The service is very welcoming, the owner is behind the counter explaining how the process works, and the flavors they have to offer are unparalleled in taste to anything else anywhere. The restaurant is tucked back off the main shopping pathway and if you aren't looking for it, you might miss it. They offer a few small tables and business is steady all throughout lunch time approx 1200-1500 local time. I saw how airy the pizza was in photos on Yelp and knew I had try. We just pointed and ordered 6 different types of pizzas. You can let them know how small or big of a piece you want and then they weigh all your slices. They put the slices into the oven to heat them up and then cut them into pieces for the group. Everything was so good! I loved how crispy, fluffy, and airy the pizzas were. The mozzarella was also one of the best we've had on this Italy trip. The place is small so we had to wait 20 mins to get a table after choosing the pizzas. Overall, this was the best pizza I've had in Italy! The owner is an expert at his craft and takes 3 days to prepare his incredible dough. Behind a very unassuming frontage lies a mastery in the art of pizza. When visiting Florence, my wife wanted to get pizza from Gustarium and it was definitely a good choice. There were a few prepared options to choose from, but after talking with the artist behind the counter he asked if we would be OK with him making us some flavors that he was putting together. As we haven't had a bad meal in Italy, we trusted him and let him do his work. The results... absolutely delicious. He prepared 4 different pizzas for us to eat and they were all amazing. Super-fresh ingredients combined with the love and dedication of this master made for superb pizza. While eating our pizzas, we watched him prepare deliciousness for others and saw that he was using long tweezers to apply the ingredients taking great care to make sure they were placed exactly as he wanted them. As with most other food and drinks we've tried while in Italy, pizza has now been ruined for us as we do not have anything remotely close to this where we live. My wife and I walked down the alley that is full of pizza spots. This one looked new, hip and clean so we dipped in. We were happily greeted and met the 2 brothers that own the shop. He asked if we wanted to learn about the pizza Ann's quickly explained the origins of each ingredient, how they make the dough, what makes them different and how they didn't even start creating food and cooking until 2 years ago. There was an option of five pizzas, all with really interesting toppings that the staff there are more than welcome to tell you about if you cant quite make it out under all of that delicious cheese. We got two slices, one with some kind of pork, peppers, and soft cheese and the other had sausage, arugula and soft cheese. The flavors on both were supreme and great in combination. When you order, there are some pre-assembled pizzas behind the glass. The staff cuts the slices with scissors according to your preference, but they are more than welcome to offer suggestions. Then they are popped straight into a brick oven in the back so they are nice and crispy when they come out. Baked to perfection. The line can get a little long, and the shop is tight so seating isn't always an option, but florence is such a nice place to sit outside and enjoy the sights with a slice. read more

However you can't get Roman style pizza on whole wheat bread with carefully selected topping and great classic Italian meats. I've been there several times now and the people who work there are fantastic and always energetic. I've seen them hand out champagne to everyone in the restaurant because it was a random customers birthday and they've given me a free glass of red wine if the wait is long. The place is normally packed and they close as soon as they're sold out of pizzas which is normally around 3pm. When we got there, the staff informed us that they would not be open for another 15 minutes but that we could wait in the fan cooled searing area until they were ready for service. When they opened, they explained their process of preparing the dough (48-72 hours) and all of the different types of pizza with beautifully fresh and local ingredients.
