My second visit was every bit as memorable as the first, if not even better. A huge thank you again to Faith and the entire team for creating such an incredible experience for my cousin and me. From the moment we arrived, the hospitality made us feel welcomed and taken care of. Each course seemed to outdo the last, building excitement throughout the meal and showcasing an impressive level of creativity, balance, and attention to detail. Watching the chefs work in front of us was truly part of the experience. Seeing the precision, focus, and artistry behind every dish made the evening feel special from start to finish. What really stands out is how authentic and thoughtful this omakase experience feels. I only wish there were more true omakase concepts like this in Las Vegas. It's rare to find a place that delivers not just exceptional food, but also such a memorable atmosphere and genuine hospitality. Already looking forward to coming back again. read more

We loved our experience at Ito. I enjoyed the private cocktail/speakeasy experience prior to the reservation. They personalize your chopsticks which I felt was a good touch and not as flashy or distracting as others places. The views of course are outstanding and I felt the quality of every dish was excellent. I particularly liked that the courses were nigiri focused. They paid particular attention to changes in temperature and texture and made each bite unique. I would go back for this. The cost was certainly high but comparable to others of similar quality in vegas. My husband did the sake pairing which was also excellent. The only dish that fell flat for me was the maguro, I felt the fish itself was lost with the combination of flavors. The service was outstanding read more

Rinse and repeat, over and over again... This place is awesome. Fish flown in daily from Japan. The chefs really know how to prepare omakase and tell the story about it. The views are solid and the sake pairs nicely with the nigiri. Access to the poodle room is available afterwards.... read more

ITO continues to impress as an elite omakase experience and keeps getting better every time. Service is impeccable and warm. Cuisine and presentation are off-the-charts spectacular. Ambience and view are tough to beat - even in Las Vegas. It's on the expensive side and worth every cent and more. We look forward to our 4th visit! read more

Wowwwwww. Where do I even begin?! Let's start with their Japanese whiskey bar, which you get to experience 30 minutes before your reservation. Bartender Brian--dressed in full Japanese garb--whipped up an incredible old fashioned for my husband while I enjoyed a perfect glass of wine. Walking into dinner, the view is the first thing that hits you, and it only gets better from there. From start to finish, everything was flawless. The service was truly 10/10. Even the music playlist caught me off guard in the best way--I actually asked a server who curates it because the vibe was that good. If you're not a fan of uni (like me!), they ask at the start so they can adjust your menu accordingly and replace your courses where it's usually served. Such a thoughtful touch. Overall, an exceptional dining experience. Highly, highly recommend. read more

THE ultimate omakase experience!!! I was invited to ITO at the Fontainebleau by one of the most genuinely nice person on this planet, and it turned out to be one of the most extraordinary and transcendent dining experiences of my life. Everything about this place feels intentional and elevated, from the discreet, speakeasy-style entrance to the stunning views that make the entire evening feel intimate and cinematic. The omakase itself is a 20-course journey crafted with absolute precision. Every ingredient is premium, every bite measured, and every dish presented with an almost meditative attention to detail. The chefs here are true masters--focused, calm, and completely in command of their craft. The uni was the best I've ever had: sweet, creamy, ocean-bright, and perfectly balanced. And the seared toro? Out of this world--melting, rich, and unforgettable. Course after course, the experience just builds, each bite more astonishing than the last. Even the cocktails expertly mixed by Danny were amazing, original and provided yet another dimension to the journey. ITO isn't just a meal; it's a moment. A rare, almost spiritual celebration of Japanese cuisine executed at the highest level. This experience will stay with me for a very long time... Pro tip - the best view is actually from the bathroom... that will sound weird, but don't forget your phone :-) I wish i didn't... read more

I had a very nice time at Ito last weekend. The restaurant is at the top of the Fontainebleau with an amazing view right in front of the sushi bar as you eat. The fish was very fresh and there was a variety to the fish with kinds you don't usually get to eat. I would say however this portion of the meal was mainly fish, rice, and a soy sauce type glaze. There wasn't much variety of sauces or toppings as some other places. Along with the nigiri portion of the omekase, there were various other dishes to sample. They were open to accommodate our preference for no shellfish. They have a nice variety of cocktails and drinks to choose from. I would say this is probably the best sushi meal (and most expensive) I have had, even better than Sushi Zo in LA which apparently coincidentally has some cross pollination with the chefs or people behind Ito as well... Amazing meal. Will be back! read more

