I had a very nice time at Ito last weekend. The restaurant is at the top of the Fontainebleau with an amazing view right in front of the sushi bar as you eat. The fish was very fresh and there was a variety to the fish with kinds you don't usually get to eat. I would say however this portion of the meal was mainly fish, rice, and a soy sauce type glaze. There wasn't much variety of sauces or toppings as some other places. Along with the nigiri portion of the omekase, there were various other dishes to sample. They were open to accommodate our preference for no shellfish. They have a nice variety of cocktails and drinks to choose from. I would say this is probably the best sushi meal (and most expensive) I have had, even better than Sushi Zo in LA which apparently coincidentally has some cross pollination with the chefs or people behind Ito as well... I was able to attain a reservation through a host and didn't know how hidden this place literally is. There's no visible sign and you seem to need a staff to assist; in order to access this place. This place screams exclusive and it is supposed to be. It is hidden inside puddle lounge which is an exclusive member only lounge. Service was amazing. The 19th course food all tasted amazing. They sourced their ingredients from all part of Japan and meibutsu 名物 from different prefectures. Wasabi from Shizuoka for example. Definitely worth the experience and price tag. I really enjoyed the dessert also. Water and champagne were filled very quickly. The attention to detail was also like the experiences I had in Japan. The most elevated Omakase you can ever have ! The view and the food make you feel like you're eating above the clouds. The sunset reservation is definitely the way to go. Wowwwwww. Where do I even begin?! Let's start with their Japanese whiskey bar, which you get to experience 30 minutes before your reservation. Bartender Brian--dressed in full Japanese garb--whipped up an incredible old fashioned for my husband while I enjoyed a perfect glass of wine. Walking into dinner, the view is the first thing that hits you, and it only gets better from there. From start to finish, everything was flawless. The service was truly 10/10. Even the music playlist caught me off guard in the best way--I actually asked a server who curates it because the vibe was that good. If you're not a fan of uni (like me!), they ask at the start so they can adjust your menu accordingly and replace your courses where it's usually served. Such a thoughtful touch. I was invited to ITO at the Fontainebleau by one of the most genuinely nice person on this planet, and it turned out to be one of the most extraordinary and transcendent dining experiences of my life. The omakase itself is a 20-course journey crafted with absolute precision. Every ingredient is premium, every bite measured, and every dish presented with an almost meditative attention to detail. So this review has been long in the making. I have been Ito a few times over the course of the last 1.5 years. Before I even dive into it, this is definitely a splurge meal and while the food is the highlight this also knocks on the door of providing a premium experience from top to bottom for the price point. There are a handful of noteworthy "omakases" that exist in the valley and they all drive their own version of what this traditional experience is supposed to be. This is definitely catered for the masses and brings the old school style of omakase and meets modern expectations. The experience starts with the exclusive elevator which brings you up to the top floor of the Fontainebleau. When you reach the top floor, you are ushered into a separate staging lounge (open about 30- 45 minutes before your reservation slot so come prepared!) which is intimate and cozy. They have a bar filled with an excellent bartender and it creates this sense of exclusivity and makes you feel like you are dripping in swagger as you drink a few cocktails. When the reservation slot hits, they start to file you into the main dining room. This alone is a pretty great experience. It's modern wood tones that has just awesome views of the Vegas valley. Truly feels like you are dining at the top of the world. The Chefs all work their magic behind the bar and are all friendly to the patrons. The servers are all cheery and efficient. The joint provides a large selection of adult beverages but if you are splurging (which you might be) the premium adult beverage pairing really does hit the spot and is curated well to allow you to enjoy the symphony of dishes that are about to follow. The joint starts with a series's of starters and they jump quickly into the various nigiri's. The rice is quality and the cuts of fish are fresh (as you would expect for