'Just Rum' Just a Coaster

So fun, so friendly, so Rum. Great small locally owned distillery. Great rums, we did a tasting of a 5-rum sampler with 2-specials*: Simple White: nice, strait forward, great for mixing (this is the base for all other rums) Uncle John's Cut*: the Simple White at a 122 proof, beautifully warm & smooth. Oregon Oak Rested: oh my this was a refreshing sipping rum. Maple Wood Rested: sweet w/o Bering sweet b/c they don't add any sugar, just rely on the spices. Maple Wood Rested 3yr*: an even better version of the above. Seasonal Spice: like a spice rum, but again w/o the heavy sweetness that spiced rums have due to added sugars. Blackberry Rum: a live light flavored rum. (with 2-sides of lemonade to cleanse, which also tasted good w/ the blackberry rum) For food we had two orders of the steamed dumplings (only $5/ea) served with a chili and a soy sauce for dipping. Definitely recommend, esp if you enjoy rum.

The tasting flight was delicious, I could drink 5 of the hot buttered rums. Nice dining area, and the workers were very friendly!

They have amazing food, great staff, great selection of Rums too. We had lunch and the hot butter Rum sample plate. Sorry took picture after some sips. Also bought the bottle of Rum that was in a wine barrel for two years.

I regret not getting my server's name as she was not only very sweet but super knowledgeable about the rums I tried. She not only gave me background on the business itself but explained each rum's nuances. She explained that the oak and maple rums were infused with charred staves of whiskey barrels and not actually aged within the barrels. She talked about using cane sugar instead of molasses as well as using yeast from Barbados. It sounds like the tasting room has only been open a short time so I look forward to coming back again to see what has changed. A great experience.

I waddled in skeptical. After all, we beavers know a thing or two about craftsmanship: sharp teeth, strong wood, steady paws. But the moment those folks poured me a sample of their American Single Malt, I realized I was in the presence of fellow artisans--humans who build with barley the way I build with birch. The aroma? Like sniffing a warm cedar log at sunset, with a hint of orchard fruit drifting downstream. The taste? Smooth as a freshly planed maple branch, with a delicious grain character that made me contemplate abandoning dam construction to pursue professional sipping full-time. The finish? Long, warm, and rich--lingering like the satisfaction of placing the final stick on a perfectly engineered lodge roof. And don't get me started on the place itself. The distillery is polished, welcoming, and smells pleasantly of oak instead of predators. The staff? Delightful! Not one of them tried to trap me, and they spoke about their whiskey with the passion of creatures who truly love their craft. Westward, my whiskered friends, you have built something remarkable. The young lady who served me up a flight was amazing with her knowledge, which I really appreciated it. Bottoms up! Mark Twain once said too much of anything is bad, but too much of whiskey is barely enough. You'll enjoy getting after it tasting at Westwood whiskey!
