Last night, I went with a friend who has a lot of food allergies, so it's tricky. The host convinced us to try an appetizer that neither of us had tried before - and probably won't try again. I'm sure younger people like it. It was the samosa chaat. It came out looking very different from the picture on the website, and had a lot of raw onion, which doesn't sit well with either of us. So, that was a miss, at least for us. But the main dishes were very good. My friend had chicken saag to which they added some extra vegetables. I had vegetable korma, in which they threw a little bit of chicken. We also had garlic naan. I had a mango lassi (delicious), and my friend had chai. All tasted wonderful. We requested mild, and we received mild. That doesn't always happen at other restaurants, but it did here, and for that we are both grateful. We hadn't asked for dessert, but the owner brought me a carrot, milk, and spice dessert with a candle in it called carrot halwa for my birthday. It was odd to look at, but delicious. I was just so full! My friend had some kind of reaction with her throat and neck, but we just sat there for longer, and it calmed down. We suspect it was either too much dairy or perhaps there's a spice that didn't agree with her. We don't blame the restaurant, and I'm glad they didn't rush us out of there. Namaste is accommodating for special diets and friendly. Their deep fryer separates meat from vegetables. The atmosphere is fine. Nothing really fancy, just welcoming. I'll be back.

Plus, we were hungry. The atmosphere was nice. It wasn't overly bright inside, thankfully; the design honors the old brick building. We were welcomed right away. It was pretty empty when we arrived, but began to fill pretty quickly. I ordered the Vegetable Korma. I've noticed that every Indian restaurant has its own version, but it's usually sweeter than spicy, so it's my go-to. This version used shredded coconut and ground nuts for the sweet. It had beans, cauliflower, and more. I also had their mango lassi, which was wonderfully refreshing. My husband doesn't remember the name of what he ordered and enjoyed, but I think it's Malai Kofta. It was a vegetable dumpling in a cream sauce. I had a bite, and it was delish. We also had the garlic naan. Our friends found us as we were finishing. They are vegans, and it turned out they hadn't found food they could eat at the street festival, so they joined us. I'm not sure what they ordered, but they seemed to enjoy it. The one she ordered, which was next to me, seemed to be primarily potato and cauliflower. So, by accident, I found a new favorite restaurant in Longmont! I don't eat out or eat takeout often in daily life but Tiffins is on the short list of restaurants to frequent. I've been unemployed recently and look forward to having spending money again that I can spend on a lovely dinner at or from Tiffins! Table service has been variable the several times I've eaten in - sometimes prompt, sometimes very delayed. The servers are also the people talking and organizing to go orders, so at mealtimes it can be quite delayed for restaurant service as they spend a good amount of time at the terminal taking orders and handing off DoorDash and pick ups. The restaurant is comfortable and not too brightly lit - great ambience for eating in. The tables near the payment terminal will get heavy traffic from pickup and to go orders, sometimes with people lined up waiting, so choose a different area if you're eating dinner in and looking for a quieter spot to chat and enjoy.

While I wanted to get everything, I opted for the Chicken Saag (this time around) with a medium spice. In ten minutes, the bag was waiting for me and I dug in right there in the parking lot. This Chicken Saag was purrrrrrfect! Medium spice was a bit on the medium-high side, so I had just the right amount of sniffles and small beads of sweat on my forehead. The flavor jumped out of the carton and assaulted my tastebuds in the best way. The chicken was perfectly cooked and tender, and I immediately regretted not getting another dish or two to have leftovers for dinner. I've got to make the trek back south again next week (boo), but this truck (yay!) will definitely be the brightest part of my day as I start to navigate through the rest of the menu!
