This place is like twenty-seven stars, it is literally "Woohoo! As good as it gets!". We spent three days in Guadalajara, and I think it is safe to say this was the highlight. Modern mexican cuisine with interesting and complex favors, low prices, lots of Mexican microbrews, and friendly and unpretentious service. The overall appearance is of a high-end cafe -- white walls, plants everywhere, mosaic-encrusted skateboards as art on the walls, indirect lighting, and a blurred line between indoors and outdoors. It's like something out of Apartment Therapy (except it's a restaurant). It starts with what is perhaps the best part, which is the selection of salsas. There were three: a red roasted-chile salsa with a strong smoked flavor, a straight-ahead green serrano that was not very spicy, and an apple-based one that transitions from sweet into a slow burn of heat. The roasted and apple ones were particularly spectacular, and I kept spooning them onto everything that arrived. We ordered pork tacos to start, which were rolled up and fried. The meat was high quality and had a wine-like flavor, a bit like a pork version of coq au vin. My wife ordered flautas and I ordered a burro. The flautas in particular had excellent presentation, covered in shredded vegetables and drizzled crema. Both were very delicious. If you want to learn about what is brewing around Mexico, Pachuco has put together a menu of a lot of good beers. We tried the Loba Sport witbier, which was really excellent, and the Lupulosa IPA was also top-quality. The only miss on the beers was the Tristan Blonde Ale, which was not terrible but had a bit of a cloying off-flavor. We took the recommendation of the owner, Guillermo, for dessert and ordered his coconut gelatin. It really needs a better name, because "gelatin de coco" reminds me of a midwestern jello with bits of fruit in it, and it's nothing like that -- instead, think more like a coconut flan, a rich creamy roasted coconut flavor, with bits of actual roasted coconut on top and some berry jam at the bottom. It was good. We also ordered ice creams: basil-pear, roasted marshmallow, and beer-ferrero. The first two were real standouts. The third was fine but the flavors didn't come together as much for me. We also ordered an digestif, agave and coconut cream liquor; it was quite tasty and likeable; if it had any flaw it was that it resembled Baileys Irish Cream too much. But, if you like Bailey's (I do), that's also something of a positive quality. Coming from Oakland, California, what was really a standout here was the service and the overall low-key atmosphere. It was a Monday, and only three or four tables were filled. The waitress was extremely patient -- not in a rush, happy to explain things to us slowly so we could understand with our mediocre Spanish. Guillermo packed up some of the roasted-chile salsa for us, and talked to us for a bit about how he started the restaurant. The restaurant has been open a little over a year, and you get the sense that they are still excited to be open and making food that is based on the flavors of Jalisco, but not really traditional Mexican. We might (maybe) be able to find food this good in Oakland, but never with such courteous and unpretentious service. read more

I can't say enough good stuff about Pachuco, it is not traditional Mexican food, more of Mexican Fusion. I'm so glad I stumble into this place just by pure luck. To start off, they will serve you chip and three types of salsa: Smoky red salsa, green salsa and the best salsa I ever had, apple based salsa that is sweet on the first bite and slowly burns. Sopa de tortilla Panchuco: Tomato and chili pasilla soup, corn tortilla, chicharron, queso panels, avocado and queso fresco. Super yummy Quecas fritas de queso Oaxaca :Three corn masa quesadillas stuffed with queso Oaxaca. Topped with lettuce, tomato, avocado puree, queso fresco, Mexican creme, and pickled red onion. It is delicious and I loved the grandma's mole receipt. They are sooo good! I also loved that they serve craft beers, I wish I had try them all, but I had to walk home, =) Put this on your list to eat when you are in Guadalajara. read more

Loved this spot. Perfect for a Friday night excursion. It was our first time in Guadalajara and we felt right at home. I went to vacation in Guadalajara and I tried this place. I was so impressed with the presentation of the dishes and the food was delicious. This is one place I do recommend if you're in that area. Plus the atmosphere feels that of some of the restaurants that I used to frequent when I lived in Austin. read more

Come for the mezcal/raicilla/sotol... you'll stay for the food. Dragged mi esposa here last year because I heard they had sotol. But we ended up fans of the selection of artisanal Mexican liquors (well, Susan maybe not so much) AND the surprisingly adventurous and delicious food. This was my 5th time back, and now Pachuco is as much of a must-do as Alcalde and Bruna (completely different price points and style) when I come to Guadalajara. Unfortunately our experience was nowhere near what other posters had so we were very disappointed by this place. First when we got there it was completely empty, not a good sign. Looked over the menu and ordered Agua de Lima y Mandarina, two flavors we love but this had no flavor at all. Ordered the Tostada de Pulpo, Huarache de Atun Al Pastor and the Tostadas de Cueritos to start with... Never got the Toastada de Pulpo, waitress gave me a Tostada de Atun, which I did not order and tried to get me to take it which I didn't after she told me they were out of Pulpo (and she could not communicate this), The tuna was only ok, nothing to do with Al Pastor; the tostadas de Cueritos she said was a small one so we were surprised there were 4. For dinner we had the Sopes de Carnitas de Pato for two of us: Sopes were not fresh made so they were not hot and were hard, these need to be a la minute or the texture suffers, it idid, plus the Carnitas were dry so we used up all of the table salsas to make up for it, our other person ordered the Torta Ahogada de Lechon, which is not Lechon (sucking pig, this was just pig and we inquired about this specific item but the waitress misrepresented the dish, also the Ahogada sauce was more akin to Campbell's Tomato Sauce, no depth at all. We finally understood why we were the only table in the place, then they began having family meal (feeding the employees) after service started which is unheard of; waitress was bad, no training at all, reaching across the table, etc. Gave me a bill with the Tuna Tostada added even though I returned the not ordered item, had to correct. Also, since I didn't have any change she got more tip then we wanted to leave, poor service and food that missed the mark shouldn't get a decent tip. Hope the management will pay attention and fix their issues since there is no excuse for their errors in a city filled with options. read more
