The food tastes clean, safe, as though someone is mindful of sourcing and preparation. The thing is, it's not consistent. I'll still support the place, but to really love supporting them even more, I have some friendly recommendations. I love the char on the meat, the salsas are great and were given to me cold (great sign! As unbelievable as it may seem, this simple step is missed in a lot of places!), the beans and rice with the sasoun like abuela used to make- chef's kiss! and even better than Ono tacos in Kahului in my opinion, and their beans and rice are pretty fly). The pollo and asada, one day has more flavor than the next. Some days, no salt at all. So if you bring a guest, just pack some limes and salt just in case, so they'll believe you when you say this place is awesome. Problem solved. Additionally, the comment about the fatty inedible bits of steak- yes, I have experienced it also, that is an anomaly that the chef should be able to catch. That's not ok and will turn a lot of people off from the food, please quality control or let the butcher know so you guys are getting value. Sometimes I know those fatty cartridge chunks can contribute to flavor because of the oils, but that can be done in a separate process and removed before plating with that primo asada. First visit I loved the carne asada tacos. Quality is very hard to find here on Maui, and once you find it, consistency even harder, but I really like this place so I'm coming back and bringing more folks. The marinade and seasoning was on point that first time. The second time, the beans and rice had wayyy more flavor than the chicken and the steak, just being real. I look forward to trying more. I bring guests here and they say the same things. I'm a huge fan of Mexican food, and I know food can be hard work, just iron out your processes so they're firme every time, make sure everyone working follows the SOP (Standard Operating Procedure) and people will remember it for sure, the potential for even more greatness is definitely there, no one else is making tacos like this! just needs attention to detail. Also.. not to end on a bad note, but I've gotta say it- you -always- should provide or offer silverware to customers, and napkins. That's only proper form. The service and kindness of the young man taking orders is impeccable, he is kind and personable to people and you can tell he was raised with respect , has dignity and kindness for others. Well done! This is rare also and people notice. What a good bruddah! Thank you so much for your hard work and efforts. I live with constant pain. I don't always wanna cook, shop, marinate, and all the steps it takes to make an epic meal, unless I'm cooking for a lot of people I love. Tried Guadalajara Tacos again recently--it's been a while--and I have to say, the experience didn't quite hit like I remembered. I ordered an adobada burrito and horchata. The flavors were ok, but everything leaned a bit too smoky for me which was a little unexpected and the cabbage overwhelmed the burrito more than it complimented them. Not sure if that's just the style of the food from the region, it just wasn't for me that night, but my other half seemed to enjoy it. That said, I still really appreciate what this spot is all about. Everything is made to order, from tacos and mulitas to quesadillas and their Sunday-only barbacoa (get there early if you want to try it--it's first come, first served!). What keeps me rooting for them is that they're a non-profit and proceeds go toward supporting the children and youth of local churches. So even if my meal wasn't as memorable this time, I'm still happy to support a business that's doing good in the community. Would I go back? Yeah, probably--especially on a Sunday to try the barbacoa. Just hoping for a little more balance the next time around. read more

After our first dinner, we were still hungry so we stopped by this taco spot. We got mulitas, tacos, and a burrito. Both the asada and adobada were great! I thought it was very authentic! The salsas are pretty spicy, so be warned. Great local taco spot. read more

The taste is good but sometimes you get a unchuable cube of meat that ruins the rest of the burrito or toco. After you bite into one of these pieces it grosses me out and then I just can't eat the rest. I go the the kava bar next door everyday, and used to be really into the food, but now this has happened so much and more and more recently so now I can't even put it in my mouth without this thought. Just visited Guadalajara Tacos. Recommended by friends, I've been meaning to try them. I like food trucks because it's quick and easy to take to the beach for a meal with a view. Anyway, this place is easy to find; right next to the Aloha Marketplace. We ordered a pair of fish tacos and a burrito with shredded pork. We also got tomatillo and avacado sauces. We share and share alike. The fish tacos were good. Lots of fish nuggets but they were a little dry. Maybe cooked a bit longer than they should be. A splash of sauce helped. A little cabbage & cilantro. Nice that it had 2 tortillas because it helped hold everything together. One taco was probably enough to hold me over, but that burrito was sitting there, beckoning. We cut it in half and it looked really good. Doctored it up with the sauces and dug in. The pulled pork was delicious. Just the right amount of beans and more rice that I would have wanted but the rice was tasty, so okay. The burrito was grilled, so the tortilla had a nice texture, too. I probably would have given them 4 1/2 stars, but the girl at the window was especially helpful and pleasant, so there's a solid 5 stars. read more