the price point). Good artistic variations for all the cuts. The on thing is the Chirashi really is amazing as everyone comments. Rich and full of umami. Was confused why it came in the earlier to mid stages of the coursing but still a fantastic dish. There is literally nothing flawed about what they are doing here at ITO. It is a premium experience that makes you feel like you are on top of the world (literally and metaphorically). Will continue to hit this place up for splurge meals. Very special and intimate dining experience. Everything is very well thought out from the ambiance, design, cutlery, and menu. Food was incredibly fresh, and staff were very personable. Upbeat vibe with pop/rap playing in the background, with synchronized service and an immaculate attention to detail. Unique cocktails and delicious courses. Restaurant is tucked away in the poodle room so you'll most likely need staff to help you find the entrance. "Everything is so fresh..." A wonderful Americanized omakase sushi experience made even better by its exclusivity and view. I've had dozens of Michelin starred and ichigensan okotowari (invite only) omakase sushi experiences in Japan. I can say with certainty, with rare exception, we do things differently in the States. Japan's top sushi eateries rarely take fresh caught fish, cut it up and serve it. The way seafood is treated ie aged, smoked, sandwiched in konbu, scalded then cut and seasoned and paired with seasonally available ingredients are done with purpose. Even the progression the nigiri are served is deliberate so flavors build on each other. Here in the States it's authentic because all the ingredients come from Japan and it's special because it's expensive and "everything is so fresh". Hey, who doesn't love to eat authentic, luxe, freshness? A series of composed starters are followed by a progression of nigiri. 19 total dishes in all. Seafood is fresh, well sliced, well seasoned with some seasonal representation. Quality rice cooked and seasoned well. Signature dishes do impress. The chirashi of uni, ikura, and ossetra caviar is very good. Using a classic caviar adds a punch of salinity and creamy, yolky goodness that ties the uni to the ikura. The elevated version of adding soy sauce raw egg yolk to your basic uni / ikura bowl. A seared A5 wagyu nigiri is a great one biter. Torched to release sweet melting fat, it is then topped with a heaping of finely shaved truffle. A great way to bring ot the best of both A5 and truffle! Good selection of unique cocktails, sake and whiskey that work with the food. $400pp non inclusive. 12 seats with two seating per evening. Choose the later seating during the Summer months to enjoy the lights of the city. Flawless service. The experience falls just shy of the more relaxed but more gluttonous $500 omakase experience at Kame Omakase. Regardless, "everything was so fresh". read more

I've had many omakases throughout my life but this is more for true nigiri lovers who want to eat a decadent, mouth watering, fresh flown from Japan, extradinary piece of fish like you have never had in your life. Other places offer intricate bento boxes and hot plates but not here; they primarily focus on the fish itself. 19 courses total which includes 2 desserts. I opted out of rice and I only made it to 16. I was beyond stuffed. Let me talk about the OUTSTANDING service. They literally have a few servers behind you at all time to ensure that you are being taken care of and they didn't miss a beat! Our bill including drinks was probably $550 pp but who cares- you'd probably lose it at the tables anyway lol. But we did also tip our sushi chef separately as courtesy. I was so excited to try this place. Paying $400 per person you are expecting something perfect meal. ITO is located at top of the Fontainbleau through secret door in Poodle room. It is very exclusive and everyone were very nice and welcoming. We had 6pm reservation and arrived at 5:30 to drink at the bar. We entered sushi bar and the window view was fascinating as it is highest floor in Vegas hotel. Chef were very friendly and nice. But the reason why I gave 3 stars is that my spouse spit fish bone 2 times in nigiri. I mean.. with omakase experience, you should not have fish bone twice especially for high end omakase. Overall, courses were ok, but the fact that we had fish bones two times and thinking $400 per person is not something we expected. The chef covered us provided another 2 pieces of nigiri, but we left there with dissappointment. read more

