Darci has exceptional cake making skills and customer service. The review from Pam M. is misleading. Her daughter asked for 3-4pm pick up, Darci stayed an hour later and they didn't show up for their cake. Then they were mad that Darci doesn't live at the bakery and she had to go pick up her child and take care of her family ... and you know eat something. Pam and her daughter completely disregarded the contract which states that if you're late, there is no guarantee Darci will be there for you to pick up. In the end, Darci ended up meeting them and didn't charge anything for her to come back to Canmore from out of town. Pam also voices disappointment about the cake being small.. well her daughter should have ordered a bigger cake if they wanted it bigger. Transparency about sizes is presented on day ONE. Don't let Pam's false review sway you from ordering from Darci... unless you don't plan on showing up on time to pick up your cake and blaming it on Darci. read more

The baker describes herself on Instagram as an "extremely moody baker." In hindsight, that should have been a warning sign. We had a very disappointing experience with her two weeks ago. Communication is handled exclusively through email, which became a significant issue when time sensitive matters arose. She maintains very limited hours and is not open to the public, making it difficult to resolve concerns quickly. Unfortunately, the cake itself was also disappointing. During the bride and groom's cake cutting, the top tier slid off and landed in a candle. Beyond the presentation issue, we did not find the cake enjoyable to eat. I also feel that the reviews displayed on her social media pages do not provide a complete picture. Numerous one star reviews can be found on her Instagram page under a highlight labeled "1 Star," where negative reviews are showcased. Rather than addressing customer concerns professionally, she publicly mocks and criticizes customers who leave unfavorable feedback. What happened after I posted my review was the most troubling part of the experience. Instead of responding professionally, she used foul language, called me stupidand stated, "I hope your daughter's wedding was ruined." Darci made a lavender earl grey with white chocolate ganache for our wedding and seriously, the cake is just perfection! You can taste all the layers of flavors without one being too overpowering.She definitely kept the delicate flavors so well balanced. All of our guest were raving on about how good our vanilla cake was with the vanilla bean and bourbon buttercream frosting! Darci was excellent to work with, even took an order later on for salted caramels chews and THE BEST salted caramel rice krispie squares of all times, to use as our wedding favours!! I am at a loss for words at how unprofessional this business is. After deciding we wanted to use Darci for our wedding desserts, we made a special trip out to Canmore for a cake tasting with her. We loved it. We loved the options she provided and asked tons of questions about options. We made our decisions and I was extremely excited. I have been showing all our friends and family pictures of the beautiful desserts we ordered. It was a fun experience. Fast forward to right now. I'm literally in tears after she fired us and returned our deposit. The night of the tasting we bought a sample pack and took it home with us. My fiance thought the cupcakes were a bit crumbly and stuck to the paper, so last night he emailed her about it. He simply asked if that was common and if there was anything that could be done to keep them more intact on our wedding. I assume it was because they were put in and out of the fridge after we brought them home and took them to an event the next night. Darci's reply was that she was cancelling our order and refunding our deposit. My fiance phoned her to discuss and ask her to reconsider, but she said she had already refunded our money and she talked about how were asking too much of our colour choices. I don't understand, as we ordered from a photo and were thrilled with all choices and discussions. Unreliable and unprofessional. I used this vendor for our wedding cake. It was perhaps because they are understaffed or with just one person but regardless of the reasons I feel that there could be improvements on their services. First of all they are not the most responsive. For the most part that wasn't a problem since I started my planning very early. Additionally, they were not very organized. I say this because, they called me two weeks before the wedding to let me know that the flavors of the cake had not been chosen. Although I was at fault as well, the person on the phone was quite rude and requested that I responded within the hour and she said that she did not have time to explain how the flavors worked. The last part that I was very disappointed about is that we had requested some floral decoration on the cake. It was a destination wedding so we had limited amount of time and we went out of our way to purchase flowers and drop them off (as we had discussed), however, when we got the cake, there was no flower, so really unsure what happened to that and we simply got a plain white two tier cake.
