    Tasting (September 2021)
    Brian F.

There are only a couple distilleries on Bainbridge Island so I wanted to hit up all of them during my visit (I mean, I'm already there right?). From the first distillery I walked about 15 minutes to get to Highside Distilling. This is a smaller distillery that's located around a couple of wineries and other restaurants. I got a tasting of their 5 spirits: two gins and three amari. It started off with the two gins and then moved to the amari in increasing levels of bitterness. I loved the barrel aged gin which is a mix of a gin aged in bourbon barrels for 18 months and a gin aged in new oak barrels for 10 months. They have cocktails that utilize their spirits although I didn't try any of them. This is a family owned business owned by Matt and his parents. I got to chatting with Matt about the history of their distillery and how he convinced his parents to start the business, about how he and his father were getting degrees in distilling virtually from a university in Scotland, and some of the new items that they have in the works and were coming soon. He was very personable, welcoming, and I could tell that their family really cares about the products they make. This was such an enjoyable experience and I recommend stopping by if you're visiting the island!

We found the perfect rainy weekend activity on Bainbridge Island! Highside Distilling blew us away with their friendliness, service, and PRODUCT! My husband and I shared two flights, sampling their craft gins, amaros, whiskey, fernet, and nocino. Tasty cocktails are also available. We were hard-pressed to choose our favorite two bottles for purchase. Matt went above and beyond to answer our many questions and give us an impromptu tour of his distillery. Thank you Highside for a memorable afternoon!

Highside was fantastic. We were going on a distillery/winery tour of Bainbridge, and couldn't figure out what their hours and policies were during this Phase 2 period. A quick phone call was all that was needed because they have a new(ish) patio area and are still doing tasting flights and cocktails. The owners were incredibly approachable, knowledgeable, and at no point were pushy or overly attentive. It was the perfect mix of available and distant so we could enjoy the sun and cocktails without feeling neglected or crowded. Our server (and part owner/distiller) Matt was even willing to provide suggestions and pairings with the tasting flight we did. He made of the best Negronis I've had. All in all, it was a very personable and enjoyable experience. Would definitely go back and enjoy a nice cocktail and tasting again.

Highside Gin and Rolling Bay. Toasting to quarantine in style!

The Gin here comes from Washington Apples - lends a mild fruityness that tastes terrific with the lightly botanical approach. There is enough going on where you can drink it straight up shaken and it needs nothing. Will report back on the martini and G&T next but so far - excellent! I also picked up their Amaro, trying to practice restraint and hit that ooonnnne... Wednesday night? Also the people here are so nice! And the swag looks cool too. When this Covid Quarantine is over I will definitely be hanging out in the tasting room. For now, you can phone or online order. PS they are devoting part of their production to hand sanitizer - keeping our islanders safe. Don't drink it tho. Leave that to President Orange.

Great atmosphere! My friend and I made this our first stop on our Bainbridge drinking tour and we were not disappointed. Matt and Helen were so much fun and so informative. I would highly recommend this place to anyone looking for great cocktails and conversation. Highly recommend the blueberry thyme fizz and Rose-pomegranate Collins

A nice surprise in a little enclave of shops and very personalized treatment. The bar was beautifully set with a wide variety of ingredients to smell and a cozy feeling. The gin is GF, a wonderful surprise so a bottle was purchased, as well as a bottle of Amaro to make Black Manhattans. You can tell great pride and effort goes in to the making of this liquor and apparently more surprises are in store in the future! We had a fun afternoon sitting at the bar tasting the spirits and a choice of one of their really different but delicious cocktails to finish off the event. Well done, I highly recommend if you are visiting the area.

Great service and amazing $5 whisky flight! This is a small family business with a lot of enthusiasm and great personalities. I would definitely recommend a visit if you are on the island.

Surprise find on Bainbridge Island and some our new favorite spirits. Gin was fantastic and we can't wait to make Black Manhattans tonight with our new Amaro. The tasting includes a small cocktail. I tried the Sicillian Soda, with Amaro, cold brew coffee, demerara sugar, bitters and soda. Definitely recommend!

We stopped in for a visit and Paul took care of us, and I've got to say, he made the whole thing feel like we were getting a private tour from someone who lives and breathes the craft. He was friendly, incredibly knowledgeable, and answered every question we tossed his way without ever making it feel like a lecture. We ordered a couple of flights, and the best part was being able to mix and blend different whiskey styles ourselves. It wasn't just "sip and move on", we actually got to play with flavor, compare notes, and build our own combinations. That alone made the visit memorable, but the whiskey itself sealed the deal. Rich and full of character, every pour had something interesting to say. What we appreciated most was that we never felt rushed. We were given time to explore, talk through the flavors, enjoy the moment, and just be there. It's rare to find a place where the experience feels personal and unrushed, and Copperworks nailed it. If you're in Seattle and want something unique, educational, and delicious, visit here. Sit down, take your time, and let the whiskey do the talking.

