under Craig's watchful eye with assistance from German intern and master baker, Pablo. Using highest quality organic flours produced by Central Milling, we were guided through every step of the process with a bonus of being able to take home an armful of baguettes to share with family and friends. There is something here for everyone no matter whether you are an experienced baker or have never made bread in your life. Craig's dynamic energy and passion for his craft is truly inspiring. On top of demonstrating the practical aspects of hands on technique, Craig supplements all the central tenets of his craft with detailed handouts explaining "Baker's Math", a glossary of terms, and formulas with diagrams for making straight dough, sourdough and rustic breads.
