The tonksu Ramen and the beef Ramen bowls are less than to be desired, very bland, not a lot of meat And I don't understand why the eggs were not ramen eggs. They were hard boiled eggs. I'm giving this place 2 stars because our server was really nice but overall the ramen broth was bland and worse than a pack of 99 cent ramen you get at the grocery store. (We did get take-out so that could have been a cause) I got their ramen which I felt like Shin Ramen tasted better than their ramen. My husband and I went for lunch on a weekday, good thing we arrived early because we were seated immediately but the place filled up quickly. Over all, the ramen was not a positive experience. The noodles were of a dry variety like one can get at publix. The shredded chicken was a simple oven roasted thigh. A few fish cakes and half a hard boiled egg. The broth was basically soy and broth. I cannot say how much ramen they sell to be able to justify a better soup over all, but start by maybe having some fresh steamed or lightly wilted spinach with garlic, maybe a fresh noodle. One can have a store bought fresh noodle and be much better than dry noodle. A nice boneless chicken thigh with the skin, seasoned with salt and pepper and pan fried until crispy, sliced up and placed on top. A finally, a nice chicken broth, slightly creamy from cooking the bones, a little dashi, and some seasoned seaweed strips, crispy shallots and green onion. And a nice 1/2 egg, with a slightly gooey yolk. Merely a suggestion. I think it would be a great soup then. This is just my take. If you are happy with it, please enjoy.
