Wow very polarizing reviews here. We chanced upon this place on the way back from the Kalalau Trail hike to our Poipu hotel at about 6pm on Thursday. We were the last customers since the lady literally closed up shop as soon as we finished eating by 6:30pm. I only got a Thai moco here, and got more stuff from the other Thai truck just in the next lot, so I suppose it is difficult to judge the entire menu based on one dish. However, I'll say it was probably the best (though not perfect) moco I had during this trip. The burger patties were crisp on the edges and had great umami, almost like a fried chicken which was unexpected. The rice was a lot, maybe too much, but cooked right. The eggs were a bit undercooked, whites still slightly raw, but I actually don't mind raw eggs (psh salmonella) so I didn't say anything. The gravy was good but a bit too chunky and thick, like too much corn starch or something. Service was ok. Had to order from the window right next to a swarm of flies as the trash can was nearby. Lots of open seating, but also lots of flies trying to beat me to my food. Menu very very extensive, not just Thai food, but also a lot of Asian classics. Overall, don't regret trying this as it satisfied my loco moco craving, but I probably wouldn't drive 45min out of my way to get it. read more

Came on a recommendation from a local. We were hopeful that this would be good, but were disappointed on many levels: quality of food, cleanliness (or lack thereof), and crummy customer service, and the serving materials. We ordered seven items. Most of it tasted decent enough, but was turned off by hair in the food and excessive fat on the beef skewer (or whatever it's called). The tables were sticky and flies were everywhere. The owner acted as if she couldn't be bothered to have customers. Would've give the five paper plates I requested (only gave three), didn't give us a few extra utensils even though we asked multiple times, and blatantly ignored us when she could clearly see we were awaiting these items. Our curry was served in a movie theater XL soda cup. Seriously. I understand these items on a certain level, but for what she's charging, there's no excuse. Disappointed and won't be back. As of April 2021, this is parked near the Kapaa Swimming Pool. This place was surprisingly good. The coconut seafood curry was SO good. It was a perfect amount of sweet with a slight seafood taste. The desert rice was so good. The Chinese rice and pork in leaves was savory. The thai tea was creamy and refreshing. Everything I tasted has great flavor with good balance. The only issue I found was the service. The first time I went, the "open" sign was lit, but the person ignored me. I am glad I gave them a second chance, but I was annoyed with the rudeness on the first attempt. I just wish they had turned off the sign or communicated with me. read more

I'm struggling to find the words to describe this experience and food. The pineapple curry is incredible. Full of flavor. It seems like a random array of vegetables she threw together. The potion is huge. Enough that we will make multiple meals out of it, which is unusual for food trucks. If I lived nearby, I'd eat here all of the time because it's a steal. Expect to wait for service and for your food. The owner makes every order to serve, including fresh smoothies. You can hear her working her tail off in the back. She's gruff and short but also really cares about people enjoying her food. Also expect that some items might not be available and she won't help much to replace them. Some customers were impatient or frustrated with her. I think it's just something to accept as a part of the experience. Will come back here when we return to Kauai. I haven't been burned (no pun intended) on any food trucks during my trip. Cash only , no problem. So I ordered the teriyaki chicken, with papaya salad & sticky rice. The chicken was fine, still compared to the meats I had during my trip, it was one of my least favorites. The salad, was VERY spicy! Why would they make a VERY spicy salad? My wife had one bite then told me she shouldn't eat it anymore. Did I tell you the salad wasn't even tasty? I was super hungry, so I wanted to finish it but it was so spicy (and I love spicy ) and it was barely edible. I could not stomach it, I ate maybe half of it. I found the salad from hell! At this point my mouth was on fire, & thought the sticky rice would cool my flames and fill up my stomach hunger. Didn't care for it, not sure if I don't like sticky rice or if it was prepared poorly. It was stale/hard. I dropped $18 on this dish, and not pleased. The chickens in this food truck court were bar none the most aggressive I encountered on the island. Sitting at a picnic table, the birds jumped up and attempted to eat off my plate, they walked across my flip flopped feet, and they made a clucking ruckus. Do not feed the chickens, people. These fearless feathered freaks are monsters of our own creation. Okay, as for Happy Snacks. 1) Anything but snacks. One plate can and did feed two people. If I lived on Kauai I would order one dinner for two from this place every week. 2) Average Thai with curious awesome additions. Our Pad Thai (hey, the reviews raved) was rather flat and the green beans, carrots and other unexpected delights made it interesting and more nutritious. This place should not have passed its inspection. Horrible conditions in the food truck. There were very large pieces of sediment in our lemonades, and they tasted very strongly of garlic. The proprietor also gave me a lid for my curry which not only didn't fit, but was disgustingly dirty. On the top AND the bottom. Really, I've never seen anything like it. So this was my first visit to Kauai, sadly I was let down by the food, but not by Happy Snacks! I love love loved the coconut sticky rice with mango, and the coconut black sticky rice! Especially since it was reasonably priced at $6 a plate. I will definitely be stopping by this gem again and only wish that it was open a bit longer so that I could grab a sticky rice at the end of every day! You can taste the freshness and it's just oh so good. I'm still here for another four days so you can bet I'll be stopping by again to try some more of what this treasure has to offer! YUMM!! We ate here for lunch today and I'm extremely disappointed in the quality of food. We ordered the coconut shrimp, pad thai, sweet and spicy crispy chicken and an order of deep fried spring rolls. My first bite was of the chicken which tasted like fish. Yes fish. Terrible. Also the rice that came with all of our plates was not stickybit was hard and crusty. I took one bite of the shrimp and it was mushy and still had a huge vein full of poop in it. I lost my appetite after this. Cracked open the pad thai praying this was my saving grace, only to discover a bunch of hard noodles, old egg and chicken that was burnt, and frozen veggies mixed in like broccoli, carrots, zucchini that were soggy and mushy, and cabbage?
