Ambiance: Clean - New place Low playing music Inside/Outside eating (Too hot, 101, so we ate inside) Inside does have 8 tables and 4 bar stools. Small but perfectly quaint. Food: Fried Chicken Bowl. The chicken was cooked perfectly/w-an amazing crunch. The white rice-sticky! Just the way I like it. Lettuce-pickled veggie (radish/carrots) YUM! The sauce was a combination of great flavors. We just visited the area this weekend and visited Hye Thai twice, because it was so delicious! The Shrimp Spring Rolls were amazing, some of the best I've ever had. The thai larb lettuce wraps were so flavorful and the Crying Tiger was also a favorite. So full of flavor and you feel good leaving, it is all so fresh. We were so glad to try a few dishes and experience all the different flavors. We came back for breakfast a few days later and had a traditional breakfast dish along with a Thai breakfast dish. Just got takeout from their new location in Johnson City (day two of being open!), and it was awesome. I posted a pic of my empty plate as evidence. Got the satay and garlic chicken which were juicy and flavorful, the char on the satay was especially nice. Phad thai was super good, you could taste the tamarind, we only did 1 star heat this time and it was just right. Will try spicier next time. Best of all was the green papaya salad, I could eat a whole bowl of the stuff. Super friendly staff and quick service. This was really a substandard meal. Curry lacked flavor and the chicken in the Phad Thai was rubbery. We are big fans of this kind of food and have eaten at many excellent Thai restaurants, even in Thailand. This restaurant was not good by any measure. We loved our experience dining at Hye Thai! We were two and stopped in for lunch. We shared the shrimp spring rolls, curry fried rice with pineapple, and their special of the day which was a wonderfully marinated ribeye steak with rice, a salad, and delicious hot sauce. Everything was well balanced and much better than your average Thai. We will most certainly be making the drive back up from San Antonio to eat here again! read more

We visited the LBJ State Park and stopped by Hye Thai for a bite to eat during COVID. It was great to be able to get out of the car and sit in the outdoor seating area. We ordered the curry fried rice. It was the best curry fried rice I've ever had. So much flavor! It has tons of green onions, white onions, jalapeños, and habeñero and garlic. It was so nice to sit in the shade, eat my food and have a few glasses of the Hye Cider. Word to the wise: don't go above the level 3 on the spice level. I did the "Level 4: Make me sweat" and they don't mess around! You never know, hotness is so subjective. But I should have gone for the "Level 3: Spicy but not crazy." If I ever find myself near this area, I will definitely plan a detour to stop in to the Hye Thai, it was the best thing we ate on our trip. read more

I can't believe that I have not written a review for this place. My family loves this location. We have been going to them back when they were still based out of Johnson City. The drive from Blanco to Stonewall is a little bit but worth the drive. We go quite often that the proprietor's know my daughter because she talks there ear off each time, but she loves their crispy chicken. My daughter is 5 years old but she loves her Thai food. Ok let's go with my five stage method: 1. Cleanliness- I have always seen that the truck has been impeccable and the inside looks immaculate 2. ambiance- it's a food truck so ambiance galore and I say that because the people are so friendly and anyone who can keep my 5 year old entertained deserves more stars 3. Food-Oh my do yourself a favor and make the drive to Stonewall, you will not be disappointed. We still do quite often. We have had just about every bit of their menu. We enjoy the Pad Thai and the different heat levels. The lowest of heat still has great flavor and will never disappoint. We always order an extra side of crispy chicken and you can even put that on the pad thai. I do wish they had beef pad thai but the entire menu is worth making the drive. 4. Service- They have great service. They keep everything moving and are very efficient and I do not see that going down once they get their brick and mortar up and running. 5. Attentiveness- They are extremely attentive and friendly. The best Thai food in Hye. It's also probably the only Thai food within a 45-minute drive, but hey, I'll take it! There aren't a lot of restaurants or food trucks serving Southeast Asian cuisine in the Fredericksburg area. And we're lucky to have stumbled upon Hye Thai. We've eaten there twice and will probably go back every time we're vacationing in Fredericksburg. Hands down, the best dish is the green curry. It is so yummy! We love the crispy egg rolls, too. The fresh rolls are hit or miss, imho. My friends and fam liked the Pad Thai, but both times I tried it, it tasted metallic to me. If you go here, definitely grab some cider from Hye Cider. Stopped here while waiting for our wine tasting appointment at Calais winery next door. We did the cider tasting in the same parking lot then decided to share a red curry. The portion size was good and had plenty of chicken and vegetables. Flavor was also good and a decent spice level. They add a small scoop of rice to the bowl and personally I wish there was more rice and it was separated out in another bowl. By Houston standards I might have given this place a 3/5 but for Hye (or Fredericksburg / surrounding towns), you won't find better Thai food. Also, it's impressive that the Thai food tastes so authentic and delicious being prepared in a food truck.
