Best sushi I have ever had. I don't have the most experience with authentic sushi, which made me slightly nervous, but I loved every moment of this. They checked several times for allergies or preferences. They asked me twice if I'm sure I want uni... hell yeah, I do. Servers/somms were attentive and friendly. Watching the executive chef set up the first few courses was very cool. The sushi chef on my side of the table was a very cool guy with a lot of experience and super knowledgeable! He explained the taste of each bite and its seasonality. I liked some bites better than others, but each one was delicious. Uni, caviar, needlefish, scallop, shrimp, wagyu. Some chilled, some torched. There was a chef assigned to rice who brought out fresh rice every 3 bites. Egg custard (tamago?) and a fruity dessert rounded out the meal and I left very happy! I tried to pace myself, but could barely finish my meal and wasn't hungry until the next afternoon For my pre-dinner drink, I had the Wasabi, which I highly recommend. I did the standard sake pairing with my meal. I also don't have much experience with sake, but each one was amazing and paired well with the dishes. The view was for sure amazing, but my eyes were mostly on the chefs making my meal and my dinner companions. It made for a beautiful backdrop to the cozy inside. Let this be a warning and any sushi lover!! Once you eat here you'll never be able to eat at your local sushi place. This 19 course meal was culinary masterpiece. The restaurant is located on the top floor of Fontainebleau with very limited seating. $400 a person and worth every penny! I love that you're forced to try fish and items you probably would never try on your own. The chef tells you origins of every fish and he prepares and serves to you. Waiters were very helpful and attentive. On a side note, my wife and I sat next to Gardner Minshew and his girlfriend. And I like to think because we were such good company he was able to pull of the victory on Sunday vs the Browns. :) This place is definitely a fun date night experience if your wallet can handle it. read more

If you love sushi and are open to omakase this is one place you have to experience. I have gone to probably thousands of sushi restaurants and I think this place might at the top of my list. I had a reservation with ITO that they abruptly canceled the same day without properly notifying me. I had already entered my credit card info and even responded to their message asking about allergies--yet they claimed I didn't "confirm" the reservation through a separate email link. First of all, I never saw that email--it likely went to spam--and my text messages weren't working because of my eSIM setup. So how was I supposed to confirm if they only gave one way to do it? Why take my credit card and ask about allergies if you're going to cancel without warning? Instead of reaching out again or simply charging a no-show fee like they stated in their cancellation policy, they just canceled the booking entirely on my behalf. It felt careless and dismissive for a restaurant that claims to offer a premium experience. Honestly, very disappointed. read more

WORTH. EVERY. PENNY. I arrived at the Fontainebleau and asked one of the employees for directions to the restaurant which she insisted on walking me to. This is really nice. The lobby and the private lounge are very beautiful. Everyone here is so welcoming, from the professional server to the skilled and engaging chefs. I came by myself, but I never once felt alone or awkward dining here. The atmosphere is inviting, and the staff creates a comfortable and enjoyable experience. The fish is incredibly fresh, practically melting in your mouth with every bite. The way they thoughtfully pair flavors and ingredients together is exceptional, creating a harmonious and delightful dining experience. The only complain I have is I wish they serve sake in traditional way instead of wine glass and get another torch so they don't have to wait for each other. I am so glad that I can find a reservation during my short trip. The GM explained that their menu changed with the seasons, depending on the freshest fish available at that time. I'm already looking forward to returning and discovering what they'll create next season. read more

It was okay. I think there were 17 courses? Two of the fish tasted old. We've been to countless amounts of Michelin star omakases and know what to expect. For a fairly new upscale sushi restaurant we expected better. The head chef just helped with prep and left shortly after. Nothing was prepared on the spot like most omakases we've been to. They usually take the sushi out and slice it in front of you but at Ito they were already cut, lying on a plate. The remaining sushi chefs and staff were friendly but the food was lacking. We didn't mind spending $400 a person ( just for the food, tax and tip not included ) but the food at Ito was not worth that value. read more

