The chefs were a blast to talk to and fired off spot-on recommendations faster than we could eat them. Our server, Sean, was the ultimate wingman--he kept a close eye on us and seamlessly handled our kitchen orders (classic Edamame and perfectly light, tempura-fried Shishito Peppers) so the sushi chefs could just focus on the sushi / nigiri / sashimi. ​The food: ​The One-Bite Wonder: The Mussel Shooter. It's a sizeable, bite with a raw quail egg and avocado. Do not skip this. ​The Nigiri: The lightly seared Black Cod literally melted on contact. The Sawara (Spanish Mackerel), Ishidai (Knifejaw), and Fuji Sake (Salmon) were just absurdly fresh and tender. ​The sushi roll: The Kinkantaro roll. It's fresh salmon topped with chilis and thin slices of kumquat. My husband and I both agreed that we would not go out of our way to come back. It was such a mid-tier experience and it was pricy! Bartender did not check on us at all, and the sushi came out very slowly plate by plate. I refuse to believe that this is the "best" sushi in Utah. I've had better $10 sushi at Yoshi's Japanese Grill on 500 S and 300 E.