I was able to attain a reservation through a host and didn't know how hidden this place literally is. There's no visible sign and you seem to need a staff to assist; in order to access this place. This place screams exclusive and it is supposed to be. It is hidden inside puddle lounge which is an exclusive member only lounge. Service was amazing. The 19th course food all tasted amazing. They sourced their ingredients from all part of Japan and meibutsu 名物 from different prefectures. Wasabi from Shizuoka for example. Definitely worth the experience and price tag. I really enjoyed the dessert also. Water and champagne were filled very quickly. The attention to detail was also like the experiences I had in Japan. I've fine dine experiences in all parts of Japan and Ginza in particular. This definitely hits the spot. read more

So this review has been long in the making. I have been Ito a few times over the course of the last 1.5 years. Before I even dive into it, this is definitely a splurge meal and while the food is the highlight this also knocks on the door of providing a premium experience from top to bottom for the price point. There are a handful of noteworthy "omakases" that exist in the valley and they all drive their own version of what this traditional experience is supposed to be. This is definitely catered for the masses and brings the old school style of omakase and meets modern expectations. The experience starts with the exclusive elevator which brings you up to the top floor of the Fontainebleau. When you reach the top floor, you are ushered into a separate staging lounge (open about 30- 45 minutes before your reservation slot so come prepared!) which is intimate and cozy. They have a bar filled with an excellent bartender and it creates this sense of exclusivity and makes you feel like you are dripping in swagger as you drink a few cocktails. When the reservation slot hits, they start to file you into the main dining room. This alone is a pretty great experience. It's modern wood tones that has just awesome views of the Vegas valley. Truly feels like you are dining at the top of the world. The Chefs all work their magic behind the bar and are all friendly to the patrons. The servers are all cheery and efficient. The joint provides a large selection of adult beverages but if you are splurging (which you might be) the premium adult beverage pairing really does hit the spot and is curated well to allow you to enjoy the symphony of dishes that are about to follow. The joint starts with a series's of starters and they jump quickly into the various nigiri's. The rice is quality and the cuts of fish are fresh (as you would expect for the price point). Good artistic variations for all the cuts. The on thing is the Chirashi really is amazing as everyone comments. Rich and full of umami. Was confused why it came in the earlier to mid stages of the coursing but still a fantastic dish. There is literally nothing flawed about what they are doing here at ITO. It is a premium experience that makes you feel like you are on top of the world (literally and metaphorically). Will continue to hit this place up for splurge meals. Great addition to the strip. read more

I am ruined. I love sushi! Now ITO is what I compare other sushi restaurants to. I've been to many of the top rated Sushi restaurants in the US. Sadly, none compare to ITO. The service is stellar! Nancy and MJ are as great as they come! I left there amazed and here almost a week later, still can't stop thinking about how fresh and flavorful all 19 courses of our wonderful dining experience was! The chefs are highly skilled and their presentation was also flawless. I CANNOT WAIT TO GO BACK!!!! I must add that the Wasabi cocktail is a must try! read more

