This place is insane! Must go! Our son went to Baylor and he's moving tomorrow, best place to have our last dinner in beloved Waco. He had the torta, amazing, huge, great dipping sauce. We shared the nachos, also amazing. Two lettuce wrapped chicken tacos, and the prized pozole. Incredible meal! Thank you Huaco Eatery, Waco and Baylor! All so special.

This place was amazing! Chef Sebastian's food was so good we have been craving it since leaving. Would definitely recommend.

Grilled Chicken Lettuce Wrap and Yuca Fries

I recently visited Huaco Eatery and tried the grilled chicken lettuce wrap with yuca fries. The presentation was absolutely beautiful, making the meal feel like a truly elevated dining experience. The chicken was perfectly cooked and well seasoned, while the tomatillo brought a bright, flavorful touch that tied everything together. Every bite had a great balance of flavors, and the yuca fries were the perfect complement to an outstanding meal.

Pozole is a must-have! Huaco is located inside Union Hall. They offer an interesting take on Mexican cuisine. Our favorite is the Pozole, hard to come by but can't miss! Its a decadent green pepper based stew with fresh avocadoes, cabbage, and chicken. The broth consistency is just right and has a depth of flavor from various mexican peppers including anjo gụailo, and bell. The portion is quite generous as well for the price. The staff are quick to take your orders with your name assigned and will either do call outs or bring your food to the table if they're not too busy. [[HIGHLIGHT]]Plenty of seating arrangements all throughout Union Hall! Dont fret if you may not find a spot right in front of the food stall (although we've never had a problem with seating before).[[ENDHIGHLIGHT]] Enjoy!

Stopped in this place about six months ago and had a terrific experience here so we came back.... This place never disappoints the owner is super friendly. He made us a special plate of chips and queso before our two entrées came out. Everything was absolutely delicious and it looks as good as it taste. Wake up Waco!!! This may be some of the best food I have ever had. We tried the chicken lettuce wraps, dip trio (salsa, guac and queso), and chicken nachos. Please try huaco if you've not already. The people of Waco may not know how lucky they are to have this in the neighborhood. 10/10.

[[HIGHLIGHT]]Absolutely amazing lunch inside the Union Hall food hall.[[ENDHIGHLIGHT]] Shockingly beautiful quality and presentation. Pozole is one of my favorite dishes and this one is outstanding. Chef Sebas was warm and helpful-- he's obviously very talented as well. The tuna lettuce wrap tacos were so fresh and vibrant. Someone in the reviews said the portions were small, but that was not my experience. I laughed out loud when the chef set a gigantic wooden bowl of pozole down in front of me, big as my head! What a refreshing and special experience in an unexpected place. Worth every penny, better than the last 10 restaurants I've eaten at. ¡Que rico!

The food was fresh, beautifully presented, and absolutely delicious, and the staff were so kind and friendly, giving my 3 year old niece and nephew watermelon on a stick and nachos while we waited for our food to arrive. We will absolutely be back!

Wow! Mexican food you can't miss! Passing through Waco and decided to stop at this local favorite, Union Hall. There are many food selections, but the chef at Huaco got our attention and, man, did he deliver!! We got chicken bowls, chips, salsa, and the churros. And every single thing was awesome. From the presentation to taste, it was a great surprise to find this quality of Mexican food at a venue like this. If you're in the neighborhood, I highly recommend! read more

It's okay, the meat was delicious the red snapper was cooked perfectly but did not have much flavor even though covered in some type of sauce This is in a food court which was kind of weird for me but obviously a great idea for a college town. read more

Visiting Waco, this place is a gem! Keto-ish Mexican food options with delicious lettuce wraps and bowls that won't break your carb bank for the day. Incredibly fast service. Eatery is inside a food hall, so it's easy to order at the front and slide into a seat and wait. I had the chicken mole bowl--excellent, as was the bowl's rice and beans. It seems like it's going to be "fresh," but it's not. It may have been made fresh somewhere else, but it's really only heated at this location. The food was good enough to eat it again, but I'm probably not suggesting it for lunch. read more

The service was great. The young lady that took my order at the register was friendly and welcoming which is always nice. The menu looked very promising and the photos on other reviews and at the counter looked really good. I ordered the chicken quesadilla combo, which came with rice and beans, and a small scoop of guacamole. The platting was phenomenal, especially considering the paper plate! I wasn't able to grab a picture because I was wrangling an 11 month old at the same time, but trust me, it was a beautiful sight. Unfortunately, the taste didn't measure up to the appearance. The food wasn't bad, but I can't say that I actively enjoyed the meal. In my opinion it generally lacked flavor across the board. I didn't take one bite that made me want to take another. The portion was very large, but I really think I would have preferred a smaller more flavorful meal than a robust almost bland meal. I'll still probably go back and try other things, because again the menu looks really good...but the quesadillas aren't for me. read more

