I live quite close to High Barn Oils so like to collect my linseed meal from their farm. It's always lovely and fresh as they grind it in small quantities in their own kitchens.
Linseed (often called flax) is incredibly good for you so I try to include it in my diet. It's bursting with valuable Omega 3, which isn't found in many foods - mostly oily fish I think.
I enjoy making parmesan linseed crackers that are mightily healthy and contain just linseed meal, parmesan and water. Fiddly to make as the mix needs to be rolled very thin (under greaseproof or foil otherwise it sticks to your rolling pin). But they're worth the effort and very tasty.
You can't cook with linseed oil, which is a shame, so I don't buy that but I do occasionally add the whole seeds to various dishes.
