But I am biased because my mom makes some killer carne en su jugo. The queso fundido was tough and rubbery not sure if it was an off one. Not bad and the service was great. On our second day in Guadalajara, the governor decided to put the "red light" on, which meant that all restaurants were closed for dining in. Our hotel concierge recommended that we try carne en su jugo, so he ordered that for us and had it delivered to our room. We also ordered some guacamole and beans as well. The carne en su jugo smelled delicious, but unfortunately the container couldn't hold how hot the soup was and spilled all over the floor and table. It looked like someone threw up! The concierge had someone get it all cleaned up and ordered another bowl and complained to the company for us. This dish also came with salsa, grilled onions, and lime. The meal arrived in literally 15 seconds. We watched from across the street at our hotel a line of customers from the front door to the curb entire Sunday afternoon. My wife was hesitant but I had seen this venue operating on a UTube video and was confident we would be served in a timely manner w/o reservations. Your biggest decision is the size of bowl you want to order and drinks. Food and drinks were very good and reasonable, lightening fast service. One thing struck me off was that an order of guacamole and chips were placed on our table in the same manner as the other accompaniments but it was an extra charge. We were not asked prior. Although this is a chain restaurant that serves a traditional dish Carne en su jugo it did not disappoint. Immediately upon being seated we were offered a starter. Frijoles con elote and quesadillas. We took and recommend both. Delicious! The carne en su jugo was served in a light broth with thinly sliced carne and frijoles, topped with bacon. This is the place to eat when visiting Guadalajara and your near plaza del Sol or the Expo. They use to have the Guinness world record for fastest service. They are a very functional and organized restaurant that has excellent service. They work as a fast efficient team. Parking is valet and worth it as the area is very busy. Next the hostess seats you quickly. Once seated they take your order and right off the bat they offer drink suggestions and guacamole with chips, refried beans with corn (this is their signature bean dish) and quesadillas. Here all the sell is carne en su jugo or "meat in its own juices" . A small is for kids and median maybe for me and a large for guys or big eaters. You prepare with chopped onion, cilantro, lemon and salsa and dip your tortillas in it. They also bring lots of grilled onions that are amazing. They now have sangria, margaritas (were great), beers, and agua fresca. You will literally be eating in less than 5 minutes!!! No joke!! They also have now since December 2016 "cecina" or dried meat with chile and lime juice as an appetizer. They have a play area for kids and a mechanical ride. There are also desserts you can try. We did not know what to expect when we tried Karne Garibaldi, but the reviews were pretty good. The menu is pretty restricted. They have carne en su jugo (meat in its juice), quesadillas, and Mexican-style beef jerky. The carne en su jugo is delicious. It comes in three sizes. The medium is very close to the large. The jerky is the best I have ever eaten in Mexico. We had a house in Mexico for 15 years, so I have eaten a variety of jerkies, and this is the best. The quesadillas are rather small, but good. You can add your choice of chorizo, jerky, or beef if you like a combo quesadilla. They have a variety of beers, plus the usual soft drinks. Karne Garibaldi apparently holds a record as the fastest fast food in Mexico. They have earned it. The service is good, and the food arrives within a couple of minutes of ordering. That is the benefit of a limited menu. They can have a good quantity of food ready to go. We ate there twice and enjoyed both meals. read more

Although they have expanded their menu, you really are just here for the carne en su jugo, which comes in a variety of sizes. (Just order the grande. Trust me, you'll eat all of it, or near enough.) As I was getting oriented with the menu, the waiter was obviously itching to take my order. True to the legend, our two orders of carne en su jugo came out almost immediately. It is accompanied by ludicrously good beans, made with kernels of corn and shameful amounts of manteca (lard). Also on the table are charred onions. Despite the distractingly awesome beans, the carne en su jugo is still the star. The lime forward broth is addicting, and I ate far more than I should have. First ate at one of these restaurants in León and have enjoyed each visit. I had not been back in Guadalajara in a few months, but make it a point to come here for lunch. Have the spicy version which isn't spicy at all but has a better taste to it. Order some quesadillas to go along and don't forget the corn refried beans. They are addicting. They have 3 sizes, small , medium and large. If you get filled up quickly by liquids i would recommend just going for the medium. This place always seems to satisfy. I have a restaurateur friend who says that the secret to happy customers is to get food into their mouth as soon as possible. Back to Karne Garibaldi, these guys know how to handle HUGE volumes of customers and even set a world record for service, Guinness Book I think. You might have to wait a few minutes to get a table because it is always busy, but the waiter comes up with chips and beans and you know that everything is going to be alright. I think it takes me longer to decide between a large bowl and a medium sized bowl than it does for them to go into the kitchen and bring out by bowl of carne en su jugo. They also do their beans with some little pieces of corn that I love. They actually sell cans of beans in the restaurant, and I am pretty sure I have seen them around town in supermarkets like WalMart. This is not a life changing restaurant experience, but more of a way of life. They are open when a lot of other places are not. They are fast, it is always clean and it has always been consistent in my book. On a side note. Have caution with the valet. Never leave anything of value in the car. A friend had an iPod stolen by the valet at this location. They found the iPod on the kid and made the mistake of calling the cops rather than getting their iPod back. If you think the cops and the justice system are going to make your life any better you are sorely mistaken. After filing a police report the iPod was taken into evidence and then came the court dates, the pissed off kids parents and more headaches. Don't be stupid. Don't leave your iPod in the car. read more

Arrived hungry, did not want to valet park since we had luggage in the car, so they allow you to park yourself! Upon entering, staff follows you with plates: guacamole, beans, chips and beef jerky. We kept the first three, but the guac was not that fresh, so I would skip it. The menu is limited so we ordered a large carne de jugo to share and a jug of lemonade. We also ordered a flan de elote.