Huaco Eatery is a Mexican restaurant in Union Hall. It's sort of tucked around the corner from everything else. If you enter Union Hall from 8th street then you'll be facing it. Everything I have had here has been good! The food comes out quickly and always tastes fresh. Today I had the chicken quesadilla. Before putting a tortilla on the grill they melt cheese so one side of the quesadilla is covered in crusty cheese...yum! The queso is also good! I don't know exactly what it has in it, but it tastes like it has a green chili kick. I loved the yuca fries and dipping sauce. The only reason I give this 4 stars instead of 5 is the price. Everything here seems to be slightly higher than I would expect. You can definitely find cheaper Mexican food, but Union Hall affords everyone in the group a chance get what they want! read more

Needed to stop for some good food before heading to the airport and we saw their reviews on yelp it it was spot on! Food was great. Salsa was very tasty. So delicious I had to write a review! I am a Waco local, and have wanted to try Huaco Eatery ever since they opened in Union Hall. I finally tried it, and it was absolutely delicious! I had the flautas, and I would highly recommend trying them. The staff were friendly and my food was given to me quickly. I also had a mango agua fresca, which was SO good. Everything tasted fresh and authentic and I will absolutely be returning again. ($18 for the flautas and the drink) read more

Service was fast even during the lunch rush. Food was fresh and hot when it came to the table. Plating and presentation is excellent and the taste definitely matches. The food tastes great and is a favorite of mine. The food is always fresh and worth the price. The chips are thick and seasoned perfect for the queso. I've ordered the chicken tinga on several occasions and it's different every time, but still good. Different as in the rice served is not the green rice mentioned in the menu description. The churros have sprinkles instead of the description photo with berries for a topping. read more

Out of all the options at Union Hall, we're really happy we tried this one! I liked Huaco because it elevates Mexican food *just enough*, while still being very fairly priced. We got the chicken tinga empanadas that were fried to perfection. Not greasy, still a soft bite. Sprinkled with toppings and a side of queso, they were so good! Then we got two tacos (both with naan bread)...The snapper was very well cooked with lots of flavor. And the chicken mole was rich. The naan is a big serving. All that was plenty for us! However, I was disappointed to learn they no longer serve guacamole with their fajitas. The chicken fajitas arrived sizzling hot, but became very dry as they cooled. They were spicy, but lacked much flavor. The rice and beans were good. Overall, between the slow service, unpleasant smell, and mediocre food, I would not return or recommend this restaurant. There are plenty of other Mexican restaurants in Waco that I'd try before coming back here.

We had indoor reservations and moved them outside to the patio just 5 hours before our dinner, as we had enjoyed the patio the prior evening. But then the wind kicked up something awful and we had to ask to be moved back indoors as we arrived. Yet they were happy to make that happen. All the staff were very friendly and attentive. The food tends to be milder here (nothing too spicy for Waco, lol) but everything was well prepared with quality ingredients. The cocktails were also very nice. I definitely enjoyed my jalapeño margarita. It's a large venue. The porch holds about 24 people. The back room holds about 30. And the main room is even larger. It's a multi-page menu with many options. Everyone in our party was happy with their selection. And I would totally come here again.

We were pleasantly satisfied and they hit the spot. Tbh though, the beans and rice won my heart being so flavorful and delicious. You go in and pretty much grab a table unless there's a line with people waiting. Service is always friendly and efficient. Prices are fair. Typical mom and pop type interior with a mixture of booth seating and tables with metal chairs. It's always clean. Branch out and try something new. Highly recommend.

After an amazing day exploring Magnolia and Waco, we wanted one last memorable sunset dinner to cap off my wife's dream trip. We arrived around 7:30 PM and were told to grab a drink and wait on the rooftop until our table was ready. Sounds great, right? The problem is nobody ever came back for us. We sat there, ordered wine, enjoyed the view, and patiently waited. No updates. No check-ins. No communication whatsoever. After finishing an entire bottle of wine and wondering why the wait was taking so long, I finally tracked someone down to ask what was happening. The response? "Sorry, we close at 9." That's it. No apology for forgetting us. No effort to seat us. No attempt to make things right. We were simply left sitting on the rooftop until the restaurant closed. I've worked in customer service long enough to understand mistakes happen. But forgetting a table for over an hour and then essentially shrugging your shoulders when they ask what's going on is unacceptable. What should have been a magical final evening of an incredible trip turned into us scrambling to find food elsewhere on our last night in Texas. The rooftop view was nice. The bottle of wine was good. Too bad we never got to try the food.

Food was absolutely authentic and was most definitely made with love. The meal brings back warm memories of home and makes the meal enjoyable. The lovely young man at the front was working so hard and still gave us the best service ever! The restaurant has a beautiful ambiance that makes you want to sit down and enjoy a plate. This was some of the best Mexican food I've had here in Waco, I will definitely be coming back. The food is made fresh with fresh ingredients as well! This cook also had STUNNING presentation!!! This is a must stop every time I am passing through Waco. Located inside Union Food Hall, you will find the BEST Pazole at Huaco Eatery. I don't deviate much on the menu, because it's so good. But everything I have ever had is delicious and beautifully presented. A step above what you would expect in a food hall. Service is always great too.
