It's one of the coolest winery tours I've been on. The caves are a massive labyrinth carved into the hillside and naturally stay around 55 degrees year round, which is where they age a lot of their wine before bottling. Even if you've been to a lot of wineries, this is something a little different. At the time I'm writing this, tastings are still complimentary, which is almost unheard of these days. If you go, do them a favor and leave with a bottle or two. That's how places like this are able to keep offering experiences like this, and honestly, you'll probably want to take some wine home anyway.

I especially want to recognize the young woman working the Starbucks/food service counter in the lobby during our visit. She was the only employee handling the entire operation and somehow still managed to provide friendly, professional, 5-star service while nonstop guests continued ordering food and drinks for hours. She never stopped hustling and kept everything moving with a great attitude. Honestly, the fact that one person was left to run the entire cafe by herself feels like a management staffing issue, not an employee issue. Management should make sure the cafe is properly staffed, and if someone calls in sick or doesn't show up, leadership should step in to help rather than leaving one employee to carry the entire workload alone. That said, our cafe experience remained positive largely because of her work ethic and professionalism. She deserves recognition for holding it all together and taking care of guests under what looked like a very stressful situation. I only wish I had gotten her name.

It was extremely loud every time someone would get off the elevator. Our room was also on the back of the building by the highway and the road got pretty loud. Luckily I had my sound machine which helped a little but it was still pretty loud. The room itself was clean but they only gave 3 towels for a room with 2 beds. I feel like 4 should be the minimum. The beds were also so hard and the pillows were not good. We did not sleep well. They have a nice big open lobby and a bistro that we didn't go to. They have water in the lobby but it tasted weird. Parking is confusing because the front desk never asked if I had a car. She gave me a parking pass in the stack of check in stuff but I didn't notice it. The next morning I got a notice on my windshield that I didn't check in my car. When I went to talk to her about it she said she would take care of it. I still don't understand if parking is free, or not. I saw QR codes outside on signs to pay for parking.

This Holiday Inn Express consists of two separated buildings, with the second building being worked on during our stay. Despite the construction, we did not experience any interruptions. Actually the unpainted walls and some leftover tools were the only indication there was something going on. The free breakfast is in the main building and standard HIE: they had pancakes, bacon, and sausages on top of usual continental options. And a fancy, automated coffee machine. The kitchen staff was working hard to get everything topped off as soon as an item started to get low. I also used the gym, which is located next to the indoor pool and it was good for a quick workout: some treadmills, elypticals, free weights. The check-in and check-out were quick and easy and I consider the price point a good value. We had a nice time and if going to Paso next time, I'll defiently keep HIE in mind.

Important Note: 1/9/26 This location is actively under remodel/ construction. I walked into the…read morefront lobby area and was immediately greeted by a lonely front desk to the left and huge pile of caution taped boxes being moved on the right. The walls are completely bare, stripped of paint and most of the decor, but penciled-in instructions of what SHOULD go on the wall is definitely still visible. I thought I had made a huge mistake from the minute I walked in. While I was told all amenities are still open and accessible during this time, I think it's important to set expectations. The outdoor fire pit sits directly to the right of the entrance and borders sidewalk... the neighboring view is of the parking lot. The "free breakfast" is nothing like you see on their website. There is no brightly lit room with cute kitchen themed decor... or places to sit. Rather, it is a set of 3-4 chaffing dishes, arranged on a folding table, next to a "coffee station" atop of a random cabinet haphazardly placed just outside the 2nd floor elevator doors. The highly recognizable pancake machine is legit for display only because of the two days I was here it was not functional... very disappointing. The "newly renovated rooms" looked nice... but that was truly where the buck stopped. Upon arrival, the neighboring room happened to slam the door at just the right time that a plastic covering popped off the wall and left exposed wires at eye level. Uhm what?! It is worth mentioning, that I booked a room with two queen beds. The beds are very tall and while comfortable, were horribly squeaky at the base. Even the slightest shift in the bed led to horrible squeaking from the boxspring. And to make matters worse, the walls in the room are extremely thin... and the front door is hollow core (Google it) so you can hear EVERYTHING. Restful sleep? Think again. And unfortunately, it doesn't end there. The bathroom vent fan in our room didn't work so if you take a hot shower, it immediately turns into an unexpected steam room. (Not just the bathroom, the WHOLE room. No joke. Check the windows and you'll see what I mean!) If you move the mixer valve just a little too far away from the hottest setting? Prepare for an instant ice shower. There was seemingly, no in-between. And the best part, If you are sitting on the toilet, be careful if someone else tries to open the door because your kneecaps are doomed. Long story short... my family has officially barred me from making any hotel reservations in the future as a result of this stay, and honestly... I can't blame them. This was one of the toughest hotel experiences I've had in a long time.

Instead of paying the regular $20-$30 per tasting, we paid $20-$30 for two of us! Highly recommend if you're planning a tasting week or weekend. Still Waters was our first stop, and it ended up being one of my favorites of the trip. The hostess was so friendly, knowledgeable, and attentive. We sat outside on a gorgeous day, and she brought each tastings right to us without ever making us feel rushed. The grounds are absolutely beautiful, peaceful and serene. There's a little back house (now mainly used as a bridal prep space for weddings) and lovely water barrel fountains that really add to the ambiance. Both the whites and reds were excellent. So good that I didn't even need a spit bucket. I would absolutely recommend Still Waters and would happily return on my next Paso Robles visit.