The first Omakase spot on the Strip. It's at the top floor of Fontainbleau with spectacular view. Luckily got to dine here when during my trip, they just opened (Feb 2024) It's a speakeasy that we were led to a hidden entry, and through their whiskey lounge, and then finally arrived at the restaurant.  We ordered the Matcha and Miyazaki cocktail at the whiskey lounge and enjoyed the drinks there before being led to our seat. The meal is similar menu with their original location in New York, fish were fresh and sushi was just delicious. Truly enjoy every bite there!  Chefs and servers were also very friendly and chatty, the night becomes everyone dining there were sort of hanging out as a group, with a beautiful rooftop view. Dined on 3/2/24 Located atop the recently opened Fontainebleau, Ito's 12-seat, 20-course omakase dining experience emerges as a standard bearer in the crowded Las Vegas dining scene. Ok, first let me say that if this review was just for the restaurant, the ambiance, food, chef, drinks and staff, this review would be 10 Stars. Best sushi and Omakase Inhave ever had. However, the knock on this review is for the lack of knowledge the hotel staff has in locating it for visitors. We live in Summerlin and friends were treating us to a 6pm seating. We pulled into the hotel garage at 5:55. We sat down at 6:40 because the first 10 people we asked where the restaurant was either didn't know didn't peak English or sent us to Bar Ito in the food court. Finally we actually found, who I believe was a hotel manager who personally escorted us to the restaurant. And this was sometime after a waitress from Mother Wolf tried to escort us there and brought us back to Bar Ito for our second of 6 trip up the escalator. One hotel employee even told us they wouldn't shownusbwhere the restwas becaise we nneded to be Poodle Clube members and have reservations. The audacity!!! NOTE TO HOTEL STAFF Sushi Ito is NOT the same as Bar Ito. Thankfully, everyone who had already been seated and the restaurant staff was so nice and accommodating we caught us and enjoyed a great meal. Will definitely be back. I am glad we know where it is. An absolute must do. Whatever I write won't do it justice. The food, the prep, the way service/servers are choreographed, the attention to detail, the staff/mgt's personality, the venue itself, make this particular Omakase 2nd to none and a must do. Simply wonderful. It also gives you access to the hotel's private lounge (Poodle Room is the name I think), which is a very nice bonus after enjoying the Ito experience. (Edit, this lounge is on the top floor, members only, large, well appointed oval type full service bar. Taller chairs surround the bar, while there are plush couches and chairs along the wall of windows...all in an oval shape....it's a great spot. No pics allowed which is why you don't find pics of it online. No pics is nice...keeps that crowd and behavior elsewhere). I took many photos in Ito but am not posting them because a photo doesn't capture or convey how great the experience really is. We went here last night for such an incredible Father's Day treat. The view is ridiculous! The chefs were awesome and interactive and we loved the music 90s hip hop and R&b vibe. Best sushi I have ever had. I don't have the most experience with authentic sushi, which made me slightly nervous, but I loved every moment of this. They checked several times for allergies or preferences. They asked me twice if I'm sure I want uni... hell yeah, I do. Servers/somms were attentive and friendly. Watching the executive chef set up the first few courses was very cool. The sushi chef on my side of the table was a very cool guy with a lot of experience and super knowledgeable! He explained the taste of each bite and its seasonality. I liked some bites better than others, but each one was delicious. Uni, caviar, needlefish, scallop, shrimp, wagyu. Some chilled, some torched. There was a chef assigned to rice who brought out fresh rice every 3 bites. Egg custard (tamago?) and a fruity dessert rounded out the meal and I left very happy! I tried to pace myself, but could barely finish my meal and wasn't hungry until the next afternoon For my pre-dinner drink, I had the Wasabi, which I highly recommend. I did the standard sake pairing with my meal. I also don't have much experience with sake, but each one was amazing and paired well with the dishes. The view was for sure amazing, but my eyes were mostly on the chefs making my meal and my dinner companions. It made for a beautiful backdrop to the cozy inside. The restaurant is located on the top floor of Fontainebleau with very limited seating. $400 a person and worth every penny! I love that you're forced to try fish and items you probably would never try on your own. The chef tells you origins of every fish and he prepares and serves to you. Waiters were very helpful and attentive. On a side note, my wife and I sat next to Gardner Minshew and his girlfriend.