The staff is super warm and friendly, their truck/outdoor set up was a cute ambiance & has some parking spots out front, and the burritos we got were delicious and made to order. We are visiting from California and I love fish tacos and tacos in general. So we decided to stop by because we were in the mood for tacos and based on the reviews we said why not...well truly disappointed in the food. No pico de gallo, no flavor it's just blah. The mahi fish taco was so bland and no color or sauces that normally come with a fish taco and the same for the shrimp taco. I asked for Chorizo taco but they made me a carnitas one instead. The cashier is the lady's son and he was kind of nice but no personality. The food was mediocre and I wish there were better options. I'm Mexican and this was truly disappointing especially because the people are from Guadalajara so I expected more. I have not be back and don't recommend. read more

So we were in Maui on Cinco de Mayo and it was getting late. We wanted to get some Mexican food but weren't all that hungry. So where do you go? A food truck, of course. We came up S. Kihei Road from the south. You need to be looking for the Aloha Open Air Marketplace on the left at Waimahaihai Street as soon as you pass the Taco Bell on your right. The truck is located on S. Kihei between the marketplace and Boss Frog's snorkel shop. There is a also a church in there. We parked behind the marketplace. Parking was a bit tight but we found a spot fairly quickly. You might think a taco truck in a fairly touristy area of Maui would have a system in place to make sure the customer gets their order, like giving them a number or calling out your name. This place called out what was in the order and let the several people waiting for food decide whose order it was. My wife ordered a fish taco and I ordered a fish taco and a chicken taco. Drinks were canned soda so we both got Sprite. The tacos each came with 3 different cups of sauce, and none of them were labeled. We overheard someone else asking about them. They were green, red, and avocado salsas. The avocado salsa had a hint of lime flavor. I used the green and avocado on my tacos. The red was too hot for me. It reminded me of Thai red chili sauce. Seating was a picnic table next to the truck. It was dark out but there was plenty of light at the table. They called the orders out of the door of the truck and each time about three people would come forward to discuss whose food it was. The picnic table was fairly close to the door of the truck so watched this happen again and again. So how was the food? It was okay. The fish was a little over cooked and the chicken didn't have much flavor. The salsas helped a bit. I'm not saying the food was bad. It just wasn't amazing. The garbage can was easy to find when we finished eating. We were in and out in 30-45 minutes. I would try them again but probably order something else next time. I would also encourage them to take names or give order numbers. There was so much unnecessary confusion. Sorry, didn't think to take any photos. read more

We've driven by this food truck many times but finally had time to stop. It is easy to find right next to Aloha Market place. They have a small lot for parking behind the market.. They have lots of choices we ordered fish tacos and a pork burrito. Girl working behind the window was helpful and answered all our questions. They have a couple shaded tables to wait at or eat on (lots of flies so chose to go home to eat) the tacos were very filling- fish was small fried nuggets. The burrito was heavy and happlily the tortilla around it held together very well. and had lots of meat/ rice and beans-easily 2 could share. We will definately go back here again. read more

Tucked on the side of S Kihei road in front of a church, it's easy to miss this location. Make sure you don't! This may be the most authentic Mexican Food on the south side! Chicken quesadilla was served differently than I've ever had, on a round corn tortilla, cheese level BOMB. Also got a Carne Asada Burrito, fantastic! The quesadilla is a little light on serving so go for the burrito or tacos if you're looking for volume! April 15,2023 - Saturday Food truck located next to a church with a small entrance drive way, not sure if it's a two way street but we did see cars going both ways as long as you fit. Parking can be found in front of the truck area or in the back part or street parking near the state library. OUR ORDER Carne Asada Burrito Spicy pulled pork Burrito Carne Asada + Pulled Pork Taco Horchata 2x Water Bottle We gave them a 4-Star because when we ordered our burritos we asked for NO BEANS but when it came & we started eating it has beans which kinda made me NOT want to finish. But I was able to take out the beans on my own but my burrito just fell apart in the end. Overall the drink + tacos came out good. Since it's a food truck they have seating area around it which is nice & they have lights so we can see too. We probably come back & try different things. read more

This place is delicious I highly recommend it and I suggest you bring large amounts of cash because it's cash only. I had the corn tortilla malitas. I asked for chorizo, they said no problem. Very disappointed. Ordered two burritos, one chorizo, one carnitas, a mulita, and a side of beans. Got home to find one burrito. Drove back and told them I only got one burrito. The lady who took my order said I wanted a burrito with both carnita and chorizo.... I said one burrito carnitas and one chorizo.... Who orders a double protein burrito? She was not willing to make things right- she said I could order again and pay full price. Not taking any responsibility for her error. Amazing fresh tacos! We went here on a whim and so glad we did. The pork carnitas were our favorite. The fish tacos were a close second. The horchata was the best I've ever had and the fresh squeezed pineapple juice was to die for. The woman who took our order was the kindest human and very accommodating, as we decided to run down to the end of the street and watch the sunset while our order was being made.
