A Machete is a rather large corn quesadilla that is folded in half and roughly looks like a blade, and can be filled with a variety of items. The Vegetarian Machete here is filled with cheese, pickled onions, peppers, cilantro, spring onions, and then topped with pico de gallo, more onion, and both a red and a green sauce, there was even a few pieces of grilled zucchini. Also on this plate was a grilled jalapeño, rice (with corn, peas, etc), black beans, wedges of lime, and some sliced radishes. This is a dish I'd never had before, but I will certainly have it again if the opportunity presents itself. We called them to tell them we were missing the hard tacos, they said to come back and they would give them to us. So we went back. They did give us a free queso for our trouble but by the time we got back to the house, no one's food was hot or even warm anymore.