"Everything is so fresh..." A wonderful Americanized omakase sushi experience made even better by its exclusivity and view. I've had dozens of Michelin starred and ichigensan okotowari (invite only) omakase sushi experiences in Japan. I can say with certainty, with rare exception, we do things differently in the States. Japan's top sushi eateries rarely take fresh caught fish, cut it up and serve it. The way seafood is treated ie aged, smoked, sandwiched in konbu, scalded then cut and seasoned and paired with seasonally available ingredients are done with purpose. Even the progression the nigiri are served is deliberate so flavors build on each other. Here in the States it's authentic because all the ingredients come from Japan and it's special because it's expensive and "everything is so fresh". Hey, who doesn't love to eat authentic, luxe, freshness? A series of composed starters are followed by a progression of nigiri. 19 total dishes in all. Seafood is fresh, well sliced, well seasoned with some seasonal representation. Quality rice cooked and seasoned well. Signature dishes do impress. The chirashi of uni, ikura, and ossetra caviar is very good. Using a classic caviar adds a punch of salinity and creamy, yolky goodness that ties the uni to the ikura. The elevated version of adding soy sauce raw egg yolk to your basic uni / ikura bowl. A seared A5 wagyu nigiri is a great one biter. Torched to release sweet melting fat, it is then topped with a heaping of finely shaved truffle. A great way to bring ot the best of both A5 and truffle! Good selection of unique cocktails, sake and whiskey that work with the food. $400pp non inclusive. 12 seats with two seating per evening. Choose the later seating during the Summer months to enjoy the lights of the city. Flawless service. The experience falls just shy of the more relaxed but more gluttonous $500 omakase experience at Kame Omakase. Regardless, "everything was so fresh". read more

Ito Sushi at Fontainebleau Las Vegas is a jaw-dropping omakase experience, easily one of the best sushi spots in Vegas, if not the whole damn desert. The fish? Pristine. The rice? Perfectly seasoned. The technique? Immaculate. Every course is a little love letter from the chef to your taste buds. But full disclosure: it's stiff. Not your vibe if you're looking for playful banter and loud like myself... Chefs tend to ANNOY by my BIG personality... Well, I'm in Vegas... You expect me to behave???? This is why to go to Vegas in the first place! To celebrating my bestie's birthday and finished my 3L... I'll wash my mouth with soap and wear duct tape next time, HA! This is sushi with its pinky up, refined, formal, and flawless. Pro tip: Before diving into Ito, make a detour to the Tangier Whiskey Bar right downstairs. It's the prelude you didn't know you needed. Then upstairs to Bar Ito, Bartender Danny is a gem; exquisite pours, WARM hospitality, and the kind of conversation that makes you forget you're in a mega-resort. Oh, and if you're lucky enough to get a sneak peek into the Poodle Room? Do it. Velvet, glam, and all the mid-century cool. A little secret moment in Vegas that feels like you're in on something special. read more

Very special and intimate dining experience. Everything is very well thought out from the ambiance, design, cutlery, and menu. Food was incredibly fresh, and staff were very personable. I was impressed. The setting is the best of any sushi restaurant in Las Vegas. The food is as good as any in LV. For this kind of experience, I of course expect a high price. The omakase experience at Ito was exceptional from beginning to end. Every course was beautifully presented, incredibly fresh, and thoughtfully prepared with attention to detail. You can really appreciate the craftsmanship behind each bite, and the progression of the meal felt perfectly curated. What made the experience even better was the atmosphere and service. The staff was attentive, knowledgeable, and made the entire evening feel special without being overwhelming. The route to the restaurant was not very accommodating to my 18 year old since the waiting area was a a lounge and the staff wanted to card her when we were not even there to drink. They kinda forced us to wait in the lounge/bar even if you were not drinking and they were slightly upset that she was not 21 and was in that waiting area. Well they directed us there, we were not there to drink, we were there to eat. Besides that experience, the chef, the restaurant and the service were great. I just wish it was not located in the Poodle room and it was more accessible to the public. For a couple's date night though, it's the perfect place for a gourmet, one of a kind sushi experience with magnificent views! read more

As someone who's passionate about discovering incredible culinary experiences, I'm always looking for meals that leave a lasting impression -- and ITO absolutely delivered. Instead of seeing a typical Vegas show, we decided to do something different and indulge in a 20-course omakase experience. It turned out to be one of the most magical nights we've had in the city. Every course was meticulously crafted and full of intention, and the flavors only built in intensity and elegance as the meal went on. It was my first time trying uni, and I was blown away by the uni topped with caviar and salmon roe -- buttery, briny, and rich in the best possible way. I'll definitely be having it again! My absolute favorite of the night? The toro -- it just melted in my mouth and left me speechless. The quality of the fish and the precision in preparation made each bite feel luxurious. The ambiance was intimate, the service was seamless, and every moment felt curated with care. If you're like us and are feeling a bit tired of the usual show scene in Vegas, ITO is an experience worth trading it for -- or even better, do both. But whatever you do, don't skip this place. read more