Founded in 2010, Westland Distillery (located in SODO [SOuth of DOwntown], a neighborhood in…read moreSeattle's industrial district) is a leader in the American single malt whiskey scene. Its Garryana Edition 8 was ranked #3 in Whiskey Advocate's list of 'Most Exciting Whiskey's of 2023'. My wife and I had a chance to visit SODO on a gorgeous October day, and even though we couldn't take their sold-out distillery tour ($25 per adult), still had a wonderful time sampling their wares and enjoying the educational interaction with their whiskey enthusiasts/employees. Westland got acquired by Remy-Cointreau [French company; 3rd largest cognac distiller in the world; created as union between Remy-Martin (founded in 1724) and Cointreau (1849)]. It's MO is to use ingredients from the Pacific Northwest (barley, water, peat), and with its similar cool maritime climate, produce Scotch-like whiskeys (only whiskey from Scotland can be called Scotch, though Scotch doesn't have to be ONLY malted barley). American single malt is now an official US legal classification (since Jan 19, 2025). 'Single' refers to one distillery producing the bottle, and 'Malt' meaning it only uses malted barley as its grain. (The most popular American whiskey is bourbon, mostly made of corn and aged similarly). BG and Trista were our whiskey guides, both knowledgeable and friendly. The lounge had a variety of seating, designed for easy conversation and sipping. A whiskey flight ($13.60, $10 off with purchase) consists of 4 choices (out of 8 offered), so we shared two flights to get the full effect. Getting nibbling snacks [La Panzanella crackers ($5) with Beecher's cheese curds ($12)] that went well with the whiskeys, was a smart choice. Flagship (92 proof) Beer Cast (92) Wine Cast (92) Coleve 4 (100) Garryana 9 (100) Garryana 7 (100) 7862 (106.6) Solum 3 (100) To my pleasant surprise, my wife got really into it, sipping/tasting right along with me. We were able to get 4 (tasting) sips per UK dram. My favorite was the 7862, and my wife's was the Wine Cast (which was Trista's favorite as well). The Flagship is the most popular, and readily available at retail stores. The Solum (8 - 12 ppm) is their peated whiskey, and I couldn't discern the peat (as opposed to something like Laphroaig 10 which has 5 - 10 ppm). As it usually occurs (and supposed to happen), the really enjoyable experience got me to buy (and pay retail price) some of their product to take home. BG did mention that some of their product was sold in California (similar price but far lower tax), and did find their flagship product in liquor stores in Long Beach (also sold in Amazon Fresh stores). I ended up getting a 700ml of their available single cast program (No 7862), aged 9 years for $99, and a 375ml Flagship ($39.99) for my son-in-law. We had come right when the lounge opened, so there still wasn't anybody else there when we left about an hour later. I know that American distilleries are having a tougher time in this political climate while our friendly neighbors up North are shunning American spirits. Nice to support, especially when the product and service are this good. Notes: -- Taxes for retail sold spirits are very high in WA state. 20.5% sales tax and $3.77 per liter tax. -- Phenol parts per million (PPM) are used to measure 'peatiness' in whiskey. Peat (partially decayed plant matter) is used as fuel to roast the malted barley. -- Love the fact that Seattle's climate matches Scotland. When we took a tour of the Nikka distillery in Japan, we learned similar things. It's definitely about it's sense of place (water, type of wood barrel, maturation process). And it was cool that the founders (Nikka, Westland) lived in Scotland to get educated in the process.

Next up we went to another distillery that was also very nice and pleasant and last up was three howls that was awesome. The tour guide was nice and very accommodating and the distilleries were fun and informative. However, the three distilleries we visited on our tour were each under one year old. So, we didn't get to try any whiskey because whiskey takes 2 years to distill. We tasted one gin at one distillery and the rest were vodka and vodka variations. I was disappointed because I was looking forward to learning about and tasting all three spirits. To make matters worse, two guys inquired about and then joined our tour at the first distillery. My friend watched them the whole time and said they didn't pay. That is not fair for everyone who did pay. I feel like we overpaid, even with the Groupon discount. We got a nice shot glass and t-shirt at the end of the tour, but I don't want to advertise for them. I suggest you forget the tour and visit the distilleries on your own. If you don't have a designated driver, just walk or take public transportation. The samples are pretty small anyway.
