We also got the carne asada plate to share which was fine. The main part of the meal was this appetizer that I ordered, Chiles Gueritos con Camaron wrapped in bacon. This was insane, as I have never seen it before. It was good. It's shrimp and cheese stuffed into chiles, wrapped in bacon, and served over rice. The sauce they provided was also insane, which tasted like diluted A1 sauce, but worked really well with everything.

I wish I could convey the amazing aroma of it all ... deliciousness!! The Kuma Catering cart held my attention, and I opted for a super tasty and unusual grilled cheese. Full disclosure... I ordered two actually. I couldn't make up my mind which to get and figured this way I could have half of two and save the other two halves for dinner or lunch tomorrow. My two halves were: 1. Bacon, honey crisp apple, caramelized onions, sharp cheddar, all grilled to absolute tasty perfection on rustic sourdough; 2. Lamb fennel sausage, peppers and onions, mozzarella, basil, also cooked to deliciousness in rustic sourdough. A giant shout out to Jeshua "Kuma" Garza, for his creative mastery on making what could otherwise be a basic grilled cheese into a gastronomic delight. Bravo!

The initial planning and communication with the company were smooth and highly responsive, which gave us great peace of mind leading up to the big day. However, the event day execution didn't quite match those high expectations. The cart itself looked very different from the polished photos on the website, appearing a bit more pieced-together and rustic than expected. On the day of, the barista was late due to traffic, which he did communicate, but he seemed a bit overwhelmed and unhappy to be there. He also didn't seem fully briefed on our pre-arranged details, like our decaf request and the extra hour of service we had paid for. There were also a few professional oversights: his long hair was not tied back for food service (something several guests noticed), and when a small spill occurred while making our drinks, I had to find a napkin for him because his station apparently wasn't fully equipped with cleaning supplies. While our guests were kind and excited, a more cheerful and social demeanor would have better suited the festive wedding environment. The coffee and planning were wonderful, but the day-of presentation and staffing definitely need more attention to detail.