One of the best meals of my lifetime. Starting off in the whiskey library is super fun, although there wasn't much room or space to sit so I stood. The whiskey list was impressive. Once you get let into the dining room you first notice the view which is impressive. Service is impeccable and they are constantly asking if there is anything they can do to make your experience perfect. The sushi was all melt in your mouth and exceptional. I still dream of the miso! I really wanted like ITO but it was ultimately a hugely disappointing experience. The most important thing to realize is you are paying for the experience - if you want to be able to say you ate here and had the VIP experience then this is a place for you. But everything is just slightly off. I don't understand why you would put this place on the top floor and then choose the worst possible view (north facing, over downtown and not over the strip). They take a lot of pride in their rice, but it frankly is a weakness. It doesn't have the subtle flavors or rice you find at the best omakase places. It's too salty and sort of ruins the flavor of a lot of dishes. Their signature sushi bowl was overwhelmed by soy and totally lost the flavors the uni. Their waygu with black truffles also somehow managed to disappoint. The truffles were extremely mild in flavor and the dish was once again overpowered by salt. We wanted this to be a new go to place. But we weee honestly just waiting until the end for it to be over and not be rude. There's better omakase in Vegas. If you want "say" you experienced ITO, spend your money. If you want great omakase, go elsewhere. read more

Went here with three other friends on a weekend-all of Vegas locals. We reserved a couple weeks in advance as recommended, although we had a couple of open seats next to us at the bar. For people who haven't been, it's basically a long sushi bar at the top floor of the foutainbleu hotel. The backdrop of the bar is a massive window overlooking a part of the city. The things we appreciated: Food was really good-19 small courses that really filled each of us up. Our chef was really engaging and talented. The view is very similar to what you will have at the legacy club at Circa. The things we were not that crazy about: Their signature cocktails were pretty disappointing. I tried two, and the one that was recommended tasted like it had a dead fish in it. The whole time we were there, it felt like wait staff was hovering over us, and to some extent rushing us. It was not a relaxed experience. We were lead to believe that after the meal, we would be able to relax in the rooftop cocktail lounge and perhaps have some normal drinks, so we didn't mind being rushed a bit. However when the time came, they let us know that there was a private event and we could not stay, although the place was empty. Now this is understandable, as there may have been something planned for later, but what we thought was odd was that after spending $700 per person on dinner/drinks/gratuity, it felt like a group of staff was almost muscling us out to the elevators. None of us were intoxicated or rowdy, and I think everyone was dressed ok. Although the food was good, I don't see the place surviving without some changes. At the price point, so many exceptional and better options in Vegas. read more

Main complaint was that I could not understand what the chef was saying so dis not know exactly what I was eating and there was no menu describing the dishes. Sake pairing was excellent. My partner & I had high expectations. They were all met for the most part. The host was very nice and friendly. The bartender was a hoot! Big personality and fun guy, I think his name was Bryan. We'd return again for him alone. The dinner was in a secret room behind the bar and it was so cool to see and be there. We were in awe over the carefully prepared sushi. Service was perfection. The only critique we had and couldn't stop telling one another was that the gentleman serving us kept coughing and did not cover his mouth all night while serving us and it was distracting and slightly unappetizing. He barely spoke to us and it seemed as if we were more of a bother to him than anything so we kept to ourselves though we wanted to ask about some of the dishes. We felt as is it's a steep price for dinner to feel as bother to the person serving us sushi not be as pleasant. In all honesty we kind of wish we were seated on the other side of the table. Visited here on a Friday first service seating. Very well executed kaiseki/omakase experience. Pretty amazing sake list if you want to indulge. Views and intimacy were also amazing. Although initially hesitant, Ito LV met my expectations of good omakase. IMO certainly in the realm of at least one Michelin star. I've flown around the world just to eat; although I won't be flying to LV just to eat at Ito, I will be dining there anytime I make it to LV. If you're in LV and looking for an omakase experience, just do it. read more

Loved the intimate environment here, with just 12 seats overlooking the lights of the Vegas strip. The 18-courses were absolutely amazing--flavorful, visually appetizing, with the perfect combination of textures and aromas. The food was made all the more special by the explanations about the sourcing the raw materials and elegant, minimalist presentation. The care and precision that went into each bite was top-notch. The service was superb, where the staff clearly were paying extremely close attention to the diners' needs and reactions but were completely unobtrusive. Such a great experience and a lovely meal. Was extremely lucky to grab a seat after one person out of a party of 8 could not make it. There are only 12 seats just happened to check day before and there it was a seat for one. This dinner was so good I was blown away. Only other place I indulge in Sushi is in Hawaii. Yes extremely expensive but well worth it. This place deserves a Michelin Star!!! read more