The first Omakase spot on the Strip. It's at the top floor of Fontainbleau with spectacular view. The meal is similar menu with their original location in New York, fish were fresh and sushi was just delicious. Was this an experience YES! Worth every penny YES! Would I come back again YES! Ok so let me be clear... I've had many omakases throughout my life but this is more for true nigiri lovers who want to eat a decadent, mouth watering, fresh flown from Japan, extradinary piece of fish like you have never had in your life. Other places offer intricate bento boxes and hot plates but not here; they primarily focus on the fish itself. 19 courses total which includes 2 desserts. I opted out of rice and I only made it to 16. I was beyond stuffed. Let me talk about the OUTSTANDING service. They literally have a few servers behind you at all time to ensure that you are being taken care of and they didn't miss a beat! Our bill including drinks was probably $550 pp but who cares- you'd probably lose it at the tables anyway lol. But we did also tip our sushi chef separately as courtesy. Lastly, loved the old school hip hop jam to set the mood- every last detail was truly perfection, even the bathroom lol. Anyways, Just wanted to share to not miss out and request center table! Everything amazing here! From the waiting room and cocktails to the servers, chefs, cooks, bartenders. They really know how service and hospitality should be at a high end restaurant. I was so excited to try this place. Paying $400 per person you are expecting something perfect meal. ITO is located at top of the Fontainbleau through secret door in Poodle room. It is very exclusive and everyone were very nice and welcoming. We had 6pm reservation and arrived at 5:30 to drink at the bar. We entered sushi bar and the window view was fascinating as it is highest floor in Vegas hotel. Chef were very friendly and nice. But the reason why I gave 3 stars is that my spouse spit fish bone 2 times in nigiri. I mean.. with omakase experience, you should not have fish bone twice especially for high end omakase. Overall, courses were ok, but the fact that we had fish bones two times and thinking $400 per person is not something we expected. The chef covered us provided another 2 pieces of nigiri, but we left there with dissappointment. read more

Dined on 3/2/24 Located atop the recently opened Fontainebleau, Ito's 12-seat, 20-course omakase dining experience emerges as a standard bearer in the crowded Las Vegas dining scene. There is no set menu. Dishes are curated daily, and the service is anchored by fresh fish flown in from Japan. Ito is one of the very few multi-course, steeply-priced dining experiences that I feel is truly worth the price tag. I would return without hesitation. Dining at Ito was much more than just a meal. It was a full sensory experience. A life changing experience. For more review info @destinationsweknow read more

It was OK for the price and the caliber. It certainly does not beat 1-3 Michelin star sushi restaurants in Japan. The seating is cramped. The seats at the edges feel like an after thought. Wine pairing cannot be ordered on reservation as the reservation page prevents modifications after confirmation. The quality was... to be expected for this price and setting. Nothing stood out. Nothing was bad however. It is worthy as a visit for tourists. read more

Ok, first let me say that if this review was just for the restaurant, the ambiance, food, chef, drinks and staff, this review would be 10 Stars. Best sushi and Omakase Inhave ever had. However, the knock on this review is for the lack of knowledge the hotel staff has in locating it for visitors. We live in Summerlin and friends were treating us to a 6pm seating. We pulled into the hotel garage at 5:55. We sat down at 6:40 because the first 10 people we asked where the restaurant was either didn't know didn't peak English or sent us to Bar Ito in the food court. Finally we actually found, who I believe was a hotel manager who personally escorted us to the restaurant. And this was sometime after a waitress from Mother Wolf tried to escort us there and brought us back to Bar Ito for our second of 6 trip up the escalator. One hotel employee even told us they wouldn't shownusbwhere the restwas becaise we nneded to be Poodle Clube members and have reservations. The audacity!!! NOTE TO HOTEL STAFF Sushi Ito is NOT the same as Bar Ito. Thankfully, everyone who had already been seated and the restaurant staff was so nice and accommodating we caught us and enjoyed a great meal. Will definitely be back. I am glad we know where it is. Since very few hotel staff does. Good luck first timers! read more
