I love the char on the meat, the salsas are great and were given to me cold (great sign! As unbelievable as it may seem, this simple step is missed in a lot of places!), the beans and rice with the sasoun like abuela used to make- chef's kiss! and even better than Ono tacos in Kahului in my opinion, and their beans and rice are pretty fly).
The pollo and asada, one day has more flavor than the next. Some days, no salt at all. So if you bring a guest, just pack some limes and salt just in case, so they'll believe you when you say this place is awesome. Problem solved.
Additionally, the comment about the fatty inedible bits of steak- yes, I have experienced it also, that is an anomaly that the chef should be able to catch. That's not ok and will turn a lot of people off from the food, please quality control or let the butcher know so you guys are getting value. Sometimes I know those fatty cartridge chunks can contribute to flavor because of the oils, but that can be done in a separate process and removed before plating with that primo asada.
First visit I loved the carne asada tacos.
Quality is very hard to find here on Maui, and once you find it, consistency even harder, but I really like this place so I'm coming back and bringing more folks.
The marinade and seasoning was on point that first time. The second time, the beans and rice had wayyy more flavor than the chicken and the steak, just being real. I look forward to trying more. I bring guests here and they say the same things. I'm a huge fan of Mexican food, and I know food can be hard work, just iron out your processes so they're firme every time, make sure everyone working follows the SOP (Standard Operating Procedure) and people will remember it for sure, the potential for even more greatness is definitely there, no one else is making tacos like this! just needs attention to detail.
Also.. not to end on a bad note, but I've gotta say it- you -always- should provide or offer silverware to customers, and napkins. That's only proper form.
The service and kindness of the young man taking orders is impeccable, he is kind and personable to people and you can tell he was raised with respect , has dignity and kindness for others. Well done! This is rare also and people notice. What a good bruddah!
Thank you so much for your hard work and efforts. I live with constant pain. I don't always wanna cook, shop, marinate, and all the steps it takes to make an epic meal, unless I'm cooking for a lot of people I love.
