OMG, let me just say they turned out insanely delicious. I always buy my beef, chicken, pork, etc., at HEB and I usually get the "Prime 1" category of steaks and burgers. I always thought my steaks and burgers were good but now that I have had real, fresh cut butcher shop steaks I will never go back to grocery store meat again. The difference in quality was very apparent. The steaks I chose were thick filet mignons (tenderloin), about 2 inches thick. Every bite was perfect, not a single bit of fat, chewiness or toughness. It was of the same quality you'd get at a fine dining steakhouse downtown. I also bought a pound of ground beef, a pack of wagyu hot dogs and some beef jerky but have not tried them yet. They had some gigantic cooked meatballs on display that I have my eye on for another night. The various types of marinated chicken breasts looked really good too. In addition to the meats they have a wall of interesting dry goods like sauces, chips, etc., and a cold section of prepared side dishes as well. Pricewise, if you usually buy the HEB basic beef and chicken like their Hill Country Fare line or the tubes of ground beef, then the meat at the butcher shop will be significantly more expensive. On the other hand, if you usually buy the more pricey Prime 1 or Organic Grass Fed lines of beef and the Mary's Free Range Heirloom chicken or Central Market Organic Air-Chilled Chicken, then the prices here are quite comparable, in some cases even less. They run complete meal specials and deals on their website and they offer a loyalty card program you can join for free to get more discounts. Lakeway and Bee Cave people, please give this place a try! They need our support.

The other was a hog my younger sister shot. We got a call from them saying there was an issue with the hog- I was bummed but curious since I didn't remember seeing anything really wrong when I skinned and quartered it. They explained how the backstraps were 1/4th the size they should have been and other large muscles had clearly atrophied- there were also some small odd growths in the body cavity. Two things here: 1. They could have easily just shrugged it off and processed it since we were getting mostly sausage but instead they called and explained everything. The guy on the phone said he had actually looked up what could have caused this. I was really impressed because it shows a level of professionalism that is hard to come by these days. 2. It also tells me that they are clearly knowledgeable about the anatomy and what they are doing because I missed it. Thinking back I remember there was a strange tumor like growth on it's underside but since it's a wild hog I didn't think to much about it and just kept cutting away. I didn't pay attention to the inside cavity once I pulled out the guts either. I look back at one of the photos I took and think dang, yea there is almost no shoulder muscle but again I wasn't putting any of this together at the time. Thankfully they did notice these things and let us know that something was wrong. It's too bad we won't have this hog but I cant wait to bring them the next one because I know it will be in good hands! Thank you guys so much!

Absolutely abysmal experience…read more I purchased a whole pig to roast for a charity fundraiser. Called a month in advance to secure product. Checked in weekly on pick up date but especially pick up condition, (fully thawed). A few days before pick up i was informed they picked the pig up early and there was a risk of spoilage if it wasn't refrozen. Complete shock as we had spoken twice that very week and that was never mentioned. I said if they needed to freeze the pig in the meantime to ensure quality, fine but I still needed it thawed on pick up. Pick up= associate can't locate the animal, price was not what we agreed to, and they found it "in the very back corner of the freezer". Counter associate said "I just work here, they don't tell me anything" Needless to say, working with Hudson meat market was the biggest mistake. Even with over communication on my part, they just couldn't have cared less.

The waitstaff was friendly and kept our drinks filled. There is an outdoor area with tables that was filled with the locals. Everyone was dressed very casual as I assume they just finished working a long week and were chilling for the rest of the day. Most probably did not mind driving up the unpaved road and parking in the raw parking lot. It was a bit dusty driving in with a clean truck, but once you commit thru the entrance, there is no avoiding it. But then again, paving would be like putting an elevator in an outhouse....It doesn't belong.
